SESAME CRUSTED SEARED AHI TUNA WITH ARUGULA SALAD



Sesame Crusted Seared Ahi Tuna with Arugula Salad image

This is a quick meal that comes together in under 30 minutes for an easy lunch or appetizer.

¼ cup vegetable oil or grapeseed oil
1 ½ teaspoons fresh grated ginger
Juice from 1 lime
1 tablespoon rice vinegar
1 tablespoon soy sauce
½ teaspoon kosher salt
2 tablespoons toasted white sesame seeds
1 tablespoon black sesame seeds
½ pound Ahi tuna
Kosher salt, (as needed)
2 tablespoons vegetable oil
5 ounces wild arugula
1 medium haas avocado, (pitted, peeled and sliced)

Steps:

  • Add oil, ginger, lime juice, rice vinegar and soy sauce to a medium mixing bowl. Whisk to combine then season with salt and pepper.
  • Set aside until ready to use. If the dressing separates by the time you are ready to use it, then whisk once again to combine.
  • In a small bowl stir together the white and black sesame seeds until combined. Season the tuna with kosher salt then the sesame seeds so that it is completely coated in the sesame seeds.
  • Heat a large sauté pan or griddle over high heat, add the vegetable oil and heat through. Add the tuna to the pan and sear until no longer pink on each side, about 30 seconds each side for rare.
  • Remove the tuna to a cutting board and slice into ½" thick strips. The tuna should be seared in the outside but mostly raw on the inside.
  • Toss the arugula salad in about 2 tablespoons of dressing, adding more as desired. Scoop onto a plate and top with the seared tuna and avocado. Serve immediately.

For dressing
1/2 cup olive oil
1/4 cup fresh lime juice
1/4 cup orange juice
2 tablespoons soy sauce
2 tablespoons oriental sesame oil
2 tablespoons minced fresh chives
1 tablespoon minced fresh ginger
For Wontons
Vegetable oil (for deep-frying)
8 wonton wrappers, cut into thin strips
12 large cherry tomatoes, cut in half
2 medium carrots, peeled, cut on diagonal into thin slices
16 sugar snap peas
6 tablespoons sesame seeds
4 5-ounce fresh tuna steaks (each about 3/4 to 1 inch thick)
8 ounces mixed baby lettuces

Steps:

  • Make dressing:
  • Whisk olive oil, lime juice, orange juice, soy sauce, sesame oil, chives and ginger in small bowl to blend. Season with salt and pepper.
  • Make wontons:
  • Pour oil into heavy medium saucepan to depth of 1 inch. Heat oil to 375°F. Working in batches, fry wonton strips until golden and crisp, about 1 minute. Using tongs, transfer wonton strips to paper towels; drain. Sprinkle with salt and pepper. (Dressing and wonton strips can be made 2 hours ahead. Let stand at room temperature.)
  • Place tomatoes in small bowl. Add 2 tablespoons dressing and toss to coat. Cook carrots and peas in medium pot of boiling salted water until crisp-tender, about 30 seconds. Drain, rinse with cold water and pat dry. Place in medium bowl; toss with 2 tablespoons dressing.
  • Stir sesame seeds in heavy large skillet over high heat until seeds are pale golden, about 2 minutes. Transfer seeds to large plate. Sprinkle fish with salt and pepper. Dip fish into seeds, coating on all sides and pressing fish so that seeds adhere. Return same skillet to high heat. Brush skillet with some of deep-frying oil. Add fish to skillet and sear until fish is just opaque in center and coating is deep brown on outside, about 3 minutes per side. Transfer fish to work surface.
  • Mound lettuces on 4 plates. Thinly slice fish; arrange fish, slices overlapping, on lettuces. Surround lettuces with tomatoes, carrots and peas, dividing equally. Drizzle each salad with some dressing. Garnish with wonton strips. Serve, passing any remaining dressing separately.

  • In a Magic Bullet, blender or food processor, blend ingredients for dressing. Set aside. If you don't have carrot or celery, you can just mix sesame oil, rice vinegar, honey, ginger and soy sauce together but it won't be as authentic as real sushi-style dressing. It will still taste great though!
  • Meanwhile, prepare veggies for the salad and divide evenly among four large salad bowls. Season tuna with salt and pepper before coating in sesame seeds.
  • Add olive oil to a large frying pan over high heat. Wait until oil is smoking, then add tuna steaks, searing for 30 seconds per side. Remove from heat and slice with a sharp knife, adding half of each steak to each salad.
  • Garnish each salad with sesame seeds and wonton strips, then add dressing. Serve and enjoy!
