My first experience with seal meat was not the best but was determine to find a recipe I would like , so needless to say I had to make use of all I heard but for sure I added some finishing touches.

2 lbs seal ribs
boiling water
3 tablespoons black pepper
4 slices bacon
1 large onion, chopped
pastry dough
2 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
1/2 cup shortening
1 cup water or 1 cup milk

Steps:

  • Put seal ribs in a pot of boiling water to cover and add black pepper and boil 20 minutes Drain and wash of black pepper.
  • Put in a roasting pan and put the strips of bacon over the meat and add chopped onion.
  • Bake at 300 for 1/12 hours or until the meat starts to come off the bones.
  • Take out meat and turn oven to 400.
  • Take the dough and flatten to about 2 inches thick and place over meat and return to oven and bake 15 minutes or until brown.
  • Take out roast and pastry and make gravy,serve over pastry and dinner.
  • To make pastry mix together flour, baking powder, and salt cut in finely shortening, add water or milk.
  • Knead gently 8 times.
  • Pat to desired thckness.

Seal meat is extremely rich in iron, and contains more Omega 3 fatty acids than many other meats. From the Canadian Sealers Association.

12 ounces seal meat, cut in small cubes
1/2 cup red wine
1 garlic clove, minced
1 Spanish onion, finely diced
4 ounces mushrooms, Diced
1/2 cup butter
1 tablespoon flour, mixed with
1/8 cup water (for Thickening)
12 sheets phyllo pastry
2 tablespoons dried breadcrumbs

Steps:

  • Preheat oven to 375.
  • Marinade the seal with wine, garlic, onion & mushrooms for 1 hour.
  • Brown the seal meat 1/4 cup butter, adding all the marinade ingredients and the water and flour mixture.
  • Let the seal meat cool.
  • Melt remaining 1/4 cup butter.
  • Unwrap the phyllo pastry and cut in half horizontally. Separate the sheets, spread with the melted butter, and sprinkle lightly with bread crumbs. Continue until for 3 layers.
  • Place a small mound of the meat mixture in the lower centre of the pastry stack and fold pastry into a triangle. Brush package with butter.
  • Bake for 15 minutes or until pastry is golden brown.
  • Serve with garnish of red onion or cranberries.

4 cups flour
2/3 cup water
1 tablespoon milk
1/2 pound lard
Salt to taste, if desired

Steps:

  • Put the flour in a mixing bowl.
  • Combine the water, milk, lard and salt in a saucepan and bring to the boil. Let simmer until the lard melts.
  • Add the liquid to the flour, stirring constantly with a wooden spoon to blend thoroughly. This dough should be shaped or rolled while it is still hot or quite warm.
