Time 10m

Number Of Ingredients 8

2 tablespoons (25g) granulated sugar
1 heaping tablespoon (8g) cocoa powder
1 tablespoon (14g) butter
2 tablespoons milk any percentage
1/8 teaspoon vanilla extract (optional)
1 1/2 cup vanilla ice cream* (about 3 scoops)
1/2 to 3/4 cup milk (any percentage)
Whipped cream (optional)

Steps:

  • In a small bowl, combine sugar and cocoa powder. Stir together and set aside.
  • In a small saucepan, over medium heat, melt butter. Whisk in milk followed by the sugar and cocoa powder mixture. Whisk continuously, beating out any lumps as they form, until mixture begins to thicken and bubble 1-3 minutes.
  • Remove from heat and whisk for 30 seconds to whisk some of the heat out of the sauce. Stir in optional vanilla and allow sauce to sit at room temperature to continue to cool slightly as you assemble the rest of your ingredients.
  • Combine ice cream, milk, and 3 tablespoons* of the sauce in your blender and blend until well-mixed and pourable.
  • Pour into a glass, top with optional whipped cream and drizzle the remaining fudge sauce over the top. Enjoy!

CRAZY CHOCOLATE SHAKES

Time 20m

Yield three 24-ounce shakes

Number Of Ingredients 23

1 cup chopped semisweet chocolate
1 cup chopped bittersweet chocolate
1 cup heavy cream
3/4 cup whole milk
8 scoops vanilla ice cream
8 scoops chocolate ice cream
Various sprinkles, chocolate chips, marshmallows, candies and pretzel pieces, for decorating
Scoops of vanilla and chocolate ice cream, for serving
Whipped cream (in cans), for topping
Chocolate Butterscotch Caramel Bars or store-bought caramel brownies, broken into pieces, recipe follows
Caramel and strawberry sauces, for drizzling
Cherries, for topping
Nonstick cooking spray, for spraying the pan
1 1/2 cups all-purpose flour
1 1/2 cups regular or quick oats
1 cup packed brown sugar
1 teaspoon baking powder
1/4 teaspoon kosher salt
1 3/4 sticks (14 tablespoons) cold salted butter, cut into pieces
Two 13.5-ounce cans dulce de leche (I used Nestle La Lechera)
About 1 cup Spanish peanuts
About 1 cup butterscotch chips
About 1 cup mini chocolate chips

Steps:

  • For the ganache: Put the semisweet and bittersweet chocolate in a heatsafe bowl. Heat the cream until very hot in a saucepan and pour over the chocolate. Stir until melted and combined. Let cool.
  • For the milkshake: Put the milk, vanilla and chocolate ice cream and 1 cup of the ganache in a blender and blend until combined.
  • To assemble: Spoon some ganache into large mason jars and spread on the sides. Spread some ganache around the rim of the jars. Dip the rims in sprinkles, chocolate chips, marshmallows and/or candies, or press on pretzels. Add a scoop of ice cream to each glass and pour in the blended milkshake. Squirt whipped cream onto the top of each glass and add pieces of the bars or brownies. Now go crazy and decorate the top with more whipped cream, ice cream, candies, etc. Drizzle with caramel or strawberry sauce and top with a cherry.
  • Preheat the oven to 350 degrees F. Line a 9-inch square baking pan with aluminum foil and spray with nonstick spray.
  • Mix together the flour, oats, brown sugar, baking powder and salt in a bowl. Cut in the butter with a pastry cutter until the mixture resembles coarse crumbs. Sprinkle the mixture into the prepared pan and pat lightly to pack it slightly.
  • Bake until light golden brown on top and done in the middle, watching to make sure it doesn't burn, 30 to 35 minutes. Allow to cool for 15 minutes.
  • Spoon the dulce de leche into a microwave-safe bowl and microwave to just slightly soften it, about 45 seconds. Scoop it on top of the oatmeal base and use an offset spatula to spread it out to the edges and into an even layer. Sprinkle on a layer of peanuts so that they completely cover the caramel and use your hands to gently press them into the caramel. Sprinkle on the butterscotch chips and mini chocolate chips in generous layers.
  • Note: The warmth of the cookie base and caramel should slightly soften the butterscotch and chocolate chips. When that happens, use your hands to very gently press the chips just enough to anchor them together (but not enough to misshape them). If the pan isn't warm enough, pop it into the oven for 30 seconds or so and gently press the chips to anchor them together.
  • Chill the bars for 2 to 3 hours to make them easy to slice. Remove them from the pan, place on a cutting board and use a long serrated knife to cut into small squares (they're rich!). Serve cold or at room temperature.

MALTED CHOCOLATE MILKSHAKE

Malted Chocolate Milkshake image

Malted milk powder and chocolate are a perfect pairing, and this retro diner-inspired milkshake is proof positive. A creamy chocolate milkshake base is flavored with a generous amount of malted milk powder, giving it a rich, creamy texture and caramel-like flavor. Top it with a dollop of freshly whipped cream and a cherry and you have the perfect nostalgic summertime treat.

Time 5m

Yield 1 large 16-ounce milkshake or 2 smaller 8-ounce milkshakes

Number Of Ingredients 6

1/3 cup very cold heavy cream
1 teaspoon granulated sugar
1/2 cup whole milk
1/4 cup malted milk powder
1 1/2 cups chocolate ice cream
Maraschino cherry, for garnish, optional

Steps:

  • Chill one 16-ounce serving glass (or two 8-ounce serving glasses) in the freezer.
  • For the whipped cream: Combine the heavy cream and sugar in a large, deep bowl. Whisk vigorously by hand until soft peaks form, 30 to 60 seconds. Set aside.
  • For the milkshake: Blend the milk and malted milk powder in a blender on high speed until the malted milk powder dissolves, 15 to 20 seconds. Add the chocolate ice cream and blend on high until creamy and thick, pushing down as needed, 20 to 25 seconds.
  • Pour the milkshake into the chilled glass and top with the whipped cream. Garnish with a maraschino cherry if using and serve immediately.
