Bacon, Cheddar and Chive Biscuits image

Provided by Kelsey Nixon

Time 40m

Yield 18 biscuits

Number Of Ingredients 10

7 slices bacon
3 cups flour
3 tablespoons sugar
4 teaspoons baking powder
1 1/2 teaspoons salt
1 teaspoon baking soda
3/4 cup (1 1/2 sticks) cold unsalted butter, cut into small pieces or grated
1 1/2 cups shredded Cheddar cheese
1/4 cup chopped fresh chives
1 cup buttermilk

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • In a heavy-bottomed skillet over medium-high heat, cook the bacon until crisp and brown. Transfer to paper towels and drain. Chop and set aside.
  • Whisk the flour, sugar, baking powder, salt, and baking soda in a large mixing bowl.
  • Using a food processor, pastry cutter, or fingertips incorporate the chilled butter into the dry ingredients until the mixture resembles coarse meal. Add the Cheddar cheese, fresh chives, and cooked bacon. Mix to distribute the ingredients evenly.
  • Add the buttermilk and stir just until moistened. Using 1/2 cup dough for each biscuit and using a cup measure or an ice cream scoop, drop the biscuits onto the prepared baking sheet, spacing the mounds about 2-inches apart.
  • Bake until the biscuits are golden brown on top, about 15 to 20 minutes or until a tester comes out clean. Serve the biscuits warm with melted butter.

Number Of Ingredients 10

6 thick-cut bacon slices
3 3/4 cups bread flour
1 1/2 tablespoons baking powder
1 1/2 teaspoons baking soda
1 1/4 teaspoons salt
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes, plus melted butter for brushing
2 1/2 cups (packed) coarsely grated sharp cheddar cheese (about 12 ounces)
1/3 cup chopped fresh chives
1 3/4 cups chilled buttermilk
Honey (optional)

Steps:

  • Position rack just above center of oven and preheat to 425°F. Line heavy large baking sheet with parchment paper. Cook bacon in heavy large skillet over medium heat until crisp and brown. Transfer bacon to paper towels to drain, then chop coarsely.
  • Combine flour, baking powder, baking soda, and salt in processor; blend 5 seconds. Add butter cubes. Blend until coarse meal forms, about 30 seconds. Transfer flour mixture to large bowl. Add cheddar cheese, fresh chives, and chopped bacon; toss to blend. Gradually add buttermilk, stirring to moisten evenly (batter will feel sticky).
  • Using lightly floured hands, drop generous 1/2 cup batter for each biscuit onto prepared baking sheet, spacing batter mounds about 2 inches apart.
  • Bake biscuits until golden and tester inserted into center comes out clean, 18 to 20 minutes. Brush biscuits lightly with melted butter. Let cool 10 minutes. Serve biscuits warm or at room temperature with honey, if desired.

BACON-CHEDDAR-CHIVE SCONES

Bacon-Cheddar-Chive Scones image

These rich, tender scones are packed with chunks of Cheddar cheese and diced bacon, and accented with fresh chives. Serve them with soup or a salad for a satisfying meal.

Provided by Annacia

Categories     Scones

Time 40m

Yield 8 serving(s)

Number Of Ingredients 10

2 cups unbleached all-purpose flour (can sub pastry flour for extra nice scones)
1 teaspoon salt
1 tablespoon baking powder
2 teaspoons sugar
1/4 cold butter
1 cup very coarsely grated cheddar cheese (or diced, your choice)
1/3 cup about 1/2 ounce snipped fresh chives (the green part, 3/4 ounce) or 1/3 cup finely diced scallion top (the green part, 3/4 ounce)
1/2 lb bacon (cooked, cooled, and crumbled about 1 cup)
3/4 cup heavy cream (or enough to make the dough cohesive)
2 tablespoons heavy cream, for brushing tops

Steps:

  • Preheat the oven to 425°F Lightly grease a baking sheet, or line it with parchment.
  • Whisk together the flour, salt, baking powder, and sugar.
  • Work the butter into the flour until the mixture is unevenly crumbly.
  • Mix in the cheese, chives, and bacon till evenly distributed.
  • Add ¾ cup of the cream, stirring to combine. Try squeezing the dough together; if it's crumbly and won't hang together, or if there are crumbs remaining in the bottom of the bowl, add cream until the dough comes together. Transfer the shaggy dough to a well-floured work surface.
  • Pat the dough into a smooth 7" disk about ¾" thick. Transfer the disk to the prepared baking sheet.
  • Use a knife or bench knife to cut the disk into 8 wedges, spreading the wedges apart a bit on the pan.
  • Brush the scones with a bit of cream; this will help their crust brown.
  • Bake the scones for 20 to 25 minutes, until they're golden brown. Remove them from the oven, and cool right on the pan. Serve warm, or at room temperature.
  • Yield: 8 large scones.

CHEDDAR AND CHIVE SCONES

Cheddar and Chive Scones image

This lovely, easy recipe makes the perfect light and savory scones. They're great with butter or chutney.

Provided by TheBritishBaker

Categories     Scones

Time 40m

Yield 12

Number Of Ingredients 10

1 ¾ cups all-purpose flour
4 teaspoons baking powder
1 teaspoon dried chives
⅛ teaspoon salt
⅛ teaspoon cayenne pepper
5 tablespoons cold unsalted butter, cut in small pieces
1 ¼ cups shredded aged Cheddar cheese, divided
½ cup whole milk
¼ cup sour cream
2 tablespoons whole milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Sift flour, baking powder, chives, salt, and cayenne pepper together in a large bowl. Cut in butter using a pastry blender or rubbing between your fingers until flour mixture resembles pea-sized lumps. Stir in 1 cup cheese. Whisk 1/2 cup milk and sour cream together in a measuring cup. Pour all at once into flour mixture, and stir gently until well blended. Avoid overworking the dough.
  • Pat dough into 2- to 3-inch balls, depending on what size you want, using floured hands. Place on the prepared baking sheet and flatten slightly, letting scones barely touch each other. Brush tops with remaining milk. Sprinkle with remaining cheese. Let dough rest for about 10 minutes.
  • Bake in the preheated oven until tops are golden brown, 10 to 15 minutes. Let cool slightly; break scones apart before serving.

  • Place a rack in the upper third of the oven and preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper and set aside. Cut the butter into small cubes (or grate it with a coarse cheese grater for even easier incorporation) and place it in the freezer while you prepare the other ingredients. (Alternatively, you can freeze the entire stick of butter, then grate it directly into the bowl with the dry ingredients in Step 2 below.)
  • In a mixing bowl, stir together whole wheat flour, all-purpose flour, baking powder, baking soda, salt, and cayenne. Working quickly with your fingers or a pastry cutter, cut in the butter until the mixture resembles a coarse meal. In a separate bowl, combine the egg and 1 cup buttermilk. Make a well in the center of the dry ingredients, then add the liquid all at once, stirring just enough to make a soft dough. If the mixture is very crumbly, add buttermilk 1 tablespoon at a time until it is soft but not sticky (you should not need more than 1 or 2 tablespoons. You want the dough to be moist but not wet or soggy). With a rubber spatula, fold in 1/2 cup of the cheese, all of the bacon, and the chives. Stir in the ingredients as much as you can by hand, but don't worry if they are not perfectly incorporated.
  • Turn the dough out onto a floured board and knead about 15 times, further distributing the bacon, cheddar, and chives as you go. Divide the dough in half, then working one half at a time, gently pat the dough into a 1-inch-thick round that is about 5 inches across. With a knife or bench scraper, divide each round into 8 wedges. Gently pull the wedges apart, then arrange them on a baking sheet, leaving at least 1 inch between each. Repeat with the second half of the dough. If the dough seems very warm and sticky at any point, pop it into your refrigerator or freezer for a few minutes to allow it to firm back up and become easy to work with again.
  • Brush the tops of the scones lightly with buttermilk and sprinkle with the remaining 1/4 cup cheese. Bake for 16 to 18 minutes, until golden brown on top. Let cool directly on the baking sheet for 10 minutes. Serve warm.
