SCALLOPS AND COUSCOUS WITH ROASTED VEGETABLES AND CURRY SAUCE

Steps:
- Preheat oven to 375°F. Spray 13x9x2-inch glass baking dish with vegetable oil spray. Add carrot, rutabaga and parsnip; sprinkle with salt and pepper. Roast vegetables until tender and brown around edges, adding up to 1/2 cup water to dish if vegetables are dry, about 45 minutes.
- Meanwhile, stir curry powder in small skillet over medium heat until fragrant, about 15 seconds. Transfer curry to processor. Add roasted pepper, broth and yogurt; puree until smooth. Return sauce to skillet. Season with salt and pepper. (Vegetables and curry sauce can be made 1 day ahead. Cover separately and refrigerate.)
- Spray large nonstick skillet with vegetable oil spray. Heat over high heat. Sprinkle scallops with salt and pepper. Add to skillet; sauté until just opaque in center, about 1 minute per side. Add roasted vegetables; stir until heated through, about 3 minutes. Divide couscous among 4 plates. Top with scallop mixture.
- Meanwhile, warm curry sauce over medium-low heat (do not boil). Drizzle sauce over scallop mixture and serve.
VEGETABLE CURRY COUSCOUS
A variety of veggies make this interesting side dish versatile. I like to serve chicken in an apple, onion, and curry sauce over the top and sprinkle it with flaked coconut. Can also be made with quinoa, just adjust cooking time.

Steps:
- Place vegetable oil in a saucepan over medium heat, and cook and stir the onion, leek, celery, red bell pepper, and garlic until the onion is translucent, about 5 minutes.
- Pour in the chicken stock, bring to a boil, and stir in the carrot, tomatoes, couscous, raisins, and currants. Season with curry powder, turmeric, salt, and black pepper; bring the mixture back to a boil. Reduce heat to low, cover the pan, and allow to cook for 5 minutes.
- Remove from heat. Let the couscous stand covered for 5 minutes, and fluff with a fork. Sprinkle with sliced almonds.

Steps:
- COUSCOUS.
- Cook couscous according to directions. Add salt and pepper to taste and set aside.
- Cook pancetta for 5 minutes. Stir in the couscous, then cream and warm for 2 minutes.
- SAUCE:
- Heat oil and add onions, garlic, and cook for 5 minutes. Add wine and simmer until reduced by 1/2. Reduce heat to very low and add butter a little at a time.
- Slowly add lemon juice, stirring constantly. Strain out the garlic and onion. Salt and pepper to taste.
- SCALLOPS.
- Heat oil over high heat. Add scallops and brown. Add salt and pepper to taste.
- Place couscous on serving platter. Top with scallops then sauce.

K, so I needed a dinner in a flash one night and I had just bought imitation scallops that are made of haddock--cheap and tasted so real. Anyway, this was total comfort food--nice and warm--makes just enough for 1.

Steps:
- Preheat pan to medium heat.
- Spray with canola oil spray.
- Season scallops with salt and pepper on both sides.
- Sear the scallops for approximately 2 minutes per side.
- Remove the scallops from the pan.
- Put garlic, shallot, and red pepper in pan and sauté for 1-1/2 minutes till browned.
- Add in couscous and diced tomatoes.
- Add a bit of water if necessary and cook on low for a while.
- Right before plating add scallops back in, add parsley and basil and squeeze on the fresh lemon juice.

- In a medium bowl, whisk together coconut milk, cumin, coriander, curry powder, sriracha, and salt. Set aside.
- In a small saucepan, bring the cup of water and sesame oil to a boil. Remove the saucepan from the heat then stir the couscous in and cover pot. Let sit for 10-15 minutes then take a fork and fluff the couscous and sprinkle with 1/2 tsp. of salt and parsley. Keep warm.
- In a skillet, heat up the olive oil over medium high heat. Place scallops in the pan, it should be a nice sizzle. Season the tops of the scallops with salt and pepper (a pinch of each). Sear scallops until browned on either side, about 3-4 minutes on each side. You don't want to overcook it or it'll be too tough.
- To assemble the dish, scoop couscous onto a plate, place scallops on top, then drizzle curry sauce all over the top.
