- Spread chicken strips onto microwaveable plate; cover with waxed paper. Microwave on HIGH 30 sec. or until warmed.
- Sprinkle down centers of tortillas; top with remaining ingredients.

- Preheat oven to 250°F
- Wrap the flour tortillas in a damp kitchen towel and place in the low oven until they warm through and become pliable.
- Place a large skillet over medium-high heat; add 1 turn of the pan of EVOO, about 1 tablespoon, and the butter. Once the butter has melted and the pot is hot, add the ground chicken. Cook until brown, about 5-6 minutes, using the back of a wooden spoon to break the meat up into small pieces.
- Add the carrot, onion, celery, garlic and some salt and pepper. Cook, stirring frequently, for about 3-4 minutes.
- Add the chicken stock, scraping up any brown bits on the bottom of the pot. Add the hot sauce, black beans and the cilantro. Stir to combine and cook until the beans are heated through, a minute or two.
- Remove the warm tortillas from the oven, place a few heaping spoonfuls of the buffalo chicken/black bean mixture on the bottom of a tortilla, but don't overfill it.
- Top with some cheese, avocado and tomato. Roll the short end of the tortilla over the filling, fold in the other two sides and then continue to roll it up until you have a tight burrito package. Once you have finish rolling all the burritos, turn the oven up to broil. Place burritos in a shallow backing dish and sprinkle with remaining cheese, place under the broiler for 2-3 minutes to melt the cheese.

- Combine the dry soup mix, dressing, and jam; mix well until there are no lumps.
- Wash the chicken, pat dry. slightly overlap in glass dish.

I made this recipe up by taking some chicken and some basic Mexican spices and throwing them all together for burrito night. It turned out great so we have them frequently.

- Place chicken on a cutting board and chop into bite-sized strips. Place in a crockpot on high.
- Stir in the broth, onion, garlic, jalapenos, corn, salt, pepper, chili powder, cayenne pepper, cumin, lime juice, oregano, and cilantro.
- Simmer on high for 5 hours.
- Remove chicken from crockpot and shred with two forks; and place back into crock pot.
- Place sliced red and green pepper into crock pot, cover and cook another 30 minutes (we still like to have a little crispness to our peppers so if you want them softer cook longer)
- Place equal portions of chicken mixture in the center of the tortillas. Sprinkle with whatever toppings you prefer, such as diced tomatoes, sour cream, lettuce and cheese.
- Fold burrito up 2/3 of the way to the other side over the chicken mixture. Fold sides in towards the center.

- Half fill a pan of water and bring to the boil.
- Sprinkle the water with salt and add the rice. Cook for 8 minutes.
- Chop onion and grate the cheese.
- Heat oil in a large pan then add the chopped onion, chilli powder and cumin for 2-3 minutes.
- Drain the rice then add to the large pan along with the tomatoes. Cook until the juice has absorbed.
- Set pan aside.
- Put chicken breasts into another large pan and pour in enough water to cover and bring to the boil. Simmer for 10-15 minutes.
- Place the chicken on a plate and using forks, shred the chicken.
- Now add then chicken to the rice filling, along with the grated cheese.
- Stir in the soured cream to the filling.
- Wrap the tortillas in cling film and heat in a microwave for 1 minute.
- Spoon one eighth of the filling into the centre of the tortilla and fold both sides. Fold from the bottom up and the top down to form a parcel.
- Complete for the rest of the tortillas and serve.
