SAVOURY IMPOSSIBLE PIE
From Women's Weekly All Time Favourites. This has never stuffed up for me, my husband loves it. Australian cup measurements (250ml, 1T=20ml). I've also made a lighter version, can post if required.

Steps:
- Fry bacon until browned, place bacon into a sieve and allow to drain. (I use chopped ham or bacon and just microwave it for a bit, then drain on paper towel).
- Oil shallow 23cm round flan dish. Whisk flour and milk in medium bowl until smooth; whisk in eggs.
- Stir in remaining ingredients; pour mixture into prepared dish. Bake in moderately slow oven (160C, 325F) about 1 hour (60 minutes) or until set.

SAVOURY IMPOSSIBLE PIE
Impossible pie gets its name not from being difficult, but from being super easy to make! This version encases cheese, ham, spinach and chargrilled capsicum, creating its own 'pastry' crust through the cooking process.

Steps:
- Preheat oven to moderate, 180°C.
- Lightly grease a deep, 25cm pie plate. In a large jug, whisk together milk, eggs and butter; season to taste.
- Sift flour into a large bowl. Make a well in the centre and gradually whisk in milk mixture.
- Mix in 1/2 cup cheese, ham, spinach (squeeze out any excess liquid first), capsicum, onion and parsley.
- Spoon mixture into prepared pie plate. Sprinkle with remaining grated cheese; bake 45-50 minutes, until firm.
- Serve pie in wedges with salad.

Steps:
- Heat oven to 400°F. Grease 9-inch pie plate. Heat 1 inch salted water to boiling in medium saucepan. Add broccoli; cover and heat to boiling. Cook about 5 minutes or until almost tender; drain thoroughly. Stir together cooked broccoli, onion, bell pepper and cheese in pie plate.
- Stir remaining ingredients until blended. Pour into pie plate.
- Bake 35 to 45 minutes or until golden brown and knife inserted in center comes out clean. Cool 5 minutes.
