STARR'S SAVORY MEATBALLS

Starr's Savory Meatballs image

This is my version of meatballs based on experimentation from several different recipes, including my mother's. I like to use these in spaghetti sauce, of course, but they're also delicious in my meatball subs. You can double or triple the recipe - sky's the limit! - and freeze.

Ingredients

2 pounds ground beef
1 small onion, diced
¼ cup dry bread crumbs, or as needed
¼ cup freshly grated Parmesan cheese
2 eggs, slightly beaten
4 cloves garlic, minced
1 tablespoon dried oregano
1 tablespoon dried basil
1 teaspoon dried thyme
1 tablespoon Worcestershire sauce
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

Preheat an oven to 425 degrees F (220 degrees C). Line a large baking sheet with parchment paper.
Mix together the ground beef, onion, bread crumbs, Parmesan cheese, eggs, garlic, oregano, basil, thyme, Worcestershire sauce, salt, and pepper in a large bowl until just combined. Divide the mixture into 4 equal portions, then roll each of those portions into 4 meatballs. Arrange the meatballs on the prepared baking sheet.
Bake in the preheated oven until no longer pink in the center, 15 to 20 minutes.

This savory soup is delicious, quick and so easy to make. Just throw everything into the crock pot and voile, a very tasty treat. Best of all it uses ingredients found in most kitchens. This tasty comfort food does not disappoint. Cook gently on low all day, stirring occasionally, being careful not to boil the soup. My grandma always said, soup boiled is soup that is spoiled.

Ingredients

2 tablespoons butter, unsalted
1 large red onion, chopped coarsely
1 teaspoon garlic, finely chopped
1 shallot, large, finely chopped
1 zucchini, small, peeled, coarsely chopped
1 red bell pepper, sweet, small, coarsely chopped
3 cups beef broth
1 tablespoon vinegar, balsamic
2 teaspoons Worcestershire sauce
28 ounces tomatoes, diced, plain, canned
1 teaspoon sugar, white (optional)
1/2 teaspoon salt
1 teaspoon red pepper flakes
1 bay leaf, fresh
1 sprig thyme, fresh
1 teaspoon oregano, fresh
1/2 cup orzo pasta
24 small meatballs, frozen
1 large potato, diced
2 large carrots, sliced
1/2 cup green beans, cut into thirds
1/4 cup parmesan cheese, freshly grated, garnish

Steps:

Fry the onion, garlic and shallots in butter for 5 minutes.
Add the zucchini and red pepper to the onion mixture and fry for an additional 5 minutes.
Pour the fried vegetables into your crock pot and add all the remaining ingredients.
Cook on low heat all day.
When ready to serve garnish with parmesan cheese and enjoy.

Begin by gathering and prepping all of the meatball ingredients according to the meatball ingredients list above to have organized and ready for use.
To prepare the meatballs, combine the ground beef with a couple of good pinches of salt (about 2 teaspoons) and pepper, plus the remainder of the meatball ingredients in a large bowl. Using your hands, gently mix the ingredients together until well combined, and roll into bite-sized meatballs; set meatballs aside.
Gather together and prep all of your soup ingredients according to the soup ingredients list above to have organized and ready for use.
To prepare the soup, place a large soup pot set over medium heat, and add the butter and the oil; once melted together, add the onion, carrots, celery, parsnip and fennel. Stir gently and allow the veggies to sweat for about 3-4 minutes.
