MEDITERRANEAN SAUTEED YELLOW SQUASH RECIPE

Easy sautéed yellow squash recipe, prepared Mediterranean-style with sweet onions, bell peppers, garlic and a warm Eastern Mediterranean spice combination. You can totally tailor this recipe to your liking, check out the notes for recipe variations.

Extra virgin olive oil (I used our Greek Early Harvest olive oil)
1 sweet onion, halved and thinly sliced
3 garlic cloves, minced
4 medium yellow squash
1 red bell pepper, cored and thinly sliced
Kosher salt
Black pepper
Crumbled feta cheese (optional)
Pitted marinated olives, sliced (optional)
Handful chopped fresh parsley (optional)
1 tsp za'atar, more for later
3/4 tsp to 1 tsp Aleppo pepper (start with less if you're not sure)
3/4 tsp ground cumin

Steps:

  • Heat 2 tbsp extra virgin olive oil over medium heat until shimmering but not smoking. Add sweet onions and cook for about 4 minutes until translucent (you can raise heat to medium-hot and toss onions regularly.)
  • Add garlic, yellow squash, and red bell peppers. Drizzle a little more extra virgin olive oil.
  • Season with salt, pepper, and spice mixture. Toss with a wooden spoon to make sure vegetables are well coated with the spices. Cook on medium-high, stirring occasionally, until squash and peppers are nice and tender (I like my squash to have some carmalized parts, so it helps to raise the heat for a little while.)
  • Transfer to a serving platter. Add another drizzle of extra virgin olive oil and a generous pinch of za'atar. If you like, add a sprinkle of crumbled feta cheese, pitted olives, and a handful of chopped fresh herbs like parsley. Enjoy!

1 medium yellow squash, sliced into 1/4 inches,look for good colour
1 small yellow onion, sliced
1/4 cup vegetable oil
oregano
white wine

Steps:

  • Place oil in saute pan over medium heat.
  • Add squash and onion.
  • Cook and stir until crisp and tender for about 5 minutes.
  • Sprinkle with whole oregano and a splash of white wine.
  • Depending on how you like it, I use about half the amount of oil called for, 1/4 cup is too much for us.

I have found that a combination of butter and olive oil is great for sautéing (Paula Deen agrees). Purchase small fresh squash.

6 yellow squash, thinly sliced
1 sweet onion, chopped
1/4 teaspoon garlic powder
1/4 teaspoon Lawry's Seasoned Salt
2 tablespoons olive oil
2 tablespoons butter
salt
pepper

Steps:

  • Cut squash into thin slices. Spread slices out onto paper towels. Salt and allow to "sweat". After 10 minutes blot with paper towel. Flip slices over and repeat with salt and blot after 10 minutes. This allows salt to flavor squash and releases water for better sautéing.
  • In a 10 inch saucepan combine olive oil and butter. Lightly sauté onion first and set aside into small bowl.
  • In same saucepan sauté squash on low heat until tender. Before removing from heat add sautéed onions and sprinkle with Lawry's seasoned salt, garlic powder and black pepper.
  • Note: For best flavor use a sweet onion.

1 cup chicken broth (, low-sodium)

2 teaspoons sugar (, granulated)

Steps:

  • Rinse and dry squash
  • Cut into ¼ inch slices; do not remove the skin; set aside
  • Slice one medium - large onion; set aside
  • Melt butter in skillet on medium heat
  • Add sliced onion; cook for 2-3 minutes
  • Add sliced squash and broth; combine
  • Season with salt, pepper and sugar; cover and cook for 8-12 minutes or until it's semi-tender

2 plump garlic cloves, minced
1 1/2 pounds summer squash, cut in 1/2-inch dice
1 small red pepper, cut in 1/4-inch dice
Salt and freshly ground pepper
2 tablespoons chopped fresh parsley

Steps:

  • Heat the olive oil in a large, heavy skillet over medium heat and add the onion. Cook, stirring often, until tender, 5 to 8 minutes, and add the garlic, summer squash, red pepper, and about 3/4 teaspoon salt. Turn the heat to medium-high and cook, stirring, until the squash is translucent and the red pepper tender, about 10 minutes. Add freshly ground pepper, taste and adjust salt. 2 tablespoons olive oil

Steps:

  • Prepare squash and place slices on a paper towel. Sprinkle with salt and allow to stand 10 minutes.
  • Heat olive oil in a medium size skillet and saute chopped onions. Dip out and set aside.
  • Pat squash slices with a paper towel to soak up beaded water drops.
  • Add vegetable oil to skillet and heat to medium temperature. Add squash slices and saute. Sprinkle with garlic powder.
