Sauteed Green Beans with Red Peppers & Almonds image

This sauteed green beans recipe is filled with garlic, red peppers, parmesan cheese and toasted slivered almonds. A mouthwatering vegetable side dish that will add a pop of colour and flavour to any feast and can be prepared in less than 20 minutes! Perfect for the holidays, or to compliment any week day meal! {Vegetarian and gluten-free}

1 lb green beans (ends trimmed)
¼ cup slivered almonds
2 tbsp olive oil
2 shallots (thinly sliced)
1 sweet red pepper (thinly sliced)
2 garlic cloves (minced)
salt and pepper (to taste)
1/4 cup grated parmesan cheese

Steps:

  • Over high heat, bring a medium-sized saucepan filled with water to a boil. Add beans and cook for 4 to 5 minutes or until tender-crisp. Drain. Place beans in a bowl of ice cold water for a minute or so. Drain well.
  • Meanwhile, in a large nonstick frying pan, cook almonds over medium heat until golden and fragrant, stirring frequently, about 5 minutes. Transfer to small dish.
  • Add oil to the pan; heat over medium-high heat. Cook shallots until softened, about 2 to 3 minutes.
  • Stir in red peppers, garlic, green beans and salt and pepper; cook, stirring occasionally, until peppers are tender-crisp and beans are hot, about 4 to 5 minutes. Stir in almonds. Transfer to serving bowl. Sprinkle with parmesan cheese and serve warm.

1 tablespoon extra virgin olive oil
1/2 cup diced sweet red pepper
1/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup toasted slivered almonds

Steps:

  • Cover& cook scapes in a pot of boiling salted water until tender-crisp, about 2 minutes.
  • Drain& chill under cold water, then drain well& pat dry.
  • Heat oil in a large nonstick skillet over medium heat; cook scapes, peppers& seasoning, stirring occasionally, until softened- about 4 minutes.
  • Stir in almonds.

1 lb green beans, trimmed
1 tablespoon olive oil
1 garlic clove, minced
1/2 sweet red pepper, cut into strips

Steps:

  • Trim beans.
  • Meanwhile bring a large pot of water to a rolling boil.
  • Add some salt, then dump in beans, as soon as the water comes back to a rolling boil, count 1 minute, then drain beans and rinse with cold water.
  • Heat olive oil in a frying pan and add garlic and red peppers.
  • Saute 5 minutes, or until peppers are tender and add beans.
  • cook, tossing, until heated through.
  • Place mixture in a mound on a big serving dish or platter and serve.

Steps:

  • In large skillet heat 1 t. oil over medium heat. Add garlic and pepper flakes; cook, stirring occasionally, until garlic softenes, about 4 minutes.
  • Add beans, onion, vinegar, salt and 1 T. oil. Cover; reduce heat to medium-low. Cook until green beans and onion soften, 6-7 minutes.
  • Remove from heat; transfer to serving bowl. Sprinkle with cheese.

1 tablespoon olive oil
1/2 red pepper, diced
salt, & freshly ground pepper
1 tablespoon balsamic vinegar

Steps:

  • Top& tail green beans.
  • Bring a large pot of salted water to a boil; add beans& blanch for 2 – 3 minutes or until crisp-tender.
  • Drain& refresh with cold water until beans are cold.
  • Trim garlic scapes& remove any seed pods.
  • Cut into pieces about the same length as the beans.
  • Blanch for 1 – 2 minutes; drain& refresh with cold water.
  • Heat oil in skillet on medium heat; add scapes& saute for 2 minutes.
  • Add beans& red peppers.
