SAUTéED CABBAGE AND APPLES
After a quick sauté in butter and spices, crisp tender apples and cabbage are topped with pomegranate seeds and fresh dill.

Steps:
- Heat 1 1/2 teaspoons of the butter over medium heat. When the butter melts, add the apples and sauté them for about 5 to 6 minutes or until they start to soften.
- Add the brown sugar, apple cider vinegar, caraway seeds and ground allspice and sauté for about a minute.
- Add the cabbage and rest of the butter. Season with salt and pepper. Cook for about 2 minutes, stirring gently. Taste and adjust the seasoning.
- Serve topped with the pomegranate seeds and fresh dill.

- Melt butter in a large saute pan over medium heat. Add cabbage, apple, onion, fennel seeds, salt, and pepper. Saute until the cabbage softens and wilts, about 20 minutes.
- Pour red wine into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Stir in vinegar.

- Core and slice the cabbage into thin slices. Slice the cheeks off the apples and cut into thin wedges.
- In a large saute pan, add the butter and melt over medium heat. Add the cabbage, apples, fennel and salt and pepper, to taste, and saute until the cabbage softens and wilts about 20 minutes. Deglaze with red wine and stir in a splash of cider vinegar. Transfer to a serving bowl and serve.

- Remove outside leaves of cabbage.
- With a sharp knife, chop cabbage into small pieces. Throw into colander and rinse.
- In large stovetop pot with lid, melt 2 teaspoons of butter at medium-high.
- Add onion to pan and sauté.
- Add chopped cabbage to pan.
- Peel apples, chop and add to pan.
- Combine water with vinegar, add brown sugar and bay leaves and stir.
- Pour liquid over cabbage mixture.
- Bring mixture to a boil then cover and reduce heat to a low simmer for 25-35 minutes.

Cabbage is one of my favorite veggies, so I am always looking for good recipes for cabbage, this is a really great one, and all ingredients can be adjusted to suit taste. This can also be made using green cabbage. I have even added a heaping tablespoon of garlic in with the onions. If you do not have any bacon fat handy, then use all oil, or oil with a few tablespoons of butter. Please, use only Granny Smith apples for this recipe, they hold up better than any other kind. This is a delicious side dish for beef!

- Cut cabbage into quarters, then coarsely shred.
- In a large frypan, heat oil and bacon fat (or butter if using).
- Add in onions, and saute until tender (about 5 minutes).
