ALMANZO'S FRIED APPLES N ONIONS
I loved Little House on the Prairie, and Almanzo's favorite dish was fried apples 'n onions. Fascinated, I made this recipe up (lol, not complicated) and have loved the combination!

- Melt butter in a skillet over medium-high heat; cook and stir apples, onion, brown sugar, and cinnamon in the melted butter until onions are translucent and sauce is slightly reduced, 15 to 20 minutes. Cool before serving.

- Put butter to melt in a flat bottomed pan.
- Let it go hot a little.
- Take care not to burn the same.
- Add all the chopped ingredients and increase the heat to the highest.
- While you see juices oozing out, add salt and black pepper powder.
- Keep sauteeing on high heat for around 4-5 minutes.
- Let the edges go brown a little.
- Remove from heat and serve warm with breads or steamed rice.

- Season the chop with salt and pepper. Heat 1/2 tablespoon of the EVOO in a medium skillet over medium-high heat. Cook the chop until golden, 3 to 4 minutes per side, tenting loosely with foil once you turn the chop. Remove the cooked chop to a plate and cover to keep warm. Add the remaining EVOO and the onions and apples. Season with salt, pepper, and the thyme and cook until just tender, 5 to 6 minutes, stirring occasionally. Douse with juice of the 1/2 lemon and remove to the plate with the chop.
- Add 1 tablespoon of the butter to the skillet and when it melts, whisk in the flour. Cook for 1 minute, stirring, then whisk in the cider and stock. Season the gravy with salt and pepper. Cook over medium-low heat for 3 to 4 minutes to thicken.

KALE WITH SAUTEED APPLE AND ONION

- Peel, quarter, and core apple, then cut into 1/4-inch-thick wedges.
- Heat oil in a 5-quart pot over moderately high heat until hot but not smoking, then sauté onion, stirring occasionally, until golden. Add apple and curry powder and sauté, stirring, until apple is almost tender, about 2 minutes.
- Add kale and water and cook, covered, stirring occasionally, until kale is tender and most of liquid is evaporated, about minutes.
- Season with salt.
CARAMELIZED APPLES AND ONIONS
Steps:
- Heat half the olive oil in a large nonstick skillet over medium-high heat and add the apples and then one stem of thyme and one bay leaf. Cook, stirring occasionally, until the apples are golden brown but not mushy, 5 to 10 minutes. Remove from heat and throw away the thyme and bay leaf.
- In another skillet over medium-high heat, add the remaining olive oil, the butter and the onions, then the remaining thyme and bay leaf. Season with salt and pepper. Reduce heat to medium low and cook, stirring frequently, until the onions are soft and golden brown, 20 to 30 minutes. Remove from heat and throw away the thyme and bay leaf.
- To serve, warm the apples and onions over medium-high heat and spoon them around the pork chops on a warmed platter.
