RAVIOLI WITH CREAMY TOMATO SAUCE



Ravioli with Creamy Tomato Sauce image

Upgrade that store-bought ravioli to a restaurant-quality dish with this rich and creamy tomato ravioli sauce. A 15 minute, one-pan recipe.

1 tbsp olive oil
1 onion (finely diced)
2 cloves garlic (peeled and minced)
500 g (1.1lb) fresh ravioli ((use your favourite flavour))
1 red bell pepper (sliced)
1/2 tsp Italian herbs
1/2 tsp chilli flakes (red pepper flakes)
1/2 tsp black pepper
a pinch salt
1 tbsp tomato puree (paste if you're in the US)
90 ml (1/3 cup) white wine
100 g (3 1/2 oz) roasted cherry tomato halves ((you can buy these from the deli counter))
120 ml (1/2 cup) chicken stock
90 ml (1/3 cup) double (heavy) cream
90 g (3 packed cups) baby spinach
50 g (1/2 cup) parmesan (grated )
1 tbsp fresh parsley (finely chopped)

Steps:

  • Add the 1 tbsp of olive oil to a large frying pan (or skillet) and heat over a medium heat, then add in the finely diced onion and cook for 4-5 minutes until the onion starts to soften.
  • Add in the minced garlic and cook for another 30 seconds stirring continuously.
  • Now add in the ravioli and the sliced red bell pepper and cook for another minute, stirring a few times.
  • Add in the Italian herbs, chilli flakes, black pepper and a pinch of salt, give it a stir then add in the tomato puree and wine, stir again, and cook for another minute to reduce the wine down slightly.
  • Add in the roasted tomatoes, chicken stock and cream. Stir everything together and bring up to a simmer. Allow to simmer for 5-6 minutes, until the centre of the ravioli is piping hot (you can open one up to check this).
  • Add in the spinach and parmesan and cook for a minute to allow the cheese to melt and the spinach to wilt.
  • Sprinkle with fresh parsley and serve.

This Italian Sausage Ravioli is savory, creamy, & full of flavor. If you like delicious ravioli with tomatoes & mushrooms, you'll love this!

Number Of Ingredients 10

2 tablespoons olive oil
1 cup yellow onion (finely chopped)
2 cloves garlic (minced)
8 oz baby Bella mushrooms (sliced)
2 cups puréed San Marzano tomatoes (canned)
1 cup heavy whipping cream
18 oz sausage ravioli
1 cup grated Parmesan cheese
Salt to taste
3 basil leaves (chopped)

Steps:

  • In a large skillet, add 2 tablespoons of olive oil. Then bring the heat to medium-high heat.
  • Add in 1 cup of finely chopped yellow onion and 2 minced garlic cloves. Stir until the onion becomes translucent.
  • Then add 8 oz of sliced baby Bella mushrooms and stir until they become tender (about 2-3 minutes).
  • Then pour in 2 cups puréed San Marzano tomatoes and 1 cup heavy whipping cream. Let the sauce simmer over low heat for about 5 minutes with stirring occasionally.
  • In the meantime, cook 18 oz of sausage ravioli in a pot of salted boiling water. Cook al dente.
  • Now remove the sauce from the heat and stir in 1 cup of grated Parmesan cheese. Then season with salt (to taste).
  • Lastly, stir in the cooked sausage ravioli and garnish with 3 chopped basil leaves. Serve warm.

RAVIOLI FILLING
1 Tbsp each evoo and butter
1 small onion, chopped
3 clove garlic, minced
1/4 lb creamini mushrooms
about 3/4 c frozen spinach, thawed & squeezed dry (or use fresh)
3/4 - 1 lb mild italian sausage
1 c each of mozzarella and ricotta cheese
1/2 c parmesan cheese, freshly grated
2 eggs
1 handful fresh basil leaves
salt & pepper to taste
SAUCE
1 Tbsp olive oil
1/2 c onion, finely chopped
2 - 3 clove garlic, minced
1/4 tsp red pepper flakes
1/2 c cream sherry
1 can(s) 1 can progresso fire roasted tomato recipe starters cooking sauce (if not avail, use crushed tomatoes and some extra spices)
1/2 c heavy cream
1 small handful fresh basil leaves
2 pkgs won ton skins or make your own pasta dough
parmesan and basil leaves for garnish

Steps:

  • 1. Ravioli filling: Remove skins from sausage, and brown in skillet. Set aside to cool while you chop onions, mushrooms and garlic (save time and chop everything for filling and sauce at once..and use 1/2 of the onion & garlic in filling and sauce.
  • 2. Saute the mushrooms, spinach, onion and garlic in the butter/olive oil until done. Let cool slightly. In food processor, pulse sausage, mushroom/spinach mixture and basil leaves (saves time) until coursly chopped.
  • 3. In bowl, thoroughly mix together all the cheeses, eggs, and S&P. Stir in cooled sausage, and mushroom/onion/spinach mixture. Chill for a bit while you make the sauce.
  • 4. Assembling ravioli: Lay won ton skins out in rows on parchment lined cookie sheets. Place a spoonful of filling in center. Moisten edges with water, place top skin on, squeeze out all the ait and seal well. Repeat until all ravioli are made. Cook in boiling lightly salted water for 3 minutes. Drain and top with sauce.
  • 5. Sauce: Saute onion and garlic in olive oil until translucent. Add basil and pepper flakes and cook one more minute. Add Sherry and cook off alcohol for a minute or two. Add can of Progresso sauce. Simmer for 10 minutes. Stir in cream.
  • 6. At this point, I used my immersion blender to make the sauce smoother. Choose the texture you want, smooth or chunky. You can add the basil leaves whole and the IB chops it up. Garnish with fresh basil and parmesan, if desired. Enjoy!

3/4 pound bulk Italian sausage
1 jar (24 ounces) tomato basil pasta sauce
1/2 cup heavy whipping cream
2 bacon strips, cooked and crumbled
2 tablespoons grated Parmesan cheese
Minced fresh parsley

Steps:

  • Cook ravioli according to package directions. Meanwhile, cook sausage in a large skillet over medium heat until no longer pink; drain. Stir in the pasta sauce, cream and bacon. Bring to a boil; reduce heat. Simmer, uncovered, for 2 minutes or until slightly thickened., Drain ravioli; stir into sauce. Top with Parmesan cheese and parsley.

1 1/2 pound penne rigate or bow tie pasta
3 tablespoons extra-virgin olive oil
1/2 pound shiitake mushrooms, stemmed and sliced
2 large shallots, chopped
3 to 4 cloves garlic, finely chopped or grated
A pinch or 2 crushed red pepper flakes
1/2 cup dry sherry
1/2 cup chicken stock or seafood stock
1 (15-ounce) can crushed tomatoes
1 pound shelled, cooked or raw bulk lobster pieces
1 teaspoon lemon zest
Salt and freshly ground black pepper
1/2 cup cream
A handful chopped chives or parsley or both

Steps:

  • In a large saucepan boil water for the pasta. When water begins to boil add salt liberally, let water return to a boil and cook pasta to al dente. Drain.
  • Heat a large skillet over medium heat with olive oil, 3 turns of the pan. Add mushrooms, shallots and garlic, red pepper flakes and saute 5 minutes. Deglaze the pan with sherry, stir in stock and tomatoes and bring to a bubble. If using raw seafood, season with lemon zest, salt, and pepper. Raise the heat a bit then add the seasoned seafood and heat through or cook until just about firm and opaque, a couple of minutes. If using cooked seafood, season the seafood when you add it to skillet with lemon zest, salt and pepper.
  • Stir in heavy cream and toss hot pasta with sauce and chives and/or parsley, adjust seasoning and serve.

3 tablespoons extra-virgin olive oil
6 garlic cloves, minced
2 pounds ripe tomatoes (red, yellow, and/or orange), seeded, chopped

  • Cook pasta according to package instructions; drain.
