Sausage Balls are a Holiday classic, and Southern Living has updated them with the addition of chopped dates and pecans for a touch of sweetness. I have not tried these yet, but will do so very soon!

1 lb pork sausage
2 cups biscuit mix
1/2 cup finely chopped pecans
1 (8 ounce) package dates, chopped

Steps:

  • Combine all ingredients.
  • Stir well and shape into 1-inch balls. Place on lightly greased baking sheets. Bake at 350°F for 20 minutes or until browned.
  • Serve warm or at room temperature. Yield: 4 1/2 dozen.

These sausage balls are a cinch to make, packed with flavor, and a popular party food. This quick and easy recipe will soon become a party favorite.

1 pound sharp cheddar cheese, shredded
1 pound ground pork breakfast sausage
2 cups biscuit baking mix (use store-bought-i.e. Bisquick-or see recipe below)
1 tablespoon dried minced chives
1/2 teaspoon garlic powder
1/4 teaspoon ground cayenne pepper, optional, but highly recommended
1/4 cup milk (if needed)
1 1/2 cups all-purpose flour (gluten-free all-purpose flour works great)
2 teaspoons baking powder
3/4 teaspoon salt
6 tablespoons unsalted butter

Steps:

  • Preheat the oven to 350°F.
  • Either in the bowl of a stand mixer or in a large bowl with an electric mixer, combine the shredded cheese, breakfast sausage, baking mix, chives, garlic powder, and cayenne pepper.
  • Mix together until it forms a thick dough/paste. If the mixture seems too crumbly or thick, add in the milk, a couple tablespoons at a time, until it can be formed easily into balls.
  • Roll the dough into balls about the size of a golf ball-between 1 1/2 and 2 inches in diameter.
  • Place the balls on an ungreased cookie sheet an inch apart. Repeat with the remaining dough.
  • Bake sausage balls in preheated oven for 20 to 25 minutes, or until the balls are golden brown.

Sausage balls are a classic party appetizer for a crowd and they couldn't be simpler--just mix, shape and bake. We've included thinly sliced scallions in our version for subtle onion flavor and a touch of color.

1 pound ground pork sausage, such as Jimmy Dean, at room temperature (see Cook's Note)
2 cups biscuit baking mix, such as Bisquick (see Cook's Note)
1/2 cup thinly sliced scallions, optional
One 8-ounce package sharp Cheddar, grated

Steps:

  • Preheat the oven to 350 degrees F and line 2 baking sheets with parchment.
  • Combine the sausage, baking mix and scallions if using in a large bowl and gently knead with your hands until the baking mix is fully incorporated. Add the Cheddar and continue to mix until the cheese is evenly distributed.
  • Using a tablespoon to scoop, divide the mixture into walnut-size pieces and shape into balls with your hands. Arrange on the lined baking sheets about 2 inches apart, about 20 balls per baking sheet.
  • Bake until the sausage balls are golden brown and cooked through, about 26 minutes. Serve warm or at room temperature.

1/2 pound bulk pork sausage
2 cups shredded sharp Cheddar cheese
1/4 cup milk
1 1/2 cups buttermilk, pancake and waffle mix
2 tablespoons dry onion soup mix
1/8 to 1/4 teaspoon ground hot red pepper

Steps:

  • Mix together sausage, cheese, milk and egg in a large bowl. Add buttermilk pancake and waffle mix with onion soup mix and ground red pepper. Blend well. Pinch off bits of dough and shape into 1- inch balls. Place on lightly greased baking sheets, spacing 1 1/2 inches apart, and sprinkle lightly with paprika. Bake 10 to 15 minutes at 375 degrees until deep golden brown, turning the balls over at halftime. Remove from baking sheets and serve.

A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

3 cups crispy rice cereal

  • Cook and stir dates, sugar, and margarine in a large saucepan over low heat until sugar dissolves; remove from heat. Fold crispy rice cereal, pecans, and vanilla extract into the date mixture until evenly mixed.

1 ¼ cups baking mix (such as Bisquick ®)
1 (8 ounce) package cream cheese, softened
1 (8 ounce) package shredded sharp Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Blend sausage, baking mix, cream cheese, and Cheddar cheese together using the dough hook attachment of an electric stand mixer on very low speed until well combined, 2 to 3 minutes.
  • Roll into 1-inch balls and place on a rimmed baking stone.

1 pound hot country-style sausage or any other spicy bulk pork sausage, uncooked
3 1/2 cups sharp Cheddar cheese, grated
2 cups Bisquick

Steps:

  • Heat oven to 400 degrees. Combine ingredients in a bowl and mix with your hands until there are no dry crumbs. Form into balls about one inch in diameter and place on a baking sheet. If you have the time, the sausage balls hold their shape better if refrigerated overnight before baking. (They also freeze extremely well. Bake them straight out of the freezer, adding a few more minutes to the baking time.)
  • Bake until the balls are golden brown, about 8 to 10 minutes. Serve immediately.
