SAUSAGE CROUTON CASSEROLE - OAMC
Plan ahead and make this easy and satisfying meal for later! These are single serving casseroles to pull out of the freezer for later. You can also combine them for one large casserole.

Steps:
- Combine the flour and milk together. Add sausage, soup, peas, macaroni, onion and sage. Turn into four 10 oz casseroles. Cover, seal, label and freeze.
- Bake frozen casserole, uncovered in 400º oven 45 minutes.
- For each casserole, melt 1 tsp butter and toss with 1/4 cup croutons. Sprinkle croutons around casserole edge. Bake in 350º oven for 5 minutes more (or top unfrozen casserole with buttered croutons, bake in 350º oven for 30 minutes).

HOBO CASSEROLE (OAMC)
One of our best and most inexpensive concoctions yet. Makes a great one dish meal. Just add a salad and you're ready to go. Makes 4 casseroles, and the extras can be frozen for later cooking.

Steps:
- Preheat oven to 400°F.
- Spray 4 9x13-inch baking pans with non-stick cooking spray (such as Pam); set aside.
- Combine ground beef, onion, and garlic in large skillet.
- Cook over medium-high heat until ground beef is browned.
- Drain.
- Add Worcestershire sauce, cream of mushroom soup, and milk.
- Stir until sauce is fairly smooth.
- Boil potatoes until tender; drain. Add potatoes and carrots to sauce.
- Divide mixture evenly between the 4 baking pans.
- To bake: Cover baking pan with foil and bake for 30 minutes.
- Remove foil and bake an additional 15-20 minutes or until potatoes are tender.
- To freeze: Allow mixture to cool in baking pan.
- Cover and label; Freeze.
- To use frozen casserole: Allow casserole to thaw overnight in fridge.
- Bake as directed above (may take an additional 15 minutes to bake if placed in the oven directly from fridge).
- **I have to mix this recipe in thirds since I don't have a large enough skillet or bowl to mix it all at once**.
ONE-POT SAUSAGE CASSEROLE WITH GARLIC BREADCRUMBS
Take 'sausages and beans' from its modest midweek meal status and elevate it to an elegant one-pot casserole that's special enough for entertaining

- Heat the oven to 220C/200C fan/gas 7. Heat 1 tbsp of the oil in a shallow ovenproof casserole over a medium heat and gently fry the sausages for 5-8 mins, or until brown on all sides. Transfer to a plate using tongs. Tip the onions into the pan and fry for 5-8 mins until beginning to turn golden. Drizzle in a little more oil if the onions start to stick. Sprinkle in the sugar and cook for a minute before stirring in the vinegar, tomato purée and paprika to form a paste. Tip in the tomatoes, then pour the wine into the tomato can, swish it round, and add to the pan. Stir in the bay leaves and beans, then arrange the sausages on top so they're half-submerged in the sauce but still a little exposed.
- Bring the mixture to a simmer, then bake in the oven for 20 mins. Meanwhile, make the topping. Mix the breadcrumbs with the garlic and parsley, then season and stir in 1 tbsp oil. Scatter the topping over the casserole, then drizzle with the remaining 1 tbsp oil and bake for 10 mins more until the breadcrumbs are golden and crisp. Leave to stand for a few minutes, then take to the table and serve from the dish.

CROUTON SAUSAGE BREAKFAST BAKE
A quick and easy breakfast casserole that uses croutons so the bread is already cubed for you. This recipe is from my new favorite casserole cookbook.

Steps:
- In a large skillet cook sausage until brown, drain.
- Lightly grease a 3 quart rectangular baking dish and spread croutons evenly in bottom.
- Sprinkle 1 cup of shredded cheese over croutons and top with sausage.
- In a large bowl add 2 1/2 cups milk, eggs, and dry mustard. Whisk together well and carefully pour over layers in baking dish.
- In a small bowl combine cream of mushroom soup and 1/2 cup milk, whisk well and spoon evenly over mixture in baking dish.
- Cover with plastic wrap and chill for 2 hours or overnight.
- Bake in a 325 degree oven, uncovered for 45 minutes.
- Sprinkle with remaining cheese and bake for approximately 5 to 10 minutes longer or until a knife inserted in the middle comes out clean.
- Let stand for 10 minutes before serving.
- Chill time is not included in prep and cooking time.

Steps:
- Cook bacon until crisp and drain on paper towels. Set aside.
- In the bottom of a 10 X 6 X 1 3/4 inch baking dish, combine croutons and cheese.
- In a bowl, combine eggs, milk, salt, onion powder and pepper. Mix until blended.
- Pour egg mixture over the cheese and croutons.
- Crumble the bacon and sprinkle on top of the casserole.
- Bake in a preheated 325 degree oven for about 1 hour or until eggs are set.
- Cool slightly before serving.

VEGETABLE CROUTON CASSEROLE
I saw this recipe on a local news program. It's very easy to make, and very tasty. I used fat-free croutons and spicy V-8 juice.

Steps:
- Lightly oil an 8x8 inch glass baking dish.
- Drop in and even out the croutons.
- Evenly distribute the can of diced tomatoes over that.
- Scatter the tomatoes with the grated cheese of your choice.
- In a saute pan over a high flame, heat the olive oil, then drop in the onion and cook it until it's just transparent.
- Drop in the zucchini slices and saute until they begin to wilt.
- Season with the salt and pepper.
- Pour in the tomato juice, stir it in a cook of a minute or so to lightly reduce it.
- Pour the mixture over the other ingredients in the casserole dish.
- Sprinkle the top with some breadcrumbs and parmesan cheese.
- Bake in a 350 degree oven for about 45 minutes.
- HINTS:.
- Use a combination of zucchini and yellow crookneck squash for nice color.
- Any sort of tomato juice will work, even a spicy V8.

CHICKEN & CROUTON CASSEROLE
There are a lot of chicken casseroles out there but this is the best I've ever had. My kids love it too. Freezes well (let thaw and then bake) and works well for a covered dish meal. I like to serve it with cranberry sauce on the side. And as a reviewer suggested, I have heard of people adding chilies to this recipe. I usually broil my chicken. The results are much tenderer than boiling it. Thigh meat can also be used if you prefer.

Steps:
- Combine butter and stuffing.
- Line 2 quart casserole dish with half of it.
- Sprinkle chicken over stuffing.
- Combine sour cream, soup and broth.
- Pour over chicken and top with remaining stuffing.

- Tip: I prefer broiled and diced chicken breast.

- In a skillet, cook sausage over medium heat until no longer pink; drain. In a greased 13-in. x 9-in. baking dish, layer the croutons, sausage and cheese. Combine eggs and milk; mix well. Pour over cheese; sprinkle with basil, salt and pepper. , Bake, uncovered, at 350° for 40-45 minutes or until the top is lightly browned and a knife inserted in the center comes out clean. Serve immediately.
