WHITE PIZZA WITH PROSCIUTTO AND FIG



White Pizza with Prosciutto and Fig image

Number Of Ingredients 11

1 pound pizza dough (from a pizzeria is ideal)
All-purpose flour, for the work surface
One 15-ounce jar four cheese Alfredo sauce
12 ounces buffalo mozzarella, cut into eight 1/4-inch slices
12 paper thin slices prosciutto
10 fresh figs, quartered
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
2 cups baby arugula

Steps:

  • Position an oven rack on the second highest position, put a pizza stone on it and preheat the oven for 1 hour to as high as your oven goes, usually 500 to 550 degrees F.
  • Divide the pizza dough into 2 pieces. On a floured surface, gently roll out each piece of dough into a 10- to 12-inch circle. Transfer one piece of dough to a floured pizza peel or the back of a baking sheet. Ladle about 1/4 cup of the Alfredo sauce on the pizza, leaving a 1/4-inch border. Top with half the mozzarella. Transfer to the pizza stone and bake until golden and bubbly, rotating halfway through, about 10 minutes. Remove from the oven and top with half the prosciutto slices. Next, scatter with half of the figs. Bake for another 2 to 3 minutes. Repeat with the remaining dough and pizza toppings.
  • Meanwhile, whisk together the balsamic, olive oil and crushed red pepper with some salt and pepper in a medium bowl. Toss with the arugula.
  • Top the warm pizzas with the dressed arugula, slice and serve immediately.

3 tablespoons olive oil, divided
3/4 pound hot Italian sausage, casings removed
1 bunch Swiss chard, ribs and stems sliced into 1" pieces, leaves torn
Kosher salt, freshly ground pepper
1 pound prepared pizza dough, room temperature
1/3 cup finely grated Parmesan
1 tablespoon rosemary leaves
1 cup grated Fontina cheese
1 cup ricotta

Steps:

  • Place a rack in upper third of oven and preheat to 450°F. Heat 2 Tbsp. oil in a large skillet over medium-high. Add sausage and break into small pieces with a wooden spoon. Let cook, undisturbed, until bottom sides are browned, about 4 minutes. Add chard stems; cook, tossing occasionally, until crisp-tender, about 2 minutes. Transfer sausage and chard stems to a medium bowl with a slotted spoon.
  • Let skillet and drippings cool until just warm, then add chard leaves, turning to coat. Season with salt and pepper; transfer to bowl with sausage mixture.
  • Coat dough with remaining 1 Tbsp. oil and stretch into an 18x12" oval on a large rimmed baking sheet; season with salt and pepper. Top with half of Parmesan and rosemary, followed by sausage mixture, Fontina, ricotta, then remaining Parmesan and rosemary.
  • Bake pizza, rotating sheet halfway through, until crust is golden brown and crisp, 18-22 minutes. Let cool 5 minutes.

12 ounces uncooked orecchiette or small tube pasta (about 2-1/2 cups)
1 tablespoon olive oil
1/2 pound bulk Italian sausage
1/2 cup chopped red onion
1 medium fennel bulb, chopped
1/2 pound baby portobello mushrooms, chopped
3 garlic cloves, minced
1 bunch Swiss chard, trimmed and chopped
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup grated Parmesan cheese, divided
1/2 cup pine nuts or chopped walnuts, toasted

Steps:

  • Cook pasta according to package directions for al dente. Meanwhile, in a large skillet, heat oil over medium heat. Cook sausage and red onion until no longer pink, 3-4 minutes, breaking into crumbles. Add fennel, mushrooms and garlic; cook until tender, 6-8 minutes. Add Swiss chard; cook and stir until wilted, 4-5 minutes longer., Drain pasta, reserving 1 cup pasta water. In a large bowl, combine pasta, sausage mixture, salt, pepper and 1/2 cup Parmesan cheese, adding enough reserved pasta water to coat pasta and create a creamy texture. Serve with remaining cheese and pine nuts.

1 packet (1 1/4 teaspoons) active dry yeast
1 cup warm water
3 1/2 cups bread flour, plus additional for dusting
1 teaspoon fine sea salt
1/2 cup pumpkin puree
2 tablespoons olive oil, plus more for the bowl
1 1/2 tablespoons honey
2 cups whole-milk ricotta
1 cup shredded mozzarella
1/4 cup milk
1/2 teaspoon dried oregano
Kosher salt and freshly ground black pepper
1/2 butternut squash, halved lengthwise and peeled
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
2 cups shredded mozzarella
Sliced pepperoni, optional
4 black olives
Basil, for garnish

Steps:

  • For the crust: Add the yeast to the warm water and let bloom for 10 minutes.
  • Meanwhile, add the flour and salt to the bowl of a food processor and pulse 5 times to mix. Add the pumpkin puree, olive oil and honey to the yeast mixture and whisk to combine. With the food processor running, slowly add the liquid in a thin stream until a ball forms (you won't necessarily add it all before this happens). Once the ball forms, process for 30 seconds to knead. Turn out onto a lightly floured work surface and knead a couple times to form into a tight ball. Place in a lightly oiled bowl and cover with a clean kitchen towel. Set aside at room temperature until doubled in size, 1 1/2 to 2 hours.
  • For the white sauce: Combine the ricotta, mozzarella, milk and oregano in a medium bowl. Season with salt and pepper, and mix until well blended.
  • For the toppings: Preheat the oven to 400 degrees F.
  • Slice the butternut squash crosswise into 1/2-inch slices. Place in a bowl, drizzle with olive oil, sprinkle with salt and pepper, and toss to coat. Transfer the squash to a baking sheet and roast until slightly browned and softened, 30 to 35 minutes. Slice into triangles.
  • Raise the oven temperature to 500 degrees F and set a pizza stone on the top rack.
  • Divide the dough into 2 portions and roll into balls. On a floured work surface, roll out 1 of the dough balls into a 12- to 14-inch circle and place on a well-floured pizza peel. Working quickly, spread with half of the white sauce in a circular pattern, sprinkle with 1 cup of the shredded mozzarella, and arrange some pepperoni if using around the perimeter of the pizza near the crust. Transfer to the pizza stone and bake until the crust is browned, 12 to 15 minutes. Repeat with the remaining dough, white sauce and mozzarella.
  • When the pizzas come out of the oven, arrange the roasted butternut squash on top to look like a jack-o-lantern: Use 2 triangles for eyes and 2 black olives as eyeballs, then use 1 triangle for the nose and more triangles for teeth. Garnish with basil to make the pumpkin stem.

1/2 teaspoon Italian seasoning
1/4 teaspoon freshly ground pepper

1/2 cup shredded part-skim mozzarella cheese
2 cups arugula or baby spinach

Steps:

  • Preheat oven to 450°. In a large skillet, cook and crumble sausage over medium-high heat until no longer pink, 4-6 minutes. Mix ricotta cheese and garlic powder., Place crust on a baking sheet; spread with ricotta cheese mixture. Top with sausage, red pepper and onion; sprinkle with seasonings, then with mozzarella cheese., Bake on a lower oven rack until edge is lightly browned and cheese is melted, 8-10 minutes. Top with arugula.

Pizza from scratch need not be solely a weekend pursuit. Start the dough in the morning, and let it slowly rise in the fridge over the course of the day. Our no-sauce version brings out the earthiness of chard.

2 tablespoons extra-virgin olive oil
2 cloves garlic, sliced
1 bunch Swiss chard (1 pound), stems removed and thinly sliced, leaves torn into pieces
Coarse salt
1 pound store-bought whole-wheat pizza dough or homemade Large-Batch Whole-Wheat Pizza Dough
1 cup grated Gruyere (2 ounces)
Pinch red-pepper flakes

Steps:

  • Place pizza stone or inverted baking sheet in oven and heat to 500 degrees.
  • Heat 1 tablespoon oil in a large skillet over medium heat. Cook garlic until just tender, about 1 minute. Add chard stems and cook, stirring, until tender, about 5 minutes. Working in batches, add leaves and cook until just wilted, about 5 minutes. Season with salt and set aside.
  • Stretch dough into a 10-by-14-inch rectangle and transfer to a piece of parchment. Brush with remaining oil and season with salt. Sprinkle with half the Gruyere, then top with chard and sprinkle with remaining Gruyere.
  • Transfer to the oven: Slide parchment onto stone or baking sheet and bake pizza until cheese is bubbly and crust is golden, 13 to 15 minutes. Sprinkle with pepper flakes.

I was looking for a recipe for Olive Garden's Zuppa Tuscano -- and blended several recipes to come up with this. Serve with green salad and bread.

1/4 lb bulk sweet Italian sausage
1/4 lb bulk hot Italian sausage
1 medium onion, chopped
2 garlic cloves, minced
1 1/2 lbs swiss chard, rinsed well and torn into bite-size pieces
1/2 cup heavy cream
1/4 teaspoon nutmeg
olive oil
2 cups penne
parmesan cheese

Steps:

  • Heat a large skillet and add both types of sausage and onion. Cook over medium heat until sausage is done.
  • Drain sausage and onion and wipe skillet of excess grease with some paper towels.
  • Return skillet to burner with sausage/onion and add Swiss chard and garlic, reduce heat to medium-low and cover. Cook about 15 minutes, stirring occassionally, until Swiss chard is tender.
  • In the meantime, cook pasta in salted boiling water and drain.
  • Add cooked, drained pasta to skillet with sausage and Swiss chard.
  • Add nutmeg and cream, stirring until heated through.
  • Sprinkle with Parmesan cheese just before serving.
