DRIED BEEF AND NOODLE CASSEROLE

This beef and noodle casserole is made with budget-friendly dried beef, but feel free to use cooked leftover beef in the recipe.

4 ounces mushrooms (sliced)
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups milk
1/2 cup Cheddar cheese (grated sharp)
Optional: 1 small jar pimientos (chopped, approximately 2 ounces)
9 ounces dried beef
8 ounces noodles (cooked and drained)
Salt (to taste)
Black pepper (to taste)
1/2 cup bread crumbs (fine dry)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F.
  • Melt the butter in a skillet or sauté pan over medium heat.
  • Cook mushrooms in the butter for about 5 minutes, or until tender.
  • Blend the flour into the mushrooms and butter and continue cooking for 2 minutes. Gradually add milk and cook, stirring constantly, until thickened.
  • Add cheese; stir until cheese is melted, then add pimientos, dried beef and the cooked and drained noodles. Add salt and pepper to taste.
  • Transfer the noodle mixture to a lightly buttered baking pan or casserole; sprinkle with fine breadcrumbs.
  • Bake in ​the preheated oven for 30 minutes.
  • Serve and enjoy.

This popular chicken casserole recipe is made with bacon, sour cream, condensed soup, and dried chipped beef. Serve it with rice or a tossed salad.

8 chicken breast halves (boneless, skinless)
8 strips bacon
1 cup sour cream
1 can/10 3/4 ounces cream of mushroom soup (condensed)
1 jar dried beef
Black pepper to taste

Steps:

  • Gather the ingredients and heat the oven to 300 F/150 C/Gas 2.
  • Wrap 1 strip of bacon around a chicken breast half. Repeat with the remaining halves.
  • Line a large, lightly buttered casserole or baking dish with the dried beef.
  • Place the 8 chicken breast halves on the chipped beef in the casserole dish.
  • In a bowl, stir together the sour cream and soup until well blended; pour over the chicken.
  • Sprinkle lightly with freshly ground black pepper.
  • Bake slowly, at 300 F for 2 hours, or until chicken is cooked and bacon is crispy.
  • Serve and enjoy.

¼ cup margarine
¼ cup all-purpose flour
2 cups milk
4 ounces processed cheese food, cubed
1 (8 ounce) package uncooked egg noodles
1 (10.75 ounce) can cream of mushroom soup
4 ounces dried beef, chopped
1 cup crushed plain potato chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add the egg noodles, and cook until tender, about 8 minutes. Drain and transfer to a greased 9x13 inch baking dish.
  • Melt the margarine in a saucepan over medium heat. Whisk in the flour using a fork so that no lumps form. Gradually stir in the milk. Bring to a simmer, stirring constantly, then add the cheese. Cook and stir until smooth. Stir in the cream of mushroom soup, and then the dried beef. Stir into the noodles in the casserole dish, and top with crushed potato chips.
  • Bake for 30 minutes in the preheated oven, until the sauce is thick and bubbling, and top is toasted.

8-10 regular size slices of bread (i use potato bread)
softened butter
8 oz dried beef chipped
2 c shredded mild cheddar cheese
4 large eggs
1 qt whole milk
salt and pepper

Steps:

  • 1. Preheat oven to 325 degrees.
  • 2. Butter all slices of bread, chop into cubes (you can remove crusts if you prefer).
  • 3. Cover bottom of a cooking sprayed 13x9x2 baking dish with 1/2 of the bread cubes. Add a layer of the chipped dried beef (chop it out of package, do not lay down the slices, 1/2 of the cheddar cheese. Repeat with a second layer. (If you don't want to take the time to layer, I just dump everything in a bowl and mix well, then pour into the baking dish).
  • 4. Beat eggs slightly. Add milk to eggs, beat til well blended. Salt and pepper to taste. Pour over your layers or mixture. (If you choose to mix everything together, add the egg mixture to the bread mixture, stir together, than pour in greased baking dish).
  • 5. Bake at 325 for 45-50 mins. ENJOY!!!!

GRANDMA'S GROUND BEEF CASSEROLE

As the title suggests, this was my Grandmother's recipe. I've tweaked the amount of cheese and sour cream depending on what I've got in the fridge and it always turns out great! My mother has suggested this was made up as a way to use up ingredients in the fridge.

1 pound ground beef
1 teaspoon white sugar
1 teaspoon salt
1 teaspoon garlic salt
2 (15 ounce) cans tomato sauce
1 (8 ounce) package egg noodles
1 cup sour cream
1 (3 ounce) package cream cheese
1 large white onion, diced
½ cup shredded sharp Cheddar cheese, or more to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix sugar, salt, garlic salt and tomato sauce into ground beef; simmer until flavors blend, about 20 minutes. Remove from heat, cover skillet, and cool to room temperature.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and cool slightly.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Mix sour cream, cream cheese, and onion in a bowl.
  • Scoop half the noodles into the prepared casserole dish; top with half the sour cream mixture. Spoon half the ground beef mixture atop sour cream layer. Repeat layering with remaining ingredients. Top casserole with Cheddar cheese.
  • Bake in the preheated oven until Cheddar cheese has browned, 25 to 30 minutes.

This was my mom's favorite casserole when she was younger. However, she didn't get it very often because her brothers didn't like it as much. I like it, though, so I posted it! To make the dish less salty, rinse the beef in water before cooking. Also, cut down on the addition of salt in the recipe. (I find I need to do these things, to suit my tastes)

1 tablespoon butter
1/4 cup chopped onion
1 (5 ounce) package dried beef (cut up or sliced as desired)
1 cup sliced mushrooms
2 tablespoons butter
2 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup low-fat milk
2 egg yolks
1 teaspoon prepared mustard
salt
pepper
2 cups corn, drained
1/2 cup shredded cheddar cheese
1/4 teaspoon paprika

Steps:

  • Saute 1 tablespoon butter and onion, add beef and mushrooms.
  • For the white sauce: Melt 2 tablespoons butter with a wooden spoon.
  • Blend in flour, salt and pepper, and stir until bubbly and then remove from heat.
  • Stir in milk.
  • Put it back on the burner, and stir constantly.
  • Bring to a boil, and boil for 1 minute- Keep stirring so it doesn't burn.
  • In a small bowl, beat egg yolks and add the prepared mustard, and salt and pepper to taste.
  • Combine the egg yolk mixture with the white sauce mixture and dried beef mixture.
  • Add the 2 cups corn.
  • Pour into a 2 1/2 quart baking dish.
  • Grate 1/2 cup cheese on top.
  • Sprinkle paprika on top.
  • Bake covered at 350 degrees for 30 minutes.
