SARASOTA'S SPICY SAVORY WHITE BEAN CHILI
Comfort Food. The first time my Dad was going to try this ... he was not very willing. Turkey ... no beef, cinnimon and nutmeg ... what is that? A little heat to make it spicy and you have an amazing chili. He was hooked. I top it with my Pepper Jack cheese and fresh chopped up avocado and tomato and you have an amazing chili.

Steps:
- Saute -- In a large pot, saute onions, celery, pepper and garlic in olive oil until soft, about 5 minutes, add the turkey or chicken and cook until brown.
- Add all the seasonings, tomatoes, beans, chilies, corn and any remaining ingredients. Yes it is spicy, but adjust accordingly. It really isn't as hot as you might expect. Cook a good hour or so till everything combines well.
- Mix the diced avocado and tomato with lime, salt and pepper and top on the chili. Add a dollop of sour cream and some cheese and you have amazing chili.
- Not a spice fan -- just omit the hot sauce and go light on the chili powder. To me I add more heat, but I understand. But it is a great chili.

THICK AND SAVORY CHILI
Beef, chili beans, and a special surprise ingredient give this chili a savory flavor unrivaled by other chilis. Serve topped with diced raw onion, sour cream, and shredded Cheddar cheese for a mouth-watering delight! Believe it or not, the secret is the ketchup (NOT catsup) that adds just the right flavor to the sauce; use more or less as desired. Use sauteed fresh mushrooms for a special treat! Seasonings may be added to taste. If you want it really hot, use hot chili beans and add more chili powder and cayenne pepper or include hot peppers!

WHITE BEAN CHICKEN CHILI
My sister shared this white bean chicken chili recipe with me. I usually double it and add one extra can of beans, then serve with cheddar biscuits or warmed tortillas. The jalapeno adds just enough heat to notice but not too much for my children. -Kristine Bowles, Albuquerque, New Mexico

SARASOTA'S SPICY SIMPLE BLACK BEANS
A quick easy recipe using canned black beans for a side dish any night of the week. I love this with my Margarita Chicken or just any citrus grilled chicken or fish. Maybe a nice spicy chili rub on chicken would be a nice dish with these beans.

Steps:
- Vegetables -- In a large saute pan, heat to medium and add the olive oil and saute the onion and garlic and cook on medium, not too high, you want them to sweat more. Cook 4-5 minutes.
- Spices -- Add in the green chilies, salsa, cumin, chili powder, salt and pepper and mix well, still on medium heat. Now add in the beans and stir to combine.
- Just let it hang out and cook on low heat while you prepare your main course. As it simmers I often add just a little chicken broth for some moisture. Each time it is different, 1/4 cup up to 1/2 cup, depending on how long they simmer. After 5 minutes the beans are done, but if you are still waiting on your main dish to be ready, maybe add a little more broth as the beans simmer so they don't dry out.
- Right before serving -- taste for salt and pepper and stir in the cilantro. That's it!
SPICY CHILI WITH BEANS
I found this in a crock pot cookbook. The original recipe doesn't call for corn, but I added it anyway. If you don't like it so spicy, don't add so much chili powder and/or pepper. We never use the salt; I used it the first time and we couldn't taste it anyway.

SARASOTA'S SPICY GARLIC AND BACON LIMA BEANS
I actually really like Lima Beans. But, I realize I'm probably in the minority. Salt, pepper and butter is all I need, but this is a great recipe for them. I try to get a few of my "picky" friends to try new vegetables now and then, and this is one of them they really liked. Just a few ingredients takes ordinary frozen vegetables and makes them a great side dish. NOTE: Some think that butter beans are the same as lima beans - and they are - well similar. Both are lima beans, but they are 2 separate varieties. The baby lima beans are the small green ones; whereas butter beans are actually Fordhook, and they are larger and buttery in color (hence the name butter beans), and they do have a stronger flavor. You can buy both frozen, canned, and dried; but difficult to find fresh. For this dish I use frozen. It makes it a quick easy dish.

Steps:
- Bacon -- In a medium sauce pan, add the bacon and begin to saute on medium heat - don't try to rush it. After the bacon begins to crisp up, drain any excess drippings from the pan. I leave just enough drippings in the pan (1/2 teaspoon), to coat the onion and garlic.
- Onion and Garlic -- Add the onion, garlic, and red pepper flakes to the pan with the bacon and saute for 2-3 minutes.
- Beans -- Finish it up. Add the broth, beans and butter and simmer uncovered (medium heat) for 5 minutes or less until the beans are warm and the broth is reduced. Season with salt and pepper.
- Serve and enjoy!
