SARAH'S EASY SHREDDED CHICKEN TACO FILLING

I put this together one day, wanting tacos, but I did not want ground beef. It is fast to make, as no slow cooker is needed. Serve warmed as a substitute for ground beef in tacos, and serve in a taco shell, with lettuce, tomatoes, cheese, or other favorite toppings.

Number Of Ingredients 6

1 pound skinless, boneless chicken breast halves
2 teaspoons vegetable oil
1 tablespoon minced onion
1 pinch ground cumin
1 pinch chili powder
¼ cup tomato sauce

Steps:

  • Place chicken breasts into a saucepan and pour in enough water to cover. Place over medium heat, bring to a boil, and simmer until chicken meat is no longer pink, 10 to 12 minutes.
  • Transfer chicken breasts to a bowl, allow to cool, and shred the chicken meat with 2 forks.
  • Heat vegetable oil in a small non-stick saucepan over medium heat, and cook and stir onion until translucent, 2 to 3 minutes.
  • Mix in the shredded chicken, cumin, chili powder, and tomato sauce; bring to a boil.
  • Reduce heat to low and simmer until chicken is hot and the flavors have blended, about 3 minutes.

FISH TACOS WITH CABBAGE SLAW AND PICKLED RED ONIONS



Fish Tacos with Cabbage Slaw and Pickled Red Onions image

Number Of Ingredients 18

1/2 cup red wine vinegar
2 tablespoons kosher salt, plus additional for seasoning
1 tablespoon sugar
2 to 3 shakes hot sauce, such as Tabasco
1 red onion, sliced thinly
2 tomatillos
1 jalapeno
Juice from 1 lime, plus lime wedges for serving
1 bunch fresh cilantro, stems removed and leaves roughly chopped
1/4 green cabbage, thinly sliced
1/4 red cabbage, thinly sliced
1 carrot, grated
Olive oil, for drizzling
4 mild, flaky, white fish fillets, like tilefish
1/2 tablespoon smoked paprika
8 corn tortillas
1 avocado, thinly sliced
1/2 cup Cotija, crumbled

Steps:

  • Combine the red wine vinegar with 1/2 cup cold water in a small bowl. Stir in the salt, sugar and hot sauce. Add the sliced onion and let sit for at least 1 hour. These can be stored, refrigerated in an airtight container, for 1 week.
  • Preheat a grill pan over medium-high heat. Place tomatillos and jalapeno on the pan and allow to char on all sides, flipping with tongs as needed. Allow to cool slightly. Remove stems and add to a blender. Add half of the lime juice and half the cilantro. Pulse until combined and smooth (use caution when blending hot liquids; it's okay to have some lumps). Set aside to cool.
  • Add cabbages, carrot and 1/4 cup pickled onions to a medium bowl. Stir to combine. Drizzle olive oil and some of the pickling liquid into the bowl until everything is lightly coated. Set aside to marinate until ready to serve.
  • Clean grill pan if necessary, then heat it over medium heat and brush with olive oil. Sprinkle fillets with salt and smoked paprika. Grill fillets on both sides until cooked through and flaky, about 3 minutes per side. Warm tortillas on grill pan until soft and pliable.
  • Top each tortilla with 1/2 fillet of fish, tomatillo salsa and slaw. Garnish with sliced avocado, Cotija, remaining cilantro and lime wedges. Serve!

After I moved to Oklahoma, I quickly discovered most every burger joint has their version of an onion burger. My version takes the Oklahoma onion burger south of the border. Top with lettuce, cheese, avocado slices, black olives, and Mexican crema.

1 onion, divided
1 teaspoon butter
4 teaspoons taco seasoning, divided
1 ¼ pounds ground beef
½ teaspoon garlic powder
1 (8 ounce) can tomato sauce
¼ cup salsa
4 hamburger buns

Steps:

  • Mince enough onion to get 1/4 cup. Set remaining onion aside.
  • Melt butter in a skillet over medium heat. Add 1/4 cup minced onion and 1 teaspoon taco seasoning. Cook until onion is translucent and fragrant, about 5 minutes.
  • Transfer onion to a medium bowl; add ground beef, 2 teaspoons taco seasoning, and garlic powder. Mix well and shape into 4 hamburger patties.
  • Pour tomato sauce into a large skillet over medium-high heat. Add salsa and remaining 1 teaspoon taco seasoning. Mix to combine.
  • Shave remaining onion into thin slices using a mandolin. Add to tomato mixture. Add hamburger patties and cook in the sauce until internal temperature reaches 170 degrees F (76 degrees C), about 5 minutes per side.
  • Toast the hamburger buns if desired. Top buns with hamburger patties and sauce, and other desired toppings.

This is an easy recipe that will feed an army!!! Don't worry if you don't have an army, it freezes well. Just reheat in the microwave or on the stove top.

2 lbs ground beef
2 cups diced onions
2 (15 1/2 ounce) cans pinto beans
1 (15 1/2 ounce) can kidney beans
1 (15 1/4 ounce) can corn, drained
1 (14 1/2 ounce) can Mexican-style stewed tomatoes with jalapeno peppers
1 (14 1/2 ounce) can tomatoes and green chilies
1 (14 1/2 ounce) can diced tomatoes
2 (4 1/4 ounce) cans diced green chilies
1/2 cup green olives, sliced
1 (1 1/4 ounce) package taco seasoning
1 (1 ounce) package ranch dressing mix
corn tortilla chips (optional)
jalapeno pepper, sliced, garnish (optional)

Steps:

  • Brown grown beef and onions in a large skillet.
  • Drain, and transfer to a large pot.
  • Add beans, corn, tomatoes, green chiles, olives, taco seasoning and ranch mix.
  • Cook together, over low heat, covered for one hour.
  • Stock pot directions: Brown beef and onions. Combine all ingredients and cook on low for 6-8 hours.
