SNOWBALLS II

Snowballs II image

These are technically Mexican Wedding Cakes or Russian Teacakes, but my grandmother gave up on us calling them that years ago!

Provided by Lori Dehn

Categories     Desserts     Cookies

Time 45m

Yield 30

Number Of Ingredients 8

1 cup butter
½ cup confectioners' sugar
¼ teaspoon salt
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 cup chopped pecans
⅓ cup confectioners' sugar for dusting, or as needed
¼ cup finely crushed peppermint candy canes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
  • Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.

SANTAS SNOW BALLS.. (COOKIES)

SANTAS SNOW BALLS.. (Cookies) image

I love my Bath Tub Santa, and these cookies.! They are very simular to a Russian Tea Cake or a Mexican Wedding Cookie. My recipe uses whole wheat flour, and almond flavoring. This gives them an wonderful different taste. Maybe the use of anise extract would an be a nice flavor change also. I am sure Santa would approve. When you wind santa up ,his arm goes up and down, like he is scrubbing himself!...LOL nancy...12/15/12

Number Of Ingredients 7

2 cup(s) whole wheat flour
1/2 teaspoon(s) salt
1-1/4 cup(s) old fashioned rolled oats
1 cup(s) soft butter
1-1/2 teaspoon(s) almond flavoring
1/2 cup(s) powdered sugar
- extra powdered sugar to roll cookies in

Steps:

  • Beat butter till creamy, in a large bowl. Gradually beat in powdered sugar, salt, almond flavoring, and flour. Add the oats and stir. *NOTE: Old fashioned oats or quick oats can be used. I think there is a little bit more flavor with the old time oats.THey are not ground up like the instant oats are.
  • Make balls of dough about 1 inch round and place on a ungreased cookie sheet. Bake in a pre-heated 350F oven ..for about 20 minutes.
  • While warm ...roll in powdered sugar. Put cookies on a rack to cool. Then roll again in powdered sugar . Makes about 3 dozen. Enjoy....I know SANTA does! His cookie plate is always empty!!

SANTA'S STUFFED BELLY COOKIES

Santa's Stuffed Belly Cookies image

I have been seeing "surprise inside cookies" for a few years and really wanted to come up with my own version. After a little brainstorming, I came up with the idea of making Santa's belly cookies and filling them with miniature cookies. These are so much fun to give as gifts-just wrap in colored cellophane and tie with a festive ribbon. You can exchange the mini cookies for candy or anything you'd like; if desired, you can color the cookie dough red, too. -Crystal Schlueter, Northglenn, Colorado

Categories     Desserts

Time 1h10m

Yield 6 stuffed cookies

Number Of Ingredients 14

1-1/2 cups butter, softened
3 cups sugar
4 large eggs
1 teaspoon peppermint extract
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
ROYAL ICING:
3-3/4 to 4 cups confectioners' sugar
5 to 6 tablespoons warm water (110° to 115°)
3 tablespoons meringue powder
Red, white, black and gray food coloring
Red and green milk chocolate M&M's

Steps:

  • Preheat oven to 350°. Cream butter and sugar until light and fluffy. Beat in eggs and extracts. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture. Divide dough into quarters. Shape each into a disk; wrap in plastic. Refrigerate until firm enough to roll, about 2 hours., On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 4-in. round cutter. Using a floured 3-1/2-in. round cutter, cut centers out of three-fifths of the cookies to make window cookies. Reroll and use dough trimmings. Place solid and window cookies 2 in. apart on greased baking sheets. Bake until edges are firm, 8-10 minutes. Remove from pans to wire racks to cool completely., For royal icing, combine confectioners' sugar, water and meringue powder; beat on low speed just until blended. Beat on high until stiff peaks form, 4-5 minutes. Tint with red, white, black and gray food coloring. Keep unused icing covered at all times with a damp cloth. If necessary, beat again on high speed to restore texture., Frost half of solid cookies with red icing; using a pastry bag, pipe them with belts, buckles and trim. Pipe white icing around edges of window cookies and remaining solid cookies so they will adhere. On each solid cookie, layer three window cookies; fill opening with M&M's. Top with a red-frosted cookie. Repeat with remaining cookies. Let stand at room temperature several hours until frosting is dry and firm. Store in an airtight container.
