EASY CINNAMON RAISIN BREAD



Easy Cinnamon Raisin Bread image

Inspired by my love of Hot Cross Buns, this easy cinnamon raisin bread is the perfect recipe for Easter. Soft, fluffy and perfectly spiced.

3/4 cup warm water
3/4 cup warm milk
10 g (2tsp) instant yeast
2/3 cup sugar
3-4 cups flour ((any white flour can be used: Cake, all purpose or bread) )
1 tsp salt
1 tsp cinnamon
1/8 tsp nutmeg
½ tsp ground ginger
1/3 cup butter / oil ((room temperature butter) )
1 cup raisins
1 egg (beaten (for egg wash) (optional))

Steps:

  • Whisk water, milk, sugar and yeast together. Allow to stand for 10 minutes until foamy.
  • In the bowl of a stand mixer fitted with the dough hook attachment, combine the flour, spiced and salt.
  • With the mixer running, add the yeast mixture and allow to knead in.
  • Add the butter or oil, allow to knead in then add more flour, one third cup at a time until the dough is smooth. Add the raisins.
  • Knead for another minuted until the dough comes away from the sides of the bowl.
  • If the dough is still very sticky, add more flour and knead in.
  • The dough should be smooth and soft and only a slight bit sticky.
  • Cover with plastic wrap or a damp tea towel and allow to rise for 1 hour.
  • Once the dough has proofed, press it into rectangle on a lightly floured surface. Press any raisins that have fallen out of the dough into the center. Roll onto its self into a log, pinch the seam then transfer to a loaf pan that has been lightly greased.
  • Cover again and allow to rise for 30 minutes while you preheat the oven to 180°C/350°F.
  • Brush with beaten egg and place in the oven and allow to bake for 30-45 minutes until golden brown and risen. If the bread browns too quickly, loosely cover with a piece of foil and continue baking. Once baked the bread will sound hollow when tapped on the bottom.
  • Remove from the oven, brush with melted butter (optional) and allow to cool before slicing.

1 c raisins
1 1/2 c warm water (105-115 degrees)
1 pkg active dry yeast
2 Tbsp honey
2 Tbsp butter, softened
1 tsp salt
3 c all purpose flour, divided
1 Tbsp cinnamon
1 Tbsp cinnamon sugar for topping

Steps:

  • 1. Place raisins in hot water to soak for 30-60 minutes. This softens them and makes a better bread. Drain raisins and set aside. Use water from raisins in next step.
  • 2. Check raisin water temperature. It should be 105-115 degrees. In a large mixer bowl, stir together raisin water, yeast and honey. Add butter, salt, and 2 cups of the flour. Beat at low speed until combined. Then increase mixer speed to medium-high and beat for 1 minute. Stop mixer and stir in remaining flour by hand. Cover bowl (with a towel or saran wrap, not tightly) and let rise in a warm place, until double in bulk, about 1 hour. Punch down dough with a wooden spoon and add raisins and cinnamon. Mix by hand until combined. Spoon dough into a buttered loaf pan. Preheat oven to 350 degrees. Cover loaf pan (with a towel or saran wrap, not tightly) and let rise until doubled, but it should not reach over top of pan. Sprinkle top of loaf with cinnamon sugar.
  • 3. Bake for about 40 minutes or until loaf sounds hollow when tapped. Cool on a wire rack.

  • Preheat oven to 350°. In a large bowl, whisk flour, 3/4 cup sugar, baking powder, baking soda and salt. In another bowl, whisk eggs, coconut milk, oil and vanilla until blended. Add to flour mixture; stir just until moistened. Toss the raisins with remaining flour; fold into batter., Transfer half of the batter to a greased 9x5-in. loaf pan. Combine the cinnamon and remaining sugar. Sprinkle half over batter. Repeat layers. Cut through batter with a knife to swirl., Bake until a toothpick inserted in center comes out clean, 45-50 minutes. Cool in pans 10 minutes before removing to a wire rack to cool completely. If desired, serve with dairy-free margarine.

½ cup white sugar
2 (.25 ounce) packages active dry yeast
1 ½ cups warm milk
2 eggs, beaten
½ cup butter or margarine, melted
4 ½ cups all-purpose flour
1 ½ teaspoons salt
1 teaspoon ground cinnamon
1 cup raisins
½ cup confectioners' sugar
1 tablespoon milk
½ teaspoon vanilla extract

Steps:

  • In a large bowl, dissolve the white sugar in the warm milk, and sprinkle yeast over the top. Let stand for 5 minutes. Grease a 9z13 inch pan.
  • Whisk the eggs into the yeast mixture. Combine the flour, salt and cinnamon; stir into the yeast mixture until smooth. Mix in raisins. Spread into the prepared pan, and brush the top with melted butter. Let rise until double in size, but don't let it run over the edge of the pan.
  • Preheat the oven to 350 degrees F (175 degrees C). Prepare the glaze by mixing the confectioners' sugar, 1 tablespoon of milk and vanilla extract in a small bowl until smooth.
  • Bake for 30 minutes in the preheated oven, or until golden brown on the top. Drizzle with the sugar glaze., and cool before slicing and serving.

Steps:

  • Place dough in a 9 x 5 x 3-inch loafpan coated with cooking spray. Cover and let rise in a warm place (85°F), free from drafts, 1 hour or until doubled in bulk.

THIS IS NOT AN EASY BREAD TO MAKE! It is tricky, but worth the effort for one who loves that very different, pungent smell of salt-rising bread. The cornmeal used for the starter must contain the inner germ of the corn and a constant warm temperature must be maintained.

1 cup milk
½ cup cornmeal
1 tablespoon white sugar
1 teaspoon salt
2 cups warm water (110 degrees F/45 degrees C)
2 cups all-purpose flour
2 tablespoons white sugar
3 tablespoons shortening
½ teaspoon baking soda
1 tablespoon warm water (110 degrees F/45 degrees C)
6 cups all-purpose flour

Steps:

  • To Make Starter: Heat the milk, and stir in 1 tablespoon of the sugar, the cornmeal and 1 teaspoon of the salt. Place this in a jar in an electric skillet or crock pot with hot water in it. Maintain the temperature around 105 to 115 degrees F (40 to 47 degrees C) for 7-12 hours or until it shows fermentation. You can hear the gas escaping when it has fermented sufficiently. The bubble foam, which forms over the starter, can take as long as 24 hours. Do not go on with the bread-making until the starter responds. As the starter ferments, the unusual salt-rising smell appears.
  • When the starter is bubbly, it is time to make the sponge. Place the starter mixture in a medium-size bowl. Stir in 2 cups of the warm water, 2 tablespoons of the sugar, the shortening and 2 cups of the all-purpose flour. Beat the sponge thoroughly. Put bowl back in the water to maintain an even 105 to 115 degrees F (40 to 47 degrees C) temperature. Cover, and let rise until light and full of bubbles. This will take 2 1/2 to 3 hours.
  • Dissolve the baking soda in 1 tablespoon of the warm water and combine it with the sponge. Stir 5 1/4 cups of the flour into the sponge; knead in more flour as necessary. Knead the dough for 10 minutes or until smooth and manageable. Cut dough into 3 parts. Shape dough and place it in three greased 9x5x3 inch pans. Place covered pans in warm water or uncovered pans in a warm oven with a bowl of hot water, maintaining a temperature of 85 degrees F (30 degrees C). It will take approximately 5 hours for the bread to rise 2 1/2 times the original size. The bread will round to the top of the pans.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bake bread at 375 degrees F (190 degrees C) for 10 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and bake for an additional 20 minutes or until light golden brown. YOU CAN DRY SALT RISING CULTURE!!! Save 1/4 cup of a successful sponge and pour it into a saucer, cover with cheesecloth and allow to dry. Store dried flakes in plastic in a cool, dry place or freeze until needed for salt rising bread. When ready to make the bread; dissolve the flakes in the new warm starter and continue with recipe. This will give a flavor boost to your bread.

Cinnamon raisin bread made with gluten-free sourdough starter discard instead of commercial yeast. I made this recipe during the Covid-19 lockdown when yeast had disappeared from the supermarkets. This light and fluffy loaf is very easy to make because there is no kneading; it is more of a batter than a dough. This bread is delicious toasted.

¾ cup raisins
2 cups gluten-free bread flour mix
½ cup buckwheat flour
¼ cup coconut sugar
1 tablespoon ground cinnamon
1 pinch cream of tartar
1 pinch baking soda

1 teaspoon agave nectar
3 eggs, lightly beaten

Steps:

  • Place raisins into a bowl and cover with lukewarm water. Set aside to soak.
  • Line a loaf pan with parchment paper. Whisk gluten-free bread flour, buckwheat flour, coconut sugar, cinnamon, cream of tartar, and baking soda together in a bowl.
  • Combine milk, sourdough starter, and agave in the bowl of a stand mixer. Start mixer on low and add flour mixture 1 tablespoon at a time until well combined. Add eggs and vanilla extract and mix until well incorporated. Drain raisins and fold into the batter.
  • Pour the batter into the prepared loaf pan. Smooth out the top using a wet rubber scraper. Loosely cover the pan with plastic wrap and let rise until almost doubled in size, about 2 hours. Cover with foil.

Steps:

  • Stir 3 cups flour, sugar, cinnamon, salt, and yeast together in a large bowl. Pour in water and stir until all the flour has been incorporated and a shaggy, wet dough forms. Stir in raisins and cover with plastic wrap.
  • Place bowl in a warm, draft-free space for 30 minutes or in the oven with the oven light on.

  • Bake in the preheated oven for 30 minutes. Uncover and bake for 5 minutes more. Remove from oven and carefully transfer bread onto a wire rack. Remove parchment paper. Cool completely before slicing, about 2 hours.
