Boozy pineapple chunks mingle with muddled lime and fresh mint for a refreshing white wine sangria that's sure to be the hit of the party.

3 medium limes (thinly sliced)
Small bunch peppermint (leaves stripped (about 30 peppermint leaves))
1/3 cup granulated sugar
1 small fresh pineapple (peeled, cored, and cut into 1 to 2-inch chunks (about 2 cups diced))
750 ml bottle white wine (on the dryer side is best - I like Sauvignon Blanc or Pinot Grigio)
1/2 cup white rum
3/4 cup pineapple juice
4 cups lemon lime soda
Additional peppermint leaves and pineapple wedges for garnish

Steps:

Instructions
In a heavy pitcher, muddle together the lime slices, peppermint leaves, and sugar. You can use a muddler made specifically for the purpose or a sturdy wooden spoon.
Add the pineapple, then pour the wine, rum, and pineapple juice over the top.
Cover and place in the refrigerator for 4 - 5 hours.
Remove from refrigerator and add the lemon lime soda. Add ice and a few chunks of the pineapple to your glass and pour sangria over. Garnish with additional mint leaves and pineapple wedge if desired. Serve (with a straw, if you like).

1 (750 milliliter) bottle rose wine
1 cup pineapple juice
½ cup vodka
¼ cup triple sec
½ cup simple syrup
1 orange, sliced into rounds
1 lemon, sliced into rounds
1 lime, sliced into rounds
1 (6 ounce) container fresh raspberries

Steps:

Combine wine, pineapple juice, vodka, triple sec, and simple syrup in a large bowl or pitcher. Refrigerate until chilled, about 1 hour.
Stir the oranges, lemons, limes, and raspberries into the chilled sangria at least 30 minutes before serving. The longer the fruit marinates the better. Serve over ice.

This recipe comes from Eben Freeman, bartender of Tailor Restaurant in New York City. Though sangria is typically made in larger batches, Freeman demonstrates that it can also be concocted right in the glass for a single serving. When it comes to ingredients, he eschews the fancy add-ons found in many recipes, instead sticking to a simple formula of Spanish wine (ideally a young Rioja), Spanish brandy, and lemon juice. If you prefer, sugar can be added to taste, and different light red wines, citrus juices, and brandies substituted.

1 tablespoon (1/2 ounce) brandy
1 tablespoon (1/2 ounce) orange liqueur, such as Triple Sec
2 tablespoons (1 ounce) freshly squeezed orange juice
1/2 teaspoon fresh lemon juice
7 tablespoons (3 1/2 ounces) light-bodied red wine, such as Rioja
1 cup ice cubes
2 tablespoons (1 ounce) club soda
1 teaspoon sugar (optional)
1 apple slice
1 orange slice

Steps:

In large wine glass, stir together brandy, orange liqueur, orange juice, lemon juice, and wine. Add ice, top with club soda, and stir briefly. Taste and stir in sugar, if desired. Tuck apple and orange slices into top of glass and serve immediately.

Wash and slice the fruit to your liking. I recommend slicing the grapes in half, and other fruits into cubes or thin slices.
Place all the fruit into a large bowl and cover with the sugar. Stir gently. Leave to macerate for at least five minutes, but longer if you have the time (overnight would be perfect). Stir again if needed until almost all of the sugar is dissolved.
Add this entire mixture to a large pitcher filled 3/4 of the way with your white wine. Mix together gently with a wooden spoon.
