SPANISH SALSA WITH CRISPY FRENCH BREAD



Spanish Salsa with Crispy French Bread image

Guests will say "Olé!" to this delightful appetizer. You'll applaud its ease of preparation.

32 very thin diagonal slices French bread
Cooking spray
1 cup finely chopped fresh mushrooms
1 tablespoon chopped fresh parsley
1 tablespoon balsamic or red wine vinegar
2 teaspoons dried basil leaves
1/4 teaspoon salt
6 plum (Roma) tomatoes, finely chopped
2 medium green onions, sliced (2 tablespoons)
1 jar (6 oz) marinated artichoke hearts, drained, finely chopped
1 can (4 1/4 oz) chopped ripe olives, drained

Steps:

  • Heat oven to 325°F. Line cookie sheet with foil. Place bread slices on cookie sheet; spray lightly with cooking spray. Bake 7 to 10 minutes or until very crisp. Place bread slices on cooling rack; cool completely.
  • Meanwhile, in decorative bowl, mix salsa ingredients. Let stand at room temperature 20 minutes to blend flavors, or refrigerate until serving time. Serve salsa with crispy bread slices.

1 can (16.3 oz.) refrigerated biscuits (8 biscuits), quartered
3 Tbsp. butter, melted
1/2 cup KRAFT Grated Parmesan Cheese
1-1/2 cups KRAFT Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA
1/8 tsp. dried cayenne chili pepper
1-1/2 cups TACO BELL® Thick & Chunky Salsa

Steps:

  • Heat oven to 350ºF.
  • Cover bottom of 8x4-inch loaf pan with parchment; spray pan and paper with cooking spray.
  • Toss biscuit pieces with butter in large bowl. Add grated cheese, then shredded cheese and pepper, mixing lightly after each addition. Place in prepared pan.
  • Bake 35 to 40 min. or until golden brown. Run knife or spatula around sides of pan to loosen bread; cool 5 min. Remove bread from pan to heatproof platter or cutting board. Serve warm with salsa for dipping.

This is from a company-wide cookbook from a place I used to work. There is a note that it is great toasted. This can be made in a bread machine, or the "old fashioned" way. The cook time listed isn't accurate, should depend on your bread machine.

1 cup chunky salsa
1/3 cup water
1 tablespoon vegetable oil
1 dash hot pepper sauce
3 cups bread flour
1 tablespoon sugar
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon ground red pepper
2 teaspoons dry yeast

Steps:

  • Add ingredients to bread machine according to manufacturers directions. Select the basic white cycle and desired color setting.

1 loaf french 9-grain bread, sliced in half
1/4 cup extra virgin olive oil
1 teaspoon ground cumin
1 teaspoon garlic powder
1 (16 ounce) jar mild salsa (or medium or hot salsa to taste)
1 1/2 cups shredded Mexican blend cheese (4 cheese blend)
1/2 cup shredded parmesan cheese or 1/2 cup queso fresco
2 avocados, diced
1 1/2 teaspoons fresh lime juice
2 teaspoons fresh cilantro, finely snipped
2 teaspoons scallions, finely chopped
1 teaspoon finely chopped garlic
1/4 teaspoon celery salt
salt

Steps:

  • Preheat oven to 425°F.
  • Lay sliced French bread cut side up onto a baking sheet.
  • In a small bowl combine oil, cumin, and garlic powder; stir.
  • Brush the seasoned oil mixture onto the cut side of both bread halves with a pastry brush. Spread salsa evenly on top of bread halves. Sprinkle the halves with the Mexican cheese and top with crumbled Parmesan cheese or queso fresco cheese. Place into 425*F. oven.
  • Bake 8 to 12 minutes, or until cheese is melted and bread is good and crusty.
  • While the bread is baking, prepare the relish.
  • In a medium size bowl, mix avocados, lime juice, cilantro, scallions, garlic, celery salt, and salt to taste. Set aside.
  • Remove the bread from the oven. Allow to cool a few minutes.
  • Using a serrated knife, slice bread halves across into 2 inch strips.
  • To serve put salsa bread strips on a nice plate or platter with avocado relish in a separate bowl. Enjoy!

½ cup salsa
½ cup Italian seasoned bread crumbs
½ cup shredded Cheddar cheese
1 egg, lightly beaten
3 cloves garlic, minced
dried parsley to taste
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix the ground sirloin, salsa, bread crumbs, cheese, egg, and garlic. Season with parsley, salt, and pepper. Transfer to a 5x9 inch loaf pan.
  • Bake 45 minutes in the preheated oven, or to a minimum internal temperature of 160 degrees F (72 degrees C).
