SALMON WITH ESCAROLE AND WILD RICE SALAD

3/4 cup quick-cooking wild rice mix
1/2 large head escarole, shredded
1/2 small red onion, sliced
1/2 cup chopped fresh parsley
1/4 cup sliced sun-dried tomatoes (not oil-packed; about 8)
1/4 cup roasted salted pistachios, roughly chopped
2 tablespoons lemon juice, plus lemon wedges for serving
2 tablespoons plus 2 teaspoons extra-virgin olive oil
Kosher salt and freshly ground pepper
2 ounces herbed goat cheese, crumbled (about 1/2 cup)
4 skin-on salmon fillets (about 4 ounces each)

Steps:

  • Cook the wild rice mix as the label directs. Fluff and set aside.
  • Toss the escarole with the red onion, parsley, sun-dried tomatoes, pistachios, lemon juice and 2 tablespoons olive oil in a large bowl. Add the warm rice, season with salt and pepper and toss again. Divide among plates and top with the goat cheese.
  • Heat the remaining 2 teaspoons olive oil in a large nonstick skillet over medium-high heat. Season the salmon with salt and pepper and add skin-side down to the pan. Cook until the salmon skin is crisp, about 4 minutes. Flip and cook until the salmon is just cooked through, about 2 more minutes.
  • Top each salad with a salmon fillet, skin-side up. Serve with lemon wedges.

2 tablespoons soy sauce
4 teaspoons honey
2 oranges, peeled, flesh cut into segments, and juice squeezed from membranes (about 3 tablespoons)
Coarse salt and ground pepper
1 teaspoon rice vinegar
1 tablespoon vegetable oil
4 salmon fillets (about 6 ounces each)
1 bunch watercress (about 3/4 pound), thick ends trimmed
1/2 small red onion, thinly sliced

Steps:

  • In a small bowl, whisk together soy sauce, 3 teaspoons honey, and orange juice; season glaze with salt and pepper. In a large bowl, whisk together 1 tablespoon glaze, 1 teaspoon honey, vinegar, and oil; set dressing aside.
  • Heat broiler, with rack 4 inches from heat. Line a rimmed baking sheet with foil. Season salmon with salt and pepper and broil 5 minutes. Remove fish from oven, brush with glaze, then broil until opaque throughout, about 2 minutes, brushing with glaze once more.
  • Add orange segments, watercress, and onion to dressing and toss to combine. Season with salt and pepper. Divide salad among four plates and top with salmon. Serve immediately.

1 cup jasmine or basmati rice
Coarse salt
5 scallions, one whole and 4 finely chopped
1/4 cup chopped fresh parsley leaves
1/4 teaspoon peppercorns
1/2 pound fresh wild salmon
1/4 cup pine nuts, lightly toasted
1/4 cup golden raisins
1 tablespoon freshly grated lime zest
2 tablespoons fresh lime juice
3 tablespoons extra-virgin olive oil
Freshly ground black pepper
1/2 cup fresh mint leaves, cut in fine strips

Steps:

  • Place the rice in a pot with 1 1/2 cups water and 1/2 teaspoon salt. Bring to a boil over high heat, cover, and reduce the heat to a simmer for 20 minutes, or until the rice has absorbed all the liquid. Spread out the cooked rice on a rimmed baking sheet and chill.
  • Meanwhile, in a shallow saute pan, place 1 cup water, the whole scallion, parsley, and peppercorns and bring to a simmer. Sprinkle the fish with salt and place in the pan. Cover and poach for 5 to 9 minutes, until just cooked through. Remove the salmon and peel off and discard the skin while still hot. Chill the salmon.
  • Place the pine nuts, raisins, chopped scallions, lime zest and juice, and olive oil in a large bowl, season with salt and freshly ground black pepper, and toss to combine. Flake the salmon into the bowl and add the rice. Stir to combine. Let sit for a short while to allow the flavors to blend. Garnish with mint.

ZINGY SALMON & BROWN RICE SALAD

200g frozen soya beans , defrosted
2 salmon fillets
1 cucumber , diced
small bunch spring onions , sliced
small bunch coriander , roughly chopped
zest and juice 1 lime
1 red chilli , diced, deseeded if you like
4 tsp light soy sauce

Steps:

  • Cook the rice following pack instructions and 3 mins before it's done, add the soya beans. Drain and cool under cold running water.
  • Meanwhile, put the salmon on a plate, then microwave on High for 3 mins or until cooked through. Allow to cool slightly, remove the skin with a fork, then flake.
  • Gently fold the cucumber, spring onions, coriander and salmon into the rice and beans. In a separate bowl, mix the lime zest and juice, chilli and soy, then pour over the rice before serving.

1 1/2 cups wild rice
3 cups chicken broth or 3 cups vegetable broth
3 tablespoons fresh grated orange zest
2 tablespoons orange juice
1 teaspoon sea salt
1 tablespoon unsalted butter
1/2 cup chopped pecans
1/2 cup chopped green onion
1/2 cup dried cranberries
1/2 cup chopped fresh Italian parsley
2 cups fresh orange juice
1 whole star anise
1 teaspoon sea salt
1/2 cup olive oil
2 garlic cloves
1/2 teaspoon ground cumin
4 (6 ounce) salmon fillets

Steps:

  • Prepare the rice. Rinse the rice in a strainer under cold water. In a sauce pan, combine the rice, broth, zest, juice, salt, and butter. Cover and cook on high 30 to 45 minutes, or until tender. Stir in rest of ingredients and set aside.
  • Prepare the salmon. Place orange juice and anise into a sauce pan. Heat to boiling and continue to cook until reduced to 1-1/2 cups. Let cool to room temperature and remove anise.
  • In a blender add the cooked orange juice, salt, oil, garlic, and cumin. Blend for 30 seconds.
  • Pour half the mixture into a plastic bag and add the salmon. Squeeze out the air as you seal the bag. Marinate the salmon in refrigerator about 30 minutes to 1 hour.
  • Preheat a non-stick frying pan on high and cook the salmon for 3 minutes. Turn the fillets over carefully and reduce the heat to medium and cook for another 3 to 4 minutes.
  • Serve with the rice and pour remaining half of orange juice mixture over the salmon.

500 g salmon
100 ml oil
2 lemons
500 g rice
250 g green beans
1 tablespoon mustard
1/2 cucumber
15 g dill

Steps:

  • Preheat the oven to gas 6, 200C, fan 180°C Put the salmon on a large piece of foil, drizzle with 1tbsp of oil, a squeeze of lemon and season. Fold up the sides of the foil to make a sealed parcel. Put on a baking sheet and roast in the oven for 20 minutes, until the fish is cooked through.
  • Meanwhile, cook the rice following the pack instructions. Drain and leave to cool. Bring a pan of water to the boil, add the beans, and blanch for 3 minutes, then drain and refresh in cold water.
  • Make a dressing by mixing together the remaining oil, lemon juice, mustard, and most of the dill, in a jug. Put the rice, beans, and cucumber in a bowl and pour over the dressing. Flake the salmon and toss through the rice, reserving a little extra to serve. Serve topped with the remaining salmon and dill.

1 banana shallot , halved - one half thinly sliced, the other finely chopped
220g pack salmon trout or salmon fillets , skinned
1 tbsp chopped dill , plus 2 sprigs
1 ½ tbsp white wine vinegar
250g new potatoes , sliced
140g trimmed green beans , halved
1 tbsp extra virgin rapeseed oil
1 tsp wholegrain mustard
small handful watercress , finely chopped

Steps:

  • Heat oven to 200C/180C fan/gas 6. Take a square of foil and arrange the sliced shallots in the centre. Put the fish fillets on top, add 2 sprigs of dill and ½ tbsp of the vinegar. Close the foil, sealing it to make a parcel, and place on a baking tray. Put in the oven for 12 mins.
  • Steam the potatoes for 6 mins. Add the beans and cook for 5 mins more. Put the remaining vinegar in a bowl with the oil, mustard, watercress, and most of the chopped dill and shallot, and mix well. Add the warm beans and potatoes, and gently toss together. Serve with the cooked fish, pouring over the juice from the parcel, and scatter over the remaining dill.

6 tbsp olive oil
1 tbsp Dijon mustard
2 tbsp white wine vinegar
1 small finely diced red onion
1 crushed garlic clove
2 tbsp capers
1 pack chives , snipped
2 x 213g cans salmon , flaked into bite-size pieces
handful watercress

Steps:

  • Boil 600g baby new potatoes for 15-20 mins. Cool, then halve. Mix together 6 tbsp olive oil, 1 tbsp Dijon mustard, 2 tbsp white wine vinegar, 1 small finely diced red onion, 1 crushed garlic clove, 2 tbsp capers and 1 pack chives, snipped.
  • Mix potatoes and 2 x 213g cans salmon, flaked into bite-size pieces, with handful watercress. Drizzle over dressing.

  • Make the dressing by whisking the ingredients together well, and set it aside. Make the dressing in advance (preferably an hour or more, but at least as soon as you start cooking your rice) in order to give the garlic and ginger time to bloom.
  • Rinse the rice in a mesh colander and then cook it in a rice cooker, according to your manufacturer’s instructions and the volumes given above. Alternatively, you can cook it on the stove. Pour 1 1/2 cups of water into a pot and bring it a boil over high heat. Rinse the rice, then add it to the pan. Reduce heat to a simmer, cover and let it cook until all water is absorbed (35-40 minutes). If it gets too dry, add a splash or more of water as necessary. Fluff with a fork and allow to cool for 10 minutes.
  • Cook the edamame. Bring a pot of water to a boil and pour in frozen edamame. Reduce heat to a simmer and cook until the edamame is warmed through, about 4 to 5 minutes. Drain, and set the edamame aside to cool.
  • Toss all of the prepared produce in a big bowl. Once the edamame and rice have cooled, add them to the bowl and toss. Whisk your dressing one more time and pour into the bowl, and toss well. Serve at room temperature or chilled.
