ROASTED SALMON WITH WHITE WINE AND LEMON BUTTER SAUCE

Roasted Salmon With White Wine and Lemon Butter Sauce image

Individual portions of salmon are roasted in the oven and then served with a buttery and refreshing white wine and lemon butter sauce. The aromatic sauce has both creamy and acidic notes in it, complementing the fish so well.

Time 25m

Yield 4

Number Of Ingredients 9

4 portions of salmon fillets
1 1/2 Tablespoons oil
salt and ground black pepper
1 shallot (minced)
1 garlic clove (minced)
1 cup dry white wine (I like Sauvignon Blanc)
juice from 1 lemon
6 1/2 Tablespoons butter (cut into 1 Tablespoon chunks)
1 Tablespoon fresh parsley (minced)

Steps:

  • Preheat the oven to 500 degrees. Place a rimmed baking sheet into the oven to heat up.
  • Meanwhile, season each fillet with salt and ground black pepper and rub each fillet with oil all over.
  • When the oven has preheated to 500 degrees and the baking sheet has been in the oven for about 10 minutes, take out the baking sheet and place the salmon, skin side down, onto the searingly hot baking sheet. You will hear it sizzle and the skin will start to sear right away.
  • Place the fish in the preheated oven. Reduce the heat to 250 degrees and roast the fish for 15 minutes.
  • While the fish is in the oven, melt 1/2 Tablespoon of butter in a skillet on medium high heat. Add the shallot and garlic clove. Season with salt and pepper. Cook them until the shallots are tender and start to turn golden.
  • Deglaze the skillet with the white wine and then add the lemon juice.
  • Turn the heat up to high and reduce the liquid until it has reduced to half the amount.
  • Turn off the heat and whisk in the butter, one Tablespoon at a time. The sauce will become thick and velvety. Add the parsley to the sauce.
  • Spoon the sauce over the roasted fish and serve.

SALMON WELLINGTON WITH WHITE WINE BUTTER SAUCE

Salmon Wellington With White Wine Butter Sauce image

I am a fan of puff pastry and I really enjoy stuffing it with all sorts of things and salmon is one of them. I halved this recipe as it is just me and my hubby and believe me, it was plenty, we could only eat one.

Provided by Jo Zimny @EmilyJo

Categories     Fish

Number Of Ingredients 9

1 - 17.3 oz. package pepperidge farm puff pastry (both sheets-thawed)
4 - 3/4 inch thick salmon fillet
6 tablespoon(s) minced shallots
4 tablespoon(s) plus 2 teaspoons chopped fresh tarragon
1 medium egg, beaten (for the glaze)
FOR THE SAUCE
1/2 cup(s) dry white wine
1/2 cup(s) white wine vinegar
1/2 cup(s) chilled butter, diced (1 stick)

Steps:

  • Preheat your oven to 425'F. Roll out each pastry sheet on a lightly floured surface to a 12 inch square.
  • Thaw the puff pastry for about 36 minutes. Cut each in half, forming four 12x6 inch rectangles.
  • Place one salmon fillet in the center of each of the rectangles, about 3 inches in from and parallel to one short edge.
  • Sprinkle each fillet with sea salt and fresh cracked black pepper and 1 tablespoon of shallots and 1 tablespoon of tarragon.
  • Brush edges of each rectangle with the egg glaze. Fold the long sides of pastry, enclosing the fillets. Seal the edges of the pastry. Place them seam side down on baking sheet. Brush with glaze. Do not use tin foil, it will stick.
  • Bake the Wellingtons until the dough is golden brown, about 20 minutes. Remove from the oven and let stand for 10 more minutes.
  • Meanwhile make the sauce. Boil the wine, vinegar and 2 tbsp. of shallots in a heavy saucepan until the liquid is reduced to 6 tablespoons, about 8 minutes.
  • Remove the pan from the heat and add the butter, one piece at a time, whisking until each piece melts before adding the next. Whisk in 2 teaspoons of fresh chopped tarragon. Season with salt and pepper.
  • Cut into 3rds. Place sauce over pastry and serve hot.
  • Enjoy!

PAN SEARED SALMON WITH WHITE WINE BUTTER SAUCE RECIPE BY TASTY

Pan Seared Salmon With White Wine Butter Sauce Recipe by Tasty image

Here's what you need: fresh Atlantic salmon, salt and pepper, extra virgin olive oil, unsalted butter, shallots, garlic, large lemon, caper, italian parsley, rainbow tomatoes, dry white wine, fresh baby spinach

Provided by Sarah Mahilum

Categories     Lunch

Time 30m

Yield 4 servings

Number Of Ingredients 12

1 ½ lb fresh Atlantic salmon, skin-on
salt and pepper, for seasoning
2 tablespoons extra virgin olive oil
8 tablespoons unsalted butter
2 shallots, diced
5 cloves garlic, minced
1 large lemon, halved, leave one half as is and slice the other half
2 tablespoons caper
1 bunch italian parsley, finely chopped
16 oz rainbow tomatoes, halved
8 oz dry white wine
2 cups fresh baby spinach

Steps:

  • First prepare the salmon by seasoning the fleshy side with salt and pepper. Then, set aside.
  • Next, heat your cast iron pan on the stove on a medium heat. Once your cast iron or pan is heated, add in the olive oil and 4 tbsp of butter.
  • When the butter has melted, place your salmon into the pan - skin side down first. DO NOT touch or move the salmon around. Leaving the salmon alone will allow the skin to cook and become crispy.
  • After about 3 minutes, use your turner to check if the salmon separates from the pan without resistance. If it doesn't, continue to let it cook for another 2 minutes. If you're able to slide and lift the salmon from the pan with nothing sticking, it's time to flip.
  • Continue to cook the salmon, flesh side down now, for an additional 3-5 minutes - or until you reach an internal temp of about 140°F. Fahrenheit.
  • Remove the salmon from the pan and place onto a serving dish. Next, reduce heat to medium and add shallots and garlic. Saute until fragrant and to this, add the juice from half of a lemon.
  • Add in capers, parsley, tomatoes, and white wine and mix well to combine.
  • Add remaining 4 tbsp butter and mix. Then lower heat and simmer for 5-10 minutes.
  • Add spinach and cook until spinach is slightly wilted. Season with salt and pepper to taste.
  • Finally, plate salmon and garnish with lemon slices. Top with sauce and veggies. Serve.

Salmon Wellington image

Elegant puff pastry is wrapped around a well-seasoned salmon.

Provided by Valerie Roman

Categories     Main Dish Recipes     Seafood Main Dish Recipes     Salmon     Baked Salmon Recipes

Time 1h15m

Yield 8

Number Of Ingredients 12

1 tablespoon kosher salt
1 ½ pounds salmon fillets
1 teaspoon chopped fresh thyme
1 teaspoon dried oregano
1 teaspoon chopped fresh basil leaves
2 teaspoons dried dill weed
½ cup Dijon mustard
1 ½ cups mayonnaise
¾ cup crumbled feta cheese
1 cup frozen chopped spinach, thawed and drained
1 (17.5 ounce) package frozen puff pastry, thawed
1 egg white, beaten

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Sprinkle salt on both sides of the salmon. Mix the thyme, oregano, basil, dill, mustard, and mayonnaise in a small bowl and spread over the salmon, then sprinkle the feta cheese on top. Layer the spinach over the feta cheese.
  • Roll the pastry out wide enough and long enough to wrap around the salmon, about 1/4 inch thickness. Place the salmon in the center of the pastry and fold the pastry over the salmon. Place the roll seam-side down on a baking sheet. Cut several small slits in the pastry to allow steam to escape. Brush the egg white onto the pastry.
  • Bake in the preheated oven until the pastry is golden brown and the salmon flakes easily with a fork, about 45 minutes.
