Roast Salmon With Balsamic Vinegar image

These simple and few ingredients make for quick but elegant entertaining. The final broiling caramelizes the sugar to give the salmon its attractive, mildly sweet glaze.

2 tablespoons packed brown sugar
2 tablespoons balsamic vinegar
1 tablespoon olive oil
¼ teaspoon dried rosemary
1 clove garlic, minced
¼ teaspoon ground black pepper
1 ½ pounds salmon fillets
½ teaspoon salt

Steps:

  • Whisk together the brown sugar, balsamic vinegar, olive oil, rosemary, garlic, and pepper in a large bowl. Reserve 1 tablespoon of marinade in a small bowl, and set aside. Add the salmon and toss to evenly coat. Cover the bowl with plastic wrap, and marinate in the refrigerator for 30 minutes. Remove the salmon from the marinade, and shake off excess. Place salmon in an aluminum foil-lined baking dish, and sprinkle with salt.
  • Preheat an oven to 450 degrees F (230 degrees C).
  • Roast in the preheated oven until the fish is easily flaked with a fork, about 10 minutes. Brush salmon with the reserved marinade, and return to the oven. Roast until glazed, about 1 minute.

A delicious use of some of my favorite things - bacon and salmon! The salmon stays really moist from the bacon, and the skin helps protect the bottom from cooking prematurely.

4 (4 ounce) skin-on salmon fillets
1 teaspoon garlic powder
1 teaspoon dried dill weed
salt and pepper to taste
½ pound bacon, cut in half

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a baking sheet liberally with olive oil.
  • Place the salmon fillets onto the baking sheet skin-side-down. Sprinkle the fillets with garlic powder, dill, salt, and pepper. Lay the bacon strips over the fillets to cover completely. Do not overlap the bacon strips.
  • Bake in the preheated oven until the salmon is no longer translucent in the center, 20 to 25 minutes. Turn the oven on to broil and cook until the bacon has crisped, 1 to 2 minutes.

I found this recipe in a Fine Cooking magazine and it was suprizingly easy to make and my family now thinks I'm a real chef. And I have to add who doesn't love bacon.

1/4 cup balsamic vinegar
1 tablespoon honey
1/2 teaspoon fresh rosemary, finely chopped
1 tablespoon water
2 slices bacon
4 salmon fillets, 6-oz skin-on, scaled, center cut
1/2 teaspoon salt & freshly ground black pepper

Steps:

  • In a liquid measuring cup, combine the balsamic vinegar, honey, rosemary, and 2 tbs water.
  • Cut the bacon slices in half.
  • Lay a slice of bacon on the flesh side of each piece of salmon and arrangle he salmon, bacon side down, in a 12 inch heavy-duty nonstick skillet.
  • Sprinkle the salmon skin with salt and pepper.
  • Set the skillet over medium-high heat and cook until the bacon is glden and crisp about 4 to 5 minutes from when it begins to sizzle.
  • Turn the salmon and continue to cook until the skin is crisp and the salmon is cooked through, 4 to 5 minutes.
  • Take skillet off heat and transfer the salmon to a platter.
  • Pour off the fat and return to medium-high heat.
  • Stir the vinegar mixture well and add it to the skillet.
  • Simmer until slightly thickened, 1 to 2 minutes. Pour over salmon and serve.

sea salt to taste
1 tablespoon balsamic vinegar
3 tablespoons olive oil
¼ cup lemon juice
1 clove garlic, minced
1 sprig fresh rosemary, minced

Steps:

  • Season salmon fillets to taste with sea salt, and place into a shallow, glass dish. Whisk together vinegar, olive oil, lemon juice, garlic, and rosemary; pour over salmon fillets. Cover, and refrigerate at least 30 minutes.
  • Preheat an outdoor grill for medium-high heat, and lightly oil grate.

6 (5 ounce) salmon fillets
4 cloves garlic, minced
1 tablespoon white wine
1 tablespoon honey
⅓ cup balsamic vinegar
4 teaspoons Dijon mustard
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil, and spray with non-stick cooking spray.
  • Coat a small saucepan with non-stick cooking spray. Over medium heat, cook and stir garlic until soft, about 3 minutes. Mix in white wine, honey, balsamic vinegar, mustard, and salt and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened.
  • Arrange salmon fillets on foil-lined baking sheet. Brush fillets with balsamic glaze, and sprinkle with oregano.
  • Bake in preheated oven for 10 to 14 minutes, or until flesh flakes easily with a fork. Brush fillets with remaining glaze, and season with salt and pepper. Use a spatula to transfer fillets to serving platter, leaving the skin behind on the foil.

1/4 cup water
1 1/2 tablespoons fresh lemon juice
4 teaspoons packed light brown sugar
4 (6-ounce) center-cut salmon fillets
2 teaspoons vegetable oil

Steps:

  • Stir together vinegar, water, lemon juice, and brown sugar.
  • Pat salmon dry and season with salt and pepper.
  • Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking. Increase heat to high and sear salmon, skin sides up, until well browned, about 4 minutes. Turn fish over and sear until just cooked through, 3 to 4 minutes more.
  • Transfer salmon to plates and carefully add vinegar mixture to skillet (liquid will bubble vigorously and steam). Simmer, stirring, until thickened and reduced to about 1/3 cup, about 2 minutes.
  • Spoon glaze over salmon.
