This was last night's dinner......something a little different with salmon. I just love these packages of salmon....when fresh isn't available. No muss no fuss....and no waste!

3 - 5 ounce packages of salmon
6 cloves of roasted garlic smashed
1 small onion minced fine
2 large eggs + 1 egg yolk
2 tablespoons fresh ground pepper
1 cup panko bread crumbs
zest from 1 lemon
1 tablespoon fresh squeezed lemon juice
hot sauce for the top "optional "

Steps:

  • 1. Empty salmon into a bowl, add the eggs and pepper.
  • 2. Mince the onion fine, and smash the garlic.
  • 3. Mix the salmon, eggs, pepper, onion, garlic and add Panko. Form into a "meat loaf" style loaf.
  • 4. Top with hot sauce " optional "
  • 5. Bake 375 for about 1 hour or till golden brown " times may vary depending on your oven".

2 lb salmon fillet
Kosher salt
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
1/2 lemon, sliced into rounds
Parsley for garnish
Zest of 1 large lemon
Juice of 2 lemons
3 tbsp extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
5 garlic cloves, chopped
2 tsp dry oregano
1 tsp sweet paprika
1/2 tsp black pepper

Steps:

  • Heat oven to 375 degrees F.
  • Make the lemon-garlic sauce. In a small bowl or measuring cup, mix together the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano, paprika and black pepper. Give the sauce a good whisk.
  • Prepare a sheet pan lined with a large piece of foil (should be large enough to fold over salmon). Brush top of the foil with extra virgin olive oil.
  • Now, pat salmon dry and season well on both sides with kosher salt. Place it on the foiled sheetpan. Top with lemon garlic sauce (make sure to spread the sauce evenly.)
  • Fold foil over the salmon (seam-side up). Bake for 15 to 20 minutes until salmon is almost completely cooked through at the thickest part (cooking time will vary based on the thickness of your fish. If your salmon is thinner, check several minutes early to ensure your salmon does not overcook. If your piece is very thick, 1 1/2 or more inches, it may take a bit longer.)
  • Carefully remove from oven and open foil to uncover the top of the salmon. Place under the broiler briefly, about 3 minutes or so. Watch closely as it broils to make sure it doesn't overcook and the garlic does not burn.)

2 medium heads garlic, broken into separate cloves, peeled
1/2 cup (about) olive oil
3 tablespoons unsalted butter
8 6- to 7-ounce salmon fillets
4 teaspoons fresh lemon juice
4 teaspoons chopped fresh rosemary

Steps:

  • Preheat oven to 400°F. Place garlic in ramekin. Pour enough oil over to cover. Wrap ramekin in double thickness of foil. Bake until garlic is very tender, about 35 minutes. Using slotted spoon, transfer garlic and 1 tablespoon cooking oil to food processor. Add butter to processor; puree. Season with salt and pepper.
  • Preheat oven to 450°F. Place salmon on baking sheet. Season with salt and pepper. Drizzle each fillet with 1/2 teaspoon lemon juice, then spread 1 tablespoon garlic puree over each. (Can be made 1 day ahead; chill.)
  • Bake salmon uncovered until just cooked through, about 15 minutes. Sprinkle rosemary over and serve.

2 whole garlic bulbs
4 teaspoons olive oil, divided
3 tablespoons butter
6 salmon fillets (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
2 to 3 tablespoons lemon juice
1 teaspoon minced fresh parsley
1/4 teaspoon minced fresh rosemary

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off garlic bulbs. Brush with 1 teaspoon oil. Wrap each bulb in heavy-duty foil. , Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes. , Squeeze softened garlic into a food processor; add butter and remaining oil. Cover and process until blended; set aside. , Place salmon in a greased 15x10x1-in. baking pan. Sprinkle with salt and pepper; drizzle with lemon juice. Spoon 1 tablespoon garlic butter over each fillet. , Bake, uncovered, at 425° for 8-10 minutes or until fish flakes easily with a fork. Sprinkle with parsley and rosemary.

3/4 cup chopped celery
1/2 cup chopped onion
2 tablespoons canola oil
1 cup soft bread crumbs
1 large egg, lightly beaten
2 tablespoons 2% milk
1/4 teaspoon salt
1/4 teaspoon pepper
1 can (7-1/2 ounces) salmon, drained, bones and skin removed
DILL SAUCE:
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon lemon juice
1 tablespoon 2% milk
2 teaspoons snipped fresh dill
1/2 teaspoon sugar
1/8 teaspoon pepper

Steps:

  • In a small skillet, saute celery and onion in oil until tender. In a large bowl, combine the bread crumbs, egg, milk, salt, pepper and celery mixture. Crumble salmon over mixture and mix well. Transfer to a greased 5-3/4x3x2-in. loaf pan., Bake at 350° for 40-45 minutes or until a thermometer reads 160°. In a small bowl, combine the sauce ingredients. Serve with salmon loaf.

ROTINI WITH SALMON AND ROASTED GARLIC

This may seem like a lot of garlic, but because it's roasted it only contributes a mellow, nutty flavor that goes beautifully with the salmon. Capers and lemon zest add some brightness to the dish, which is a perfect light spring meal.

Yield 4 to 6 servings

Number Of Ingredients 11

2 whole heads of garlic
2 tablespoons olive oil
Salt and freshly ground black pepper
1 pound rotini or fusilli (corkscrew-shaped pasta)
1/2 cup Marsala or white wine
1 cup chicken broth
1 pound salmon, cut into 1-inch cubes
Zest and juice of 1 lemon
1 tablespoon minced fresh rosemary
2 tablespoons extra-virgin olive oil
2 tablespoons drained capers

Steps:

  • Preheat the oven to 400°F.
  • Cut the heads of garlic in half crosswise and place on a sheet of foil. Drizzle with the olive oil and season with salt and pepper. Fold the foil up and around the garlic, making sure it stays flat, and fold the edges to seal into a tight packet. Roast until soft, about 60 minutes. Let the garlic cool slightly, then squeeze the cloves out of the skin. Mash half of the roasted garlic cloves into a paste with the back of a fork. Set aside.
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain.
  • Meanwhile, combine the Marsala and chicken broth in a large, heavy skillet and bring to a simmer. Add the mashed roasted garlic and stir to dissolve. Simmer uncovered for 4 minutes, then add the salmon, cover, and simmer for 4 minutes longer. Remove from the heat and add the remaining whole roasted garlic cloves, the lemon zest and juice, rosemary, and the cooked pasta. Stir to combine; add the extra-virgin olive oil, capers, 1/2 teaspoon salt, and 1/2 teaspoon pepper and stir once more. Serve immediately.

  • Sprinkle with rosemary and serve.

WILD GARLIC-CRUSTED SALMON

A seasonal main course to serve over Easter that's just as good cold as it is hot from the oven. Wild garlic pairs beautifully with a side of salmon

1 side of salmon (about 1kg), skinned
lemon wedges, to serve
800g loaf of sliced white bread, crusts removed
1 garlic clove
50g wild garlic leaves
250g butter , melted
50g wild garlic leaves
8 salted anchovies
70ml extra virgin olive oil
1 lemon , zested and juiced
1 shallot , sliced
1 tsp small capers

Steps:

  • To make the crust, put the bread and garlic in a food processor and blend until you have a fine crumb, then add the wild garlic and blitz for 1 min. Once the leaves have broken down, pour in the melted butter and blend to a fine green dough. Lay one large sheet of baking parchment on your work surface, then tip the dough on top. Lay a second sheet on top and, using a rolling pin, roll the dough to the thickness of a £1 coin. Put in the fridge to firm up for about 1 hr.
  • Heat oven to 180C/160C fan/gas 3. Sprinkle the salmon with some salt and transfer to a baking sheet lined with baking parchment. Remove the crust from the fridge and cut to the same size as the salmon. Remove the parchment from either side of the crust and place on top of the fish. Roast for 20 mins or until the fish is just cooked through.
  • To make the salsa, put all the ingredients in a food processor and blend to a fine purée. Once the fish is cooked, remove from the oven and place on a board in the middle of the table, along with the salsa and a few lemon wedges.
