3 cups bottled clam juice
1 12-ounce salmon fillet
1 tablespoon butter, room temperature
1 tablespoon all purpose flour
4 bacon slices, chopped
2 medium leeks (white and pale green parts only), thinly sliced
1 large white-skinned potato, peeled, cut into 1/2-inch pieces
2 1/2 cups milk
1/2 cup whipping cream
2 tablespoons chopped fresh chives

Steps:

  • Bring clam juice to simmer in medium skillet. Add salmon; cover and simmer until cooked through, about 10 minutes. Transfer salmon to plate; reserve clam juice. Flake salmon into small pieces.
  • Mix butter and flour in small bowl until well blended. Cook bacon in heavy large saucepan over medium-low heat until crisp, about 5 minutes. Using slotted spoon, transfer bacon to paper towels. Add leeks to drippings in saucepan; sauté 3 minutes. Add potato and reserved clam juice and bring to boil. Reduce heat; cover and simmer until potato is tender, about 10 minutes. Add milk and bring to boil. Whisk in flour mixture. Reduce heat; cover and simmer until potato is tender, about 10 minutes. Add milk and bring to boil. Whisk in flour mixture. Reduce heat; simmer until soup thickens slightly, whisking frequently, about 3 minutes. Stir in cream, chives, salmon and bacon; simmer until heated through. Season with salt and pepper.

Leeky-Fish Chowder image

This is my fish chowder with leeks and corn. This recipe is kosher and is a dairy meal, so I used a vegetarian chicken-flavored stock. (The brand is Imagine "no-chicken" stock and can be found in the health food section of the grocery store). This is a great heavy chowder for cold rainy days. The ingredients are inexpensive and the whole thing is prepared in one pot, so there is very little cleanup! Enjoy!

2 lbs white fish fillets, cut into bite sized pieces
3 cups milk
2 leeks
1 (16 ounce) can corn
1/2 cup unsalted butter
4 -5 garlic cloves, minced
3 tablespoons flour
2 cups of no-chicken vegetable stock
4 russet potatoes, peeled and diced
salt and pepper

Steps:

  • Cut off the green parts of the leeks and throw them away. Dice the white parts of the leeks and rinse well in a colander, as they will be sandy.
  • Melt butter in the bottom of the soup pot and add the diced leeks. Saute until leeks are soft.
  • Add minced garlic.
  • Pour in the stock and bring to a boil.
  • Add the diced potatoes and let them cook in the boiling stock.
  • Add milk and stir.
  • Add fish.
  • Allow to cook at a low boil for about 10 minutes, until fish is no longer translucent.
  • Drain and add the can of corn.
  • Add flour to thicken, if desired.
  • Add salt and pepper.
  • Enjoy!

CREAMY SALMON, LEEK & POTATO TRAYBAKE



Creamy salmon, leek & potato traybake image

Nestle leeks, potato and capers around salmon fillets to make this easy traybake for two. It's great as an midweek meal, or for a more romantic occasion

250g baby potatoes , thickly sliced
2 tbsp olive oil
1 leek , halved, washed and sliced
1 garlic clove , crushed
70ml double cream
1 tbsp capers , plus extra to serve
1 tbsp chives , plus extra to serve
2 skinless salmon fillets
mixed rocket salad , to serve (optional)

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Bring a medium pan of water to the boil. Add the potatoes and cook for 8 mins. Drain and leave to steam-dry in a colander for a few minutes. Toss the potatoes with ½ of the oil and plenty of seasoning in a baking tray. Put in the oven for 20 mins, tossing halfway through the cooking time.
  • Meanwhile, heat the remaining oil in a frying pan over a medium heat. Add the leek and fry for 5 mins, or until beginning to soften. Stir through the garlic for 1 min, then add the cream, capers and 75ml hot water, then bring to the boil. Stir through the chives.
  • Heat the grill to high. Pour the creamy leek mixture over the potatoes, then sit the salmon fillets on top. Grill for 7-8 mins, or until just cooked through. Serve topped with extra chives and capers and a salad on the side, if you like.
