SALISBURY STEAK WITH MUSHROOM GRAVY
Recipe VIDEO above. Salisbury steak is a totally scrumptious way to transform the humble ground beef / mince into something amazing! The onion grating / soaking breadcrumbs will make your patties extra tasty and tender, and the Mushroom Gravy is made extra delicious by cooking the Salisbury Steaks IN the gravy!

Steps:
- Place breadcrumbs in a bowl. Use a box grater and grate the onion over the breadcrumbs. Mix with fingers, leave to soak for a few minutes.
- Add remaining Salisbury Steak ingredients into the large bowl. Use your hands to mix until just combined. Mix well for a couple of minutes until the mixture becomes a bit "pasty" which will ensure your patties hold together well.
- Divide into 5 and pat firmly into oval patties around 3/4" / 1 2/3 cm thick.
- Heat oil in a skillet over high heat. Add the steaks and cook the first side for 1 minute or until browned, then flip and brown the other side (they will still be raw inside). Remove onto plate.
- If skillet is looking dry, add a touch more oil. Add chopped onion and garlic and cook for 2 minute until onions are a bit translucent.
- Add the mushrooms into the skillet and cook for 2 - 3 minutes until golden.
- Turn heat down to medium. Add butter. Once melted, add flour and cook for 30 seconds, stirring constantly.
- Gradually add in beef broth, stirring as you go. Once mostly lump free, whisk in remaining Gravy ingredients.
- Add steaks along with the juices on the plate. Cook for 5 - 7 minutes, or until gravy is thickened, stirring occasionally around the steaks. If the gravy thickens too quickly, add more water.
- Remove steaks onto a plate. Taste gravy and adjust salt and pepper to taste.
- Serve salisbury steaks topped with the mushroom gravy - over mashed potato is ideal! Sprinkle with a bit of parsley if desired.

SALISBURY STEAK WITH ONION AND MUSHROOM GRAVY
Steps:
- In a medium size bowl, mix together ground beef, breadcrumbs, Parmesan cheese, chili sauce, steak sauce, egg, steak seasoning, garlic and onion powders. Mix until blended.
- Form into 4 large, 6 medium, or 8 small oval steaks. I use a spoon to roughly divide the mixture while it's still in the bowl.
- To cook: Drizzle a large skillet with a few drizzles of olive oil. Brown the steaks over medium-high heat on both sides, then remove from the pan. (It's not necessary to cook them all the way through at this point, just brown.)
- Reserve 2 tablespoons of drippings and discard the rest from the skillet. Add the sliced onion and mushrooms to the pan and cook over medium-high for 2-3 minutes scraping any brown bits from the bottom of the skillet.
- To make the gravy: Add 1/4 cup of flour and stir well coating the vegetables.
- To the skillet add broth, chili sauce and seasonings. Stir until blended and allow to bubble and thicken slightly for 2-3 minutes.
- Lower the heat to simmer and return the Salisbury steaks to the gravy.
- Cover and simmer for around 12-15 minutes or just until cooked through and no pink remains.
- Uncover and check the gravy for thickness. If it needs thickening, dissolve 1 tablespoon of all purpose flour in cold water, and add it to the gravy, stirring constantly. Continue this process until you reach your desired consistency.
- Serve immediately.

- In a medium mixing bowl, mix ground beef, onions, egg, bread crumbs, Worcestershire sauce, parsley, crushed red peppers and pepper together. Divide into equal amounts and shape into oval patties about 1/2 inch thick. Should get 5 or 6.
- Heat a cast iron pan or large frying pan over medium high heat and cooked each patty for about 4-5 minutes on each side.
- Once cooked on both sides, remove from the pan and place on a plate.
- Reduce heat to medium, add onions and garlic to the pan along with the steak drippings. Cook for 3-4 minutes. Stir in mushrooms and continue cooking for another few minutes.
- Sprinkle flour over the mushrooms and onions, stir and cook for another minute or so.
- Next, add beef broth, Worcestershire sauce, salt and pepper. Stir for a few minutes and place the Salisbury steaks back into the pan and cover with the gravy mixture.
- Cover pan and cook for about 20-30 minutes gently stirring occasionally. The gravy will also thicken up as it cools so make sure not to cook it too long or your gravy will be too thick. If that happens, just add a little more beef broth to thin it out.
- Serve over mashed potatoes with a delicious vegetable.
- Enjoy!
- *And if the gravy seems to thin, mix 1 tsp corn starch with 1/8 cup water, then add to pan, stir and let simmer for a few more minutes.

- Combine bread crumbs, onion, egg, parsley, Worcestershire sauce, and garlic in a large bowl. Stir well and add beef and pork. Mix gently and form 8 equal portions. Place patties on a plate, cover with plastic wrap, and refrigerate 1 hour. Remove from the refrigerator 30 minutes before cooking.
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil. Add patties in batches to avoid overcrowding the pot. Saute 2 minutes per side. Transfer cooked patties to a plate. Add onions to the pot and cook until brown, about 2 minutes. Add mushrooms and cook 2 minutes more.
- Pour wine into the pot and stir, scraping up all the brown bits from the bottom. Add broth, tomato paste, salt, and pepper; stir well. Return cooked patties and any accumulated liquid to the pot and turn to coat.
- Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.
- Combine 4 tablespoons broth and cornstarch in a bowl and stir until dissolved. Add mixture to the pot slowly, stirring constantly. Select Saute function; cook until thickened, about 5 minutes.

- In a large bowl, combine egg, 1/3 cup of soup, bread crumbs, salt and pepper. Add beef; mix gently. Shape into six oval patties. Brown in a skillet over medium heat for 3-4 minutes on each side. Remove and set aside; discard drippings. In the skillet, combine flour and water until smooth; add the ketchup, Worcestershire sauce, mustard and remaining soup; bring to a boil. - Combine ground beef, chopped onions, cracker crumbs, egg, horseradish, salt and pepper. Shape into patties.
- Heat 2 tablespoons butter in skillet.
- Cook patties till no longer pink inside - approx 8 minutes each side.
- In separate pan, melt 3 tablespoons butter. Sauté onion rings and mushrooms til tender.
- Remove patties from pan.
- Stir flour into pan, scraping bottom of pan. Add dash of salt and pepper. Cook 2 minutes. Stir in cream to form a thick paste.
- Slowly stir in chicken broth - stir till thick.
- Add a few dashes of Worcestershire sauce and hot sauce. Stir till mixed well.

- Saute half of chopped onion in 1 Tabsp hot oil in medium skillet over medium heat until tender. Add garlic, and saute 30 seconds. Remove from heat and let cool.
- Combine cooked onion mixture, beef, and next 4 ingredients, 1/4 teasp salt, and 1/2 teasp pepper. Shape into 6 patties.
- Cook patties in remaining 2 Tabsp. hot oil over medium-high heat 3 minutes on each side or until browned. (Do not cook until done). Remove patties and set aside.
- Add remaining onion to drippings in skillet, and saute over medium-high heat until tender; add mushrooms and saute 3 minutes. Whisk in flour, and cook, stirring constantly, 1 minute, whisk in wine, broth, and remaining 3/4 teasp salt and 1/2 teasp of pepper. Bring to a boil, reduce heat to low and simmer stirring occasionally, 5 minutes.
- Place patties in lightly greased baking dish, top evenly with gravy.
- Bake, covered, at 350 for 25 minutes or until done.

This is total comfort food at it's very best! ---to save time this may also be made using store bought frozen hamburger patties ---the yield amount for this is six if you like lots of gravy then increase amounts to 3 cups beef broth and 6-7 tablespoons flour --- this is a must served with mashed potatoes :)

- In a bowl combine all hamburger mixture until combined.
- Shape into 6 patties.
- Heat oil in a large skillet over medium-high heat.
- Add in hamburger patties, cook until browned on each side (about 3-4 minutes per side, the burgers do not have to be cooked all the way through as they will finish cooking completely in the gravy) remove to a plate.
- To the same skillet add in sliced onion and mushrooms; cook stirring scraping up any browned bits that have accumulated on the bottom of the skillet; cook for about 8-10 minutes or until the onions are softened (adding in more oil if needed).
- Add in flour and cayenne pepper; stir for 2 minutes.
- Add in beef broth, Worcestershire sauce and black pepper; bring to a simmer stirring continuously until bubbly and thickened (at this point you may add in the beef bouillon powder).
- Add in the patties back to the skillet.
- Reduce heat to low and simmer uncovered for about 25 minutes turning the patties over once halfway through cooking.

- Combine ground beef, bread crumbs, chopped onion, egg, salt, and black pepper in a bowl until evenly mixed. Shape beef mixture into 4 patties, about 3/4 inch thick.
