This is just a simple, tasty combination to make to go along with a cup of soup for an easy supper. If you can't find Havarti, Swiss cheese would be a good substitute.

1 cup deli Coleslaw
2 tablespoons fresh dill, chopped
2 hard poppy seed rolls
1 tablespoon Dijon mustard
4 slices salami (about 3 oz.)
4 slices havarti cheese (about 4 oz.)

Steps:

  • Drain cole slaw and stir in dill.
  • Split rolls. Spread mustard over top halves and spoon cole slaw on bottom halves.
  • Place salami and cheese on cole slaw on bottom halves. Place salami and cheese on cole slaw and cover with top halves of rolls.
  • Cut sandwiches in half and serve.

1 demi baguette
Thick slices of Camembert
Sliced deli salami
Thinly sliced tomato
Thinly sliced red onion
Thinly sliced green bell pepper
Shredded romaine lettuce
Sliced kalamata olives
Thinly sliced pickled peppers
Cornichons
Vinaigrette, recipe follows
3 tablespoons (45 grams) white wine vinegar
1 small to medium shallot, very finely chopped
1 tablespoon (15 grams) Dijon mustard
1/2 cup (100 grams) extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Slice open the baguette and place it on a baking sheet. Top one half with a layer of the Camembert and the other half with the salami (go for about 2 layers of salami-not too much, not too little). Bake until the bread is toasty and the cheese is melty, about 5 minutes.
  • Transfer to a serving plate and top with tomatoes, onions, bell pepper, a big pile of lettuce, olives, pickled peppers, cornichons and more cornichons, and drizzle liberally with the Vinaigrette. Sandwich together and enjoy!
  • In a large measuring cup, combine the vinegar and shallot and let it sit for a few minutes so the shallot can mellow out. Whisk in the mustard and then drizzle in the olive oil while whisking continuously so that it emulsifies. Season with salt and pepper.

This simple salami sandwich is perfect for those hot summer days when you don't want to fire up the oven. The olive mixture poses as a dressing for the lettuce and tomato but also soaks down in that top piece of bread so it's not dry.

1 hoagie bun, toasted and split
1 teaspoon yellow mustard
6 slice (3-1/8" dia x 1/16" thick)s salami
2 slices Colby-Jack cheese
2 slices tomato
1 leaf red leaf lettuce
2 teaspoons sliced ripe olives, drained
2 teaspoons sliced green olives with pimiento
2 teaspoons zesty Italian-style salad dressing

Steps:

  • Place bottom bun on a plate and spread mustard over the bun. Top with salami, cheese, tomato, and lettuce leaf.
  • Combine black olives, green olives, and salad dressing in a bowl. Place mixture on top of the lettuce. Top with remaining half of bun. Serve immediately.

Here's a fun alternative to plain old white bread: all the typical sandwich fixings -- cold cuts, mustard, relish, and coleslaw -- rolled up in a wrap.

2 tablespoons reduced-fat mayonnaise
1 tablespoon cider vinegar
1/2 teaspoon sugar
1/8 teaspoon dried dill
4 ounces coleslaw mix (about 2 cups mixed shredded cabbage and carrots)
1 1/2 tablespoons horseradish mustard
1 tablespoon pickle relish
2 sandwich wraps (10-inch)
2 ounces (8 slices) thinly sliced salami
1/2 small red onion, thinly sliced

Steps:

  • In a large bowl, mix mayonnaise, cider vinegar, sugar, and dried dill. Add coleslaw mix, stirring to coat.
  • In a small bowl, mix horseradish mustard with pickle relish. Spread mixture on 2 sandwich wraps, leaving a 2-inch border. Top with salami, coleslaw mixture, and red onion, dividing all evenly.
  • Fold in two opposite sides about an inch each, then roll from one of the open sides to enclose. Wrap in parchment, if desired, then in plastic; refrigerate at least 30 minutes before slicing.

You can really mix and match any meats and cheeses, but to me, there is no comparison to good ol' salami and american cheese!!

2 slices bread
butter
1 slice American cheese
5 slices salami
mayonnaise
lettuce
tomatoes

Steps:

  • Butter one side of each slice of bread and place (Buttered side down) in a skillet over medium heat.
  • Place the slice of cheese on one of the pieces of bread, and allow to the cheese to melt, and the bread to turn golden.
  • Remove from pan and top cheese with salami, making sure to spread out the layer of salami to cover everything.
  • Add the tomatoes and lettuce.
  • Spread Mayo on the unbuttered side of the other slice of bread and top off the sandwich!
  • YUM!
