NORI ROLLS

1/4 cup low-sodium soy sauce
2 teaspoons honey
1 teaspoon grated garlic
1 tablespoon grated peeled fresh ginger
1 pound extra-firm tofu, cut into 1/4-inch-wide strips
2 cups short-grain brown rice
2 tablespoons rice vinegar
1 tablespoon extra-fine sugar
2 scallions, white part only, minced
2 tablespoons sesame seeds, toasted
5 sheets nori (available in Asian-specialty sections)
1 cup finely shredded carrots
10 fresh spinach leaves, steamed and squeezed dry
1 1/2 cups alfalfa sprouts

Steps:

  • In a deep, wide dish or pie plate, combine the soy sauce, honey, garlic and ginger. Add the tofu and let it marinate for at least an hour, turning it over half way through.
  • Cook the rice according to the package. In a large glass or ceramic bowl, combine the rice vinegar and sugar. Add the hot rice in fourths, stirring the mixture well after each addition. Stir in the scallions and sesame seeds, mix well.
  • For each roll, place a sheet of nori on a piece of wax paper so that the bottom edge of the nori lies along the bottom edge of the paper. Moisten your hands with cold water and place a handful of rice in the center of the nori, spread it out in a thin layer to fill the sheet evenly. Add more rice if necessary. Place 2 strips of tofu across the center of the nori, so they run the entire width of the sheet. Place a portion of the carrots on top of the tofu, some spinach over that, finishing with some sprouts (use about a fifth of each filling ingredient). Start rolling the nori from the bottom by gripping the nori and the wax paper, and using the paper to help you make a tight roll.
  • Let the nori rest, seam side down, while you repeat the remaining procedure with the remaining rice and nori. You should have 5 rolls. To serve, wet the blade of a serrated knife and cut rolls into rounds about an inch thick. Serve at room temperature.

SALMON NORI MAKI

1 small salmon (about 3 pounds filleted)
2 tablespoons chopped garlic
Salt and pepper to taste
1 yellow squash, fine julienne
1/2 cup sliced scallion
1 package of nori (seaweed sheets)
2 tablespoons soy sauce

Steps:

  • Slice the salmon lengthwise into 4 to 5-inch long sheets about 1/4-inch thick. Place two slices on plastic wrap, salt and pepper fish, lay a sheet or nori on top. Place strips of squash on top of nori sprinkle with scallions, place another piece of plastic wrap on top and roll. Set in refrigerator to set (may be made in advance, up to this point.)
  • Remove plastic wrap and heat a saute pan with 2 tablespoons peanut oil. Saute roll in pan rotating every minute. Depending on desired temperature- approximately 4 minutes of cooking time. Deglaze with soy sauce.

SUSHI ROLL: MAKI

12 sheets nori (seaweed) approximately 5 by 7-inches
6 cups prepared vinegared sushi rice
1 tablespoon prepared wasabi
1/2 pound sushi grade salmon, cut into 12 (7-inch) long by 1/4-inch thick strips
1 English cucumber, peeled, seeds removed, and sliced into 12 (7-inch) long by 1/4-inch thick strips
6 scallions, white and tender green parts only, cut into 12 (7-inch) lengths
1 tablespoon cornstarch dissolved in 1 tablespoon water
Vinegared water, in which to dip knife
3 teaspoons tobiko (flying fish roe)

Steps:

  • Heat the nori enough to make it supple, at about 325 degrees F for 3 minutes. Place a sheet of nori on the bamboo mat with the wider part along the rolling edge of the mat. Spread 1/2 cup of the rice over the surface of the nori, leaving about 1/2-inch of nori on the furthest edge uncovered so you will be able to seal the roll. Press the rice down firmly but gently. Place a dab of wasabi - about 1/4 teaspoon - on your finger and spread a thin ribbon of wasabi from left to right along the centerline of the rice. On top of the line of wasabi, lay a length each of fish, cucumber, and scallion. Begin rolling the edge of the bamboo closest to you, using the mat to press down on the sushi roll firmly but gently as you roll. The nori should stick to itself when the roll is complete; if it doesn't, use the cornstarch slurry to moisten it. Dip a knife in vinegared water and cut the roll into 6 even slices. Repeat for each maki. Arrange the rolls cut side up on a plate and top each roll with 1/4 teaspoon tobiko.

TEMPURA SHRIMP MAKI ROLL WITH SAMBAL AIOLI AND WASABI TOBBIKO



Tempura Shrimp Maki Roll with Sambal Aioli and Wasabi Tobbiko image

3 cups short grain rice
3 3/4 cups water
1/2 cup rice wine vinegar
3 tablespoons mirin
3 tablespoons sugar
2 tablespoons lemon juice
1 tablespoon sambal
1 teaspoon garlic
3 egg yolks*
1 cup canola oil
Salt
Pepper
1/2 cup rice flour
1/2 cup all-purpose flour
1 teaspoon salt
2 cups club soda
12 medium sized shrimp, peeled, deveined with tail removed
4 sheets nori
Sushi rice
Sambal aioli
1 cup julienne cucumber
1/2 cup julienne red bell pepper
1/2 cup wasabi tobbiko

Steps:

  • For the sushi rice: Wash the rice several times until the water runs clear. Cover the rice with cold water and soak for 20 minutes. Drain and place the rice in a rice cooker. Add 3-3/4 cups water. Cover and cook until the water is absorbed. While the rice is cooking, combine the rice wine vinegar, mirin and sugar in a small saucepan and cook over low heat until the sugar is dissolved. Remove from the heat. When the rice is cooked, remove from the cooker and place in a large wooden bowl. Using a rubber spatula, fold in the vinegar and sugar mixture. When the vinegar mixture is folded in, cover the bowl with a damp towel and let rest for 30 minutes.
  • For the sambal aioli: In the bowl of a food processor or blender, combine the lemon juice, sambal, garlic and egg yolks and process until combined. With the processor running, slowly drizzle in the canola oil to create an emulsion. If the aioli needs to be thinned out after all of the oil has been added, thin with a little water or lemon juice. Season with salt and pepper.

  • To make the Tempura Shrimp Maki Roll: Preheat a fryer to 360 degrees F. In a large bowl, combine the rice flour, all-purpose flour and salt. Add the club soda until the consistency of pancake batter is achieved. Butterfly the shrimp by slicing lengthwise down the back. Dip the shrimp in the tempura batter and then place in the fryer and fry until golden brown, about 3 minutes. Remove from the oil to a paper towel-lined plate.
  • On a sushi mat, lay down 1 piece of the nori, shiny side down. Spread the sushi rice on one half of the nori, about 1/4-inch thick. Spread about 1 tablespoon of the sambal aioli over the rice. In the center of the rice, lay down 1/4 cup of the cucumber and a few strip of red bell pepper in a line that reaches from one side of the nori to the other. Top the cucumber with 3 pieces of the tempura shrimp. Sprinkle 1/4 cup of the wasabi tobbiko over the shrimp. Roll the sushi up, using the sushi mat. To seal the roll, use a little water along the edge of the nori. Cut the roll into 6 pieces. Repeat this procedure 3 more times to create 4 rolls.

SPICY SNAPPER MAKI ROLL (SUSHI)

One 8-ounce red snapper fillet
5 tablespoons Kewpie mayonnaise
2 tablespoons sriracha
1 tablespoon wasabi paste, plus more for serving
2 cups cooked sushi rice, cooled to room temperature
1 1/2 tablespoons seasoned rice vinegar
4 nori sheets
1 English cucumber, peeled and sliced lengthwise into 1/2-inch wide strips
1 avocado, sliced crosswise into 1/2-inch pieces
2 tablespoons furikake spice
2 ounces salmon roe (about 1/4 cup)
Toasted sesame oil, pickled ginger and soy sauce, for serving

Steps:

  • Remove all skin, pin bones, blood lines and sinew from the snapper fillet. Slice the fillet lengthwise into long strips about 1/2-inch wide and refrigerate until ready to use.
  • Whisk together 2 tablespoons of the mayonnaise with the sriracha in a small bowl. In a separate small bowl, whisk together the remaining 3 tablespoons of mayonnaise with the wasabi paste and a splash of water if needed to loosen the mixture. In a medium bowl, gently combine the cooked sushi rice with the vinegar.
  • Lay a piece of plastic that is bigger than the nori sheet on a clean work surface. Lay a nori sheet on top of the plastic in the center. Dip your fingers in water as needed to keep them from sticking to the rice, then use your fingers to spread 1/2 cup of the sushi rice evenly on the nori sheet and gently press down. Flip the nori sheet over so the rice is face down.
  • Spoon about 2 teaspoons of the sriracha mayonnaise horizontally across the center of the nori sheet. Place 2 strips of snapper on top of the mayonnaise, then top with a strip of cucumber and 4 to 5 slices of avocado. Using the plastic wrap as a guide, roll the sushi as tight as possible into a log. Trim any excess nori as needed. Remove the plastic and use a sushi mat to form the sushi into a uniform round roll with a flat bottom. Repeat with the remaining ingredients to assemble three more rolls.
  • Cut each roll into 6 to 9 pieces. Use a spoon to smear about 1 tablespoon of the wasabi mayonnaise on one side of the serving plate. Place the sushi on the other side of the plate, then sprinkle with some of the furikake. Place about 1 tablespoon salmon roe on top of the wasabi mayonnaise and garnish the plate with a splash of toasted sesame oil. Serve immediately with pickled ginger, soy sauce and wasabi paste.
