STRAWBERRY CREPES FLAMBE



Strawberry Crepes Flambe image

Dim the lights when you flambé this strawberry-brown-sugar-rum sauce over crepes tableside. It makes for one spectacular and delicious dessert.

Simple Crepes
4 tablespoons butter
1/4 cup packed light-brown sugar
1/4 teaspoon ground cinnamon
Pinch of kosher salt
1 1/2 cups halved strawberries
2 tablespoons silver rum
3 tablespoons chilled heavy cream, whisked until slightly thickened, for serving

Steps:

  • Fold crepes in quarters. Heat in 1 tablespoon unsalted butter in a nonstick skillet over medium-high, flipping once, until warm and crisp, 5 minutes; divide between 2 plates.
  • Return skillet to heat; melt 3 tablespoons butter. Stir in packed light-brown sugar, ground cinnamon, and a pinch of kosher salt; cook, swirling pan, until darkened slightly, 1 to 2 minutes. Add halved strawberries; cook until tender, 2 minutes. Remove from heat; add silver rum.
  • To flambe, return skillet to medium-high heat. If using a gas burner, carefully tilt pan away from you to ignite; if using an electric burner, use a lit long match held just above the sauce. When flame subsides (5 to 10 seconds), spoon strawberries over crepes. Return skillet to medium-high heat and reduce sauce until thickened, 1 to 2 minutes; pour over crepes. Whisk heavy cream until thickened slightly. Drizzle over crepes; serve.

This is an old school classic, making use of the woefully underutilized art of flambe. Flambeing caramelizes sugars and deepens flavors; with ripe summer cherries, that's really all you need.

1 pint vanilla ice cream
1 pound fresh, ripe sweet cherries, such as Bing
1/2 cup sugar
1 lemon
1/3 cup golden rum

Steps:

  • Evenly scoop the ice cream into 4 dishes or decorative glasses and put in the freezer until ready to serve (this can be done up to 4 hours ahead).
  • Wash and pit the cherries. Put the cherries and sugar in a large skillet. Peel 2 strips of zest from the lemon in wide strips with a peeler and add to the cherries. Squeeze the juice of half the lemon over the top. Stir to combine evenly. Cover and cook the cherries over medium-low heat until the sugar dissolves, about 4 minutes. Uncover and cook over medium-high until cherries get juicy, about 5 minutes more.
  • To flambe the rum: If cooking over a gas flame, pull the pan off the heat and add the rum. Ignite the alcohol with a long match or one held with tongs. Swirl the pan slightly until the flames subside, about 30 seconds.
  • If cooking over an electric stove, put the rum in a small saucepan. Warm it over medium-low heat and carefully light it with a long match or one held with tongs. Pour the lit rum over the cherries, and swirl the pan lightly until the flames subside, about 30 seconds.
  • Ladle the cherries and their juices over prepared ice cream scoops. Serve immediately.

¼ cup apple juice
2 tablespoons brown sugar
1 medium ripe mango, peeled and sliced
2 medium ripe bananas, peeled and sliced
6 large strawberries, sliced crosswise
¼ teaspoon ground cinnamon
¼ cup dark rum
1 ½ scoops vanilla ice cream

Steps:

  • Set a large pan on the stove over medium-high heat. Pour apple juice into the pan and add brown sugar; let it simmer until golden and bubbling, about 4 minutes.
  • Put mango, banana, and strawberry slices in the pan with cinnamon. Stir to cover fruit with the sauce and cook for 3 minutes.
  • Remove pan from the heat and add rum. Place back on the heat and use a long lighter to set it on fire. Once the flame has gone out, cook for 1 more minute.
  • Divide fruit evenly between 3 bowls and top each with 1/2 scoop ice cream.

2 tablespoons butter
1/3 cup sugar
1/3 cup sweet sherry
1/3 cup golden rum
1 pint vanilla ice cream
2 tablespoons toasted almonds, chopped

Steps:

  • Wash, hull and dry the strawberries.
  • Heat butter in skillet, add sugar. Stir until sugar is golden and melted.
  • Add the sherry and cook, boiling, until syrup is smooth and free of any crystalized lumps of sugar.
  • Add strawberries and heat through.
  • At the table or in the kitchen heat rum slightly. Ignite and pour over berries, stirring juices utnil flame dies down.
  • Spoon immediately over servings of ice cream. Top with toasted almonds.

4 teaspoons brown sugar
2 teaspoons butter
2 whole peeled and sliced bananas
2 tablespoons banana liqueur
2 tablespoons brandy
2 glasses filled half way with vanilla ice cream
2 tablespoons chocolate syrup
4 tablespoons whipped cream
2 whole strawberries (remove the stem and make a small hole for the cubed sugar)
2 sugar cubes

Steps:

  • In a large saucepan over medium heat, melt the sugar until it becomes liquid. Add the butter and the sliced banana. Cook for about 6 minutes. Remove the pan from the heat and then add the banana liqueur.
  • Continue to cook for about 2 minutes. Remove from the heat once again, then add the brandy. Once you put the pan back in the heat, it should flambe. Remove the pan from the heat and start spooning the flambeed banana into the ice cream glass. Add the chocolate syrup and the whipped cream. On top of the whipped cream, right in the center, place the cleaned strawberry, then place the sugar cube in the center of the strawberry. Pour a little bit of the brandy on top of the sugar and carefully ignite it with a match.

  • In a large skillet, cook the butter and brown sugar over medium heat, stirring, until the sugar dissolves. 4 (1-pound) firm-ripe mangoes
6 tablespoons turbinado sugar such as Sugar in the Raw
1/3 cup dark rum

Steps:

  • Preheat broiler.
  • Wash and dry mangoes. Remove 2 flat sides of each mango with a sharp knife, cutting lengthwise alongside pit and cutting as close to pit as possible so that mango flesh is in 2 large pieces (reserve remaining fruit for another use). Make a crosshatch pattern with a small sharp knife, cutting across fruit down to skin at 1/2-inch intervals and being careful not to pierce through. Grasp fruit at both ends and turn inside out to make flesh side convex.
  • Arrange fruit, skin side down, in a large shallow baking pan lined with foil and sprinkle evenly with 4 tablespoons turbinado sugar (total). Broil 5 inches from heat until fruit is golden brown (it will not brown evenly), about 5 minutes. Arrange fruit on a large platter.
  • Cook rum with remaining sugar in a small saucepan over moderately low heat, stirring, until sugar is dissolved. Remove from heat, then carefully ignite rum with a kitchen match and pour, still flaming, over warm mangoes. Serve immediately.

2 cups strawberries (I keep frozen ones on hand for occasions such as this)
1 teaspoon butter
1 cup sugar
1 lemon, zest of (the outermost layer of the lemon rind, which is used for flavoring)
1 orange, zest of
4 scoops vanilla ice cream
1 orange, juice of
2 tablespoons brandy

Steps:

  • Slice each strawberry in half. (if using frozen be sure to let thaw completely).
  • Heat a large saucepan, and sauté the strawberries in butter lightly in one side of the pan.
  • In the other side, melt sugar.
  • When sugar almost melts, add the orange juice and zests.
  • Carefully add brandy and watch out for the flame!
  • Serve hot over ice cream.
