Rum-spiked buttercream and cola-infused cupcakes combine to make a one-of-a-kind dessert, reminiscent of a cocktail-hour classic.

1 box Betty Crocker™ Super Moist™ devil's food cake mix
3 eggs
1/2 cup vegetable oil
3/4 cup cola carbonated beverage
1/2 cup butter, softened
4 cups powdered sugar
1/4 cup rum
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups.
  • In large bowl, beat cupcake ingredients with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally, until well blended. Divide batter evenly among muffin cups.
  • Bake about 20 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 30 minutes.
  • In medium bowl, beat butter and powdered sugar with electric mixer on medium-low speed until combined. Increase speed to medium; gradually beat in rum and vanilla until fluffy. Pipe or spread frosting on cupcakes.

1 box Betty Crocker™ Super Moist™ devil's food or dark chocolate cake mix
1/2 cup vegetable oil
3 eggs
1 1/4 cups cola carbonated beverage
1 cup butter, softened
3 1/2 cups powdered sugar
1/4 cup dark rum
2 tablespoons rum extract

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease bottoms and sides of 2 (9-inch) round cake pans with shortening; lightly flour.
  • Make cake mix as directed on box, using oil and eggs and substituting carbonated beverage for the water. Bake and cool as directed.
  • In large bowl, beat butter with electric mixer on low speed 1 to 2 minutes or until creamy. Gradually add powdered sugar, 1 cup at a time, beating after each addition. Add rum and rum extract. Continue beating until frosting is smooth and spreadable.
  • Place 1 cake layer, rounded side down, on serving plate. Spread with a layer of frosting. Top with second cake layer, rounded side down. Frost side and top of cake with remaining frosting. Decorate as desired.

1 (18.25 ounce) package white cake mix
1 (3.5 ounce) package instant coconut cream pudding mix
4 eggs
½ cup water
⅓ cup dark rum
¼ cup vegetable oil
1 cup flaked coconut
1 (8 ounce) can crushed pineapple with juice
1 (3.5 ounce) package instant coconut cream pudding mix
1 (8 ounce) container frozen whipped topping, thawed
1 tablespoon dark rum

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9- inch round cake pans.
  • In a large bowl, combine the cake mix and instant pudding. Add the eggs, water, 1/3 cup rum and oil, mix well. Fold in the 1 cup coconut and spread the batter evenly into the prepared pans.
  • Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the cake comes out clean. Allow to cool.
  • To make the filling and frosting, stir together the second package of pudding and the pineapple, including the juice. Fold in the cool whip and more rum if desired. Fill and ice cake. Chill until serving time.

3 cups cake flour, sifted
1 teaspoon baking soda
1/2 teaspoon salt
4 eggs
1 cup butter, softened
2 cups brown sugar, lightly packed
1 cup classic Coca-Cola
1/4 cup dark rum
1 teaspoon vanilla extract
1/2 cup whole milk
1 cup classic Coca-Cola
1 1/2 cups white sugar
1 tablespoon light corn syrup
12 tablespoons butter
1/4 cup dark rum

Steps:

  • Preheat oven to 325°.
  • Sift together the flour, baking soda, and salt; set aside.
  • Liberally grease and lightly flour a standard Bundt pan.
  • Beat the eggs with an electric mixer; gradually add the softened butter and the sugar and beat until creamy.
  • Beat in the Coca-Cola, rum, vanilla, and milk (note--use only fresh, bubbly Coke, not flat Coke, as called for in some recipes; the bubbles actually make a honeycomb effect in the finished cake).
  • Gradually add the flour mixture to the mixing bowl, beating constantly until you have a smooth batter.
  • Pour the cake batter into the prepared pan; bake 45-60 minutes, or until the cake tests done.
  • Let the cake cook slightly; use a knife to work around the sides and center of the cake, and then invert the cake on a serving platter.
  • The sauce: while the cake is baking, make the sauce--bring the Coca-Cola, sugar, and corn syrup to a boil in a 2-quart saucepan; continue cooking at med-high heat, stirring, until the syrup thickens.
  • Remove from the heat and immediately stir in the butter and the rum.
  • Serve the cake warm, spooning plenty of sauce over each individual serving.

I received these as part of my annual Christmas Bake exchange. These are a little different from other rum ball recipes because they call for coke in the ingredients. Prep time does not include chill time.

1 cup chocolate chips
1/2 cup Coca-Cola
3 tablespoons light corn syrup
2 tablespoons light rum, and then some... hic
2 1/2 cups vanilla wafers, finely chopped
2 cups icing sugar
1 cup walnuts, finely chopped (optional)
candy sprinkles

Steps:

  • Melt chocolate.
  • Blend in cola, syrup and rum.
  • Stir in wafer crumbs, icing sugar, and walnuts.
  • Mix well-Mixture will be sticky.
  • Cover and chill for 2 hours or until stiff enough to handle -- make good use of this time and 'sample' the fine rum you bought to make these treats!
  • Form into small balls and roll in sprinkles.
  • Cover loosely and chill.
  • Keep out of reach of children!

This is an easy recipe for a rum-soaked cake filled with walnuts and a rum glaze.

1 cup chopped walnuts
1 (18.25 ounce) package yellow cake mix
½ cup dark rum
4 eggs
½ cup water
½ cup vegetable oil
1 (3.5 ounce) package instant vanilla pudding mix
½ cup butter
⅛ cup water
½ cup white sugar
¼ cup rum

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube or Bundt pan. Sprinkle nuts over the bottom of the pan.
  • Mix together the cake mix, 1/2 cup dark rum, eggs, 1/2 cup water, oil, and vanilla pudding mix. Pour batter over the nuts in the pan.
  • Bake for 1 hour. Cool, and invert cake on a serving plate. Prick the top of the cake.
  • To Make The Glaze: Melt the butter in a saucepan. Stir in 1/8 cup water and the 1/2 cup sugar. Boil for 5 minutes, stirring constantly. Remove glaze from heat, and stir in 1/4 cup rum. Drizzle and smooth evenly over the top and sides.
