- 1. Pat ahi dry and cut into 1/2 inch cubes. 2. Combine all other ingredients in bowl. 3. Add a bit of dressing in at a time and taste it until you have just enough to enhance the flavour of the fish. 4. It can be served immediately. If waiting to eat it, it must be refrigerated.
AHI POKE BASIC
This is a standard raw tuna (poke) salad served in most Hawaiian homes. Although unconventional, it is sure to please the more adventurous seafood lovers. Be sure to use fresh tuna for the very best flavor, although fresh frozen tuna will produce acceptable results.

- In a medium size non-reactive bowl, combine Ahi, soy sauce, green onions, sesame oil, sesame seeds, chili pepper, and macadamia nuts; mix well. Refrigerate at least 2 hours before serving.

- Spray 18, 4 ounce molds with cooking oil spray. Sauce: Heat butter and sugar over medium heat and bring to boil, stirring so sugar doesn't burn. Pour 2 tablespoons into each mold; chill 1 hour. Preheat oven to 350°F. Batter: Cream butter and sugars. Beat in eggs. Sift together flour, salt and baking powder. Add mixture gradually to creamed mixture and beat until incorporated. Fold in milk and vanilla. Arrange pineapple slices over glaze in molds. Top with 1/4 cup batter. Bake 17 to 18 minutes. Turn molds over on plates and un-mold cakes. Serve hot.
BLACKENED AHI WITH SOY-MUSTARD SAUCE

- Prepare sauce: Mix the mustard powder and hot water to form a paste. Let sit for a few minutes. Add vinegar and soy sauce mix together, and strain. Chill.
- Warm the Buerre Blanc in a double boiler. Mix all the spices together on a plate and dredge the ahi on all sides. Heat a lightly oiled cast-iron skillet and sear the ahi over high heat to desired doneness (about 15 seconds per side for rare). Cut into 16 thin slices.
- For each serving, arrange 4 slices of the ahi in a pinwheel. Ladle a little of the Soy-Mustard Sauce in two opposing quadrants, ladle the Buerre Blanc in the other two quadrants of the plate. Garnish decoratively with the pickled ginger on the Buerre Blanc and the sesame seeds on the Soy-Mustard Sauce. Arrange remaining garnish at the center of the pinwheel.
