CAJUN CHILI (ROUX BASED)



Cajun Chili (Roux Based) image

Delicious with or without beans. If made without beans, the chili can be served over elbow noodles for a delicious version of chili-mac. Don't forget to top with shredded cheese. What makes this chili different is the first step. The roux base gives the chili body and a saucy texture. I like that--body and sauciness!

2 lbs quality ground beef
4 tablespoons vegetable oil, can substitute bacon drippings
2 tablespoons flour, heaping
1 large onion, chopped
1/2 medium green bell pepper, chopped
4 garlic cloves, minced
1 (6 ounce) can tomato paste
2 tablespoons chili powder
2 tablespoons cumin powder
1 -2 tablespoon sugar, to taste
salt
cayenne pepper
water
16 ounces red kidney beans (optional)
sliced green onion (optional)
grated cheddar cheese (optional)

Steps:

  • Make brown roux (careful not to burn) with oil and flour, stirring constantly.
  • Add onion, bell pepper, and garlic. Saute about 3 minutes.
  • Add ground beef and cook until browned, breaking up chunks.
  • Add tomato paste, chili powder, cumin powder, sugar, salt and cayenne pepper topping with about 1 - 2 cup water, depending on desired consistancy.
  • Stir to combine and simmer half covered for 20 - 25 minutes, stirring occasionally and checking the level of liquid.
  • If adding the optional can red kidney beans, add this 5 to 10 minutes prior to the end of cook time.
  • Top individual servings with cheddar cheese and sprinkle with sliced green onions.

2 tablespoons butter
2 tablespoons flour
1 cup beef stock
1/2 cup cream
1 teaspoon soy sauce
salt, white pepper to taste

Steps:

  • In a skillet, melt butter. When butter is melted, sprinkle flour into skillet. Stir to make a smooth roux.
  • Slowly add beef stock, stirring to keep the sauce smooth. Add cream. Add soy sauce. Season to taste.
  • Bring to a boil, reduce heat to simmer and allow to simmer until desired consistency. Serve alongside meatballs.

I modified an existing recipe to make a sauce for meatballs I got at Ikea. it was even good enough that my daughter, who almost hates "gravy", like it enough to NOT complain! This amount of sauce was enough to serve with about 45 swedish meatballs and mashed potatoes.

3 tablespoons butter or 3 tablespoons bacon grease
2 tablespoons flour
2 beef bouillon cubes or 1 cup beef stock
1/2 cup sour cream
1 teaspoon Worcestershire sauce
1 teaspoon dill weed
1/2 teaspoon cayenne

Steps:

  • Melt 3 tablespoons butter or bacon grease in a large saucepan.
  • Take off the heat, with a wooden spoon, stir into the pan 2 tbsp of flour and mix it to a smooth paste with the fat.
  • Return the pan to a low heat and cook this roux slowly for a minute of so, stirring all the while.
  • Then pour in, all at once, the cup of stock. Raise the heat to moderate and, with a wooden spoon, beat this sauce together until it boils, thickens and becomes quite smooth.
  • Then turn the heat down to the barest simmer. Still using the sppon, stir the sour cream into the sauce, about a tablespoons at a time. Use more than ½ cup if you like the sauce fairly thin.
  • At the last, add the dill, Worchestershire sauce and cayenne. Stir until well blended. Enjoy.
