White Cheddar Mac and Cheese image

This White Cheddar Mac and Cheese is creamy, smooth, and delicious! It is topped with an herbed bread crumb topping and baked until perfection. It's the perfect comfort food!

Number Of Ingredients 12

1 pound cavatappi pasta (or other similar pasta)
½ cup unsalted butter (equiv to 8 tablespoons)
½ cup all-purpose flour
4 cups whole milk, plus more as needed
12 ounces White Cheddar cheese, freshly shredded (use a box grater)
8 ounces Gruyere cheese, freshly shredded (use a box grater)
½ teaspoon garlic powder
Salt and pepper to taste
6 slices white sandwich bread
2 tablespoons unsalted butter, melted
1 teaspoon garlic powder
2 teaspoons Italian herb seasoning

Steps:

  • Preheat oven to 375 degrees F.
  • Cook pasta according to package directions. Drain and set aside.
  • In a large pot or Dutch oven, melt the ½ cup of unsalted butter over medium heat. Once melted, add the flour and whisk constantly for about 3 minutes, until slightly thickened. This is called a roux. Don't rush this process as the raw flour needs to cook. At this point, the roux should be a bit pale in color and should begin to smell a tiny bit toasty.
  • Gradually, add the milk, stirring. Bring to a boil (turn up the heat to medium-high to get it going) and then reduce to a simmer for about 3-4 minutes, stirring often until thickened.
  • Add the freshly grated cheeses and stir until evenly combined. Cook for another 1-2 minutes. Add the cooked pasta (drained) to the sauce and stir until well combined. Season with garlic powder, salt, and pepper to taste. Transfer to a large 9" x 13" baking dish. Set aside.
  • Make the herb crumb topping: combine all the herbed bread crumb topping ingredients in a food processor and pulse a few times until you get crumbs. Note: if you don't have food processor, use panko bread crumbs instead of bread.
  • Top the mac and cheese with the prepared herbed bread crumb topping.
  • Bake for about 25-30 minutes until golden brown and bubbly. Let it cool for 10 minutes. Enjoy!

3 cups macaroni noodles
2 1/2 cups white cheddar, shredded
1 cup pepper jack cheese, shredded
1/2 cup parmesan cheese, shredded or grated
2 cans (12 oz) evaporated milk
1 teaspoon garlic, minced
2 tablespoons butter, room temperature
2-3 tablespoons rosemary, chopped
1 teaspoon parsley flakes
1/2 teaspoon pepper
salt to taste
1/2 pound bacon, chopped or diced if desired
1/2 cup white cheddar cheese
1/2 cup pepper jack cheese
1/4 cup shredded parmesan cheese
chopped rosemary if desired

Steps:

  • Cook noodles to slightly soft, then drain and pour into a large mixing bowl.
  • If using, chop or dice you bacon and cook it until crisp. Allow to drain on paper towels and set aside.
  • Add shredded cheddar, jack, parmesan cheese, evaporated milk, garlic, butter, rosemary, parsley and pepper, mixing thoroughly.
  • Spray a casserole dish with cooking spray, then pour in macaroni mixture.
  • Top with extra cheeses and rosemary.
  • Bake at 350 degrees for 35-45 minutes, or until golden and bubbly on top and cooked through. (Timing will depend on how thick your macaroni is or the size of your casserole dish)
  • Serve as desired.

¼ cup panko bread crumbs
¼ cup real bacon bits
1 tablespoon snipped chives

Steps:

  • Combine macaroni, milk, water, garlic salt, and salt in a Dutch oven on a stovetop over medium-high heat. Bring to a boil, stirring occasionally. Reduce heat to a simmer and cook, stirring frequently so noodles don't stick to the pan, until noodles are soft and most of the liquid has been absorbed, 7 to 10 minutes.
  • Remove pot from heat and stir in margarine and pepper until melted. Stir in Cheddar cheese and 1/4 cup of the Parmesan cheese until melted.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Top pasta with bread crumbs, remaining 1/4 cup of Parmesan cheese, and bacon bits.
  • Place Dutch oven under the broiler until topping is lightly browned and crispy, 1 to 3 minutes. Top with chives and serve immediately.

1 lb penne or 1 lb cavatappi pasta
3 cups milk (I use skim to lower the calories)
1/2 cup half-and-half
6 tablespoons butter
1/2 cup flour
4 cups white cheddar cheese
2 cups swiss cheese or 2 cups gruyere cheese
1 tablespoon Dijon mustard
1 pinch nutmeg
2 sprigs fresh rosemary
1 1/2 cups panko breadcrumbs
salt and pepper

Steps:

  • Preheat oven to 375.
  • Bring a large pot of salted water to a boil and cook noodles until they are al dente.
  • Shred the block of white cheddar cheese.
  • In a medium pot, combine milk and half and half and gently warm but do not let boil. In a separate large pot, melt butter over med-low heat. Whisk in flour until smooth and thick. Slowly add warm milk into flour mixture, whisking to smooth out any chunks. Add mustard, nutmeg, salt and pepper. Slowly add cheddar, whisking in until the cheese begins to melt. Add swiss/gruyere mix and continue whisking until semi-smooth (you will have some globs of cheese).
  • Pour noodles into a 13×9 baking pan. Pour cheese mixture over noodles, sprinkle with more salt and pepper and mix well. Using a kitchen shears, snip rosemary sprigs into small pieces over the macaroni. Use your fingers to strip any remaining leaves off the rosemary. Stir again and sprinkle panko crumbs over the entire dish. Bake for 40-45 minutes.

Mac 'n Cheese With Bacon and White Cheddar Cheese image

This is a recipe we have been making for awhile now. The original recipe was from Tyler Florence. My family loves the white cheddar and bacon in the dish; it gives this macaroni and cheese a very unique, but comforting, flavor. This is most definitely not a 'light' recipe as we use extra sharp white cheddar and whole milk and always add extra bacon. It comes out bubbly and creamy and no one can wait to dig in.

1 lb elbow macaroni
4 cups milk (I recommend whole milk)
8 sprigs thyme (divided)
6 garlic cloves (divided)
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
6 cups white cheddar cheese (shredded & divided)
1/4 cup flat leaf parsley (chopped)
6 slices bacon (sliced into 1/4 inch pieces)
1 large onion (diced)

Steps:

  • Cook the elbow macaroni until al dente, 8 or 9 minutes, then drain and set aside.
  • Preheat oven to 400 degrees and spray 3-quart baking dish with non-stick cooking spray.
  • Heat milk with 3 sprigs of thyme and 4 cloves of crushed garlic in a small pan, do not boil the milk.
  • In a large skillet, melt the butter over medium high heat. Once melted, whisk in the flour and cook, stirring constantly for about 1 minute.
  • Remove the thyme sprigs and garlic cloves from the milk then whisk the milk into the butter and flour mixture.
  • Continue to cook until the mixture is smooth, whisking constantly. Once smooth, stir in 4-1/2 cups of the white cheddar cheese. Continue to cook and stir until the cheese is melted. Add salt and pepper to taste.
  • Add in the cooked macaroni and the chopped parsley. Stir to coat the macaroni and incorporate all ingredients then pour into the prepared baking dish and top with the remaining cheddar cheese. Bake for 30 minutes.
  • Meanwhile, in a saucepan, cook bacon until crispy. Then add the onion, the remaining two cloves of garlic (chopped) and the remaining thyme (leaves only this time). Cook until the onions are soft, about 5 minutes. Season with salt and pepper.
  • When the macaroni and cheese comes out of the oven, spread the bacon and onion mixture over the top, serve and enjoy.

2 cups uncooked elbow macaroni
1/4 cup butter
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup flour
1 3/4 cups milk
10 ounces of sharp vermont white cheddar cheese, shredded
1/4 teaspoon paprika (to taste)

Steps:

  • Cook elbow macaroni as directed.
  • Melt butter in frying pan over medium heat. Stir in salt and pepper. Add flour, and cook over low heat, stirring constantly, until smooth. Remove the frying pan from the stove and add milk.
  • Return the frying pan to the burner and gradually increase heat as you stir constantly. When mixture boils, continue to stir for one minute, then remove from heat. Stir in shredded cheddar cheese.
  • Add cheese sauce to the macaroni and stir thoroughly. Bake at 375 degrees for 25 minutes. Remove from oven, sprinkle top with paprika, then bake for another five minutes.
