ROSEMARY AND GREEK SEASONED SHREDDED POTATOES

Rosemary and Greek Seasoned Shredded Potatoes image

You can eat these potatoes really any time of the day. I made them for dinner last night alongside steak. My boyfriend took one bite out of them and said he doesn't want to eat anything else but these potatoes from now on haha.

Provided by mittens 1

Categories     Lunch/Snacks

Time 20m

Yield 2-3 cups, 2 serving(s)

Number Of Ingredients 4

2 medium white potatoes
vegetable oil
all purpose Greek seasoning
rosemary (I used crushed but I am sure fresh would be amazing)

Steps:

  • Heat a medium sized skillet to medium heat.
  • Shred the potatoes using a cheese grater.
  • Put the shredded potatoes into a bowl and season to your personal taste. (I did not measure but I shook a few good shakes of the greek seasoning and a small palm full of rosemary. It all depends on how many potatoes you have.).
  • Once the skillet is heated pour about 1 tbs. of oil into the skillet.
  • Place the potatoes in a thin layer on the skillet.
  • Fry until golden brown on one side and then flip, turning the potatoes when nessecary so everything gets nice and brown.
  • Then sit down and eat!

Categories     Potato

Time 1h5m

Yield 4 serving(s)

Number Of Ingredients 5

4 baking potatoes
3 -4 tablespoons extra virgin olive oil
1 tablespoon dried rosemary
1 teaspoon kosher salt
2 tablespoons butter

Steps:

  • Preheat oven to 375.
  • Scrub potatoes and slice 1/2" thick slices from end to end.
  • Keep each potato together.
  • I use individual ramekins to bake them in, but you can use a caserole dish that will hold the potatoes so they don't fall apart.
  • Brush some of the oil in the bottom of the ramekins and put one potato in each.
  • Spread the slices a little so they are kind of loose.
  • Brush the rest of the oil on the potatoes.
  • Sprinkle rosemary and salt on top and top with butter.
  • Bake 1 hour or until fork tender.
  • The whole thing should come right out together and can be served on plates.
  • Drizzle remaining oil and butter over top.

  • Spray a 9"x13" baking dish with non-stick spray. Add the potato wedges. Pour enough oil over the potatoes to coat them. The exact amount depends on the amount of potatoes, but mix the potatoes and oil together (I use my clean hands to mix) to coat the wedges with oil.
  • Add salt and pepper to taste. Sprinkle the whole thing with rosemary. Again, the exact amount depends on how much potato you have, but enough so the potatoes are well dotted with the rosemary.
