Categories     Sandwiches & Burgers

Time 1h

Number Of Ingredients 9

1 1/3 pounds 93% lean ground turkey
1/2 medium yellow onion, finely grated & squeezed of excess moisture
2 cloves garlic, finely chopped or grated
2 tablespoons mayonnaise (see Recipe Notes)
2 teaspoons Worcestershire sauce
1 1/2 teaspoons kosher salt
1/2 teaspoon ground black pepper
oil, for the grill grates
for serving, as desired: burger buns, cheese of choice, toppings of choice (e.g. lettuce, tomatoes, thinly sliced onion, pickles, etc.), condiments of choice (e.g. mustard, ketchup, et.c)

Steps:

  • or large plate with parchment paper, wax paper, or aluminum foil. Set aside.
  • Arrange a few paper towels out on a cutting board, set a box mixer on top. Run the onion along the sides of the box mixer to grate it into fine, shredded pieces. Once grated, use the paper towel to soak up excess moisture from the onion. Too much moisture will make the turkey burger mixture very difficult to handle, so do not skip the extra 30 seconds it takes to blot the moisture from the grated onion. If your onion seems very wet, you can also wrap it in paper towels & wring out the moisture over the sink.
  • Add the ground turkey, grated onion, garlic, mayonnaise, Worcestershire sauce, kosher salt & ground black pepper to a large bowl. Using your hands, mix until just combined. Overworking the turkey burger mixture will lead to tough burgers; take care not to overmix.
  • Divide the turkey burger mixture into 4 even portions, about 1/3 pound (5.3 ounces) each. Lightly coat your hands in oil (or mist with nonstick cooking spray) & form each portion into a 1-inch thick patty. The mixture will be very wet at this point, so there's no need to fuss over making your burgers look perfect - just aim for forming them into the general shape & size you're after. Set them on the prepared baking sheet.
  • the turkey burgers: Transfer the baking sheet with the turkey burger patties to the freezer. Chill for at least 20 minutes.
  • Meanwhile, as the turkey burgers chill, preheat the grill for medium-high direct heat grilling, about 450 degrees F. Just before placing the burgers on the grill, generously oil a wad of paper towel. Use grilling tongs to run the oiled paper towel over the grill grates, generously oiling the grates.
  • Remove the turkey burgers from the freezer. At this point they should be quite a bit easier to handle; finish forming them into 1-inch thick patties, using your thumb to create an indent in the center of each patty. Firmly press each turkey burger patty down onto the prepared grill grates. Grill the turkey burgers for 6 minutes per side, or until a thermometer inserted in the center of the turkey burgers registers 160 degrees F. If you'd like to add cheese to your turkey burgers, do so when there are 2 minutes left of grilling time.
  • Allow the turkey burgers to rest for a few minutes (residual heat will increase the internal temperature to 165 degrees F) before serving as desired. Enjoy!

ROSEMARY TURKEY BURGERS

Rosemary Turkey Burgers image

Are you a gotta have melted cheese on your burger person? I'm one of those strange ones who likes the cheese only melted by the heat of the cooked burger and toasted bun. Call me nuts, but that's how I roll.

Provided by Shelagh

Time 30m

Yield 4

Number Of Ingredients 9

1.25# ground turkey or ground chicken*
1 tablespoon Penzeys Dried Shallots (or 2 tablespoon of grated onion from 1/2 medium onion**)
1 teaspoon fresh rosemary, finely chopped
1/2 rounded teaspoon kosher salt (affiliate link)
1/2 rounded teaspoon lemon pepper*
1 tablespoon parmesan cheese, finely grated (optional, but tasty)
2 teaspoons olive oil for pan (you will need to thinly coat the entire surface of the pan)
4 whole wheat burger (or get dinner buns, they are smaller if you are trying to watch cals)
4 slices sharp (or very sharp!) cheddar cheese

Steps:

  • Place turkey, shallot (or onion**) in a bowl with rosemary, salt, and lemon pepper and parmesan. Using a fork, mix together well. Shape into four patties - the mixture will be quite loose - press the meat into ½-inch or so, thick patties. Put the patties on a sheet of waxed paper and pop in the freezer for about 15 minutes (this makes them much easier to handle, to be a little bit frozen).
  • You may also place in a zipper bag, remove the air and freeze for up to 1 month. Be sure to label what's in the bag, you think you'll remember, but, um, you won't.
  • Preheat a cast-iron pan over medium-high heat until good and hot (about 7 minutes, yes 7). Add the oil and the turkey patties. Cook the patties about five minutes on each side. Serve on buns (lightly toast the buns if you like), with cheese (melt it if you like) and condiments of your choice.
  • These burgers are amazing with caramelized onions on them. Use the recipe from my French Three Onion Soup for how to cook the onions.
  • Dried rosemary may be used, but only use about 1/2 teaspoon.
  • Check the salt content in your lemon pepper, or purchase a salt-free version.

HERBED TURKEY BURGER

Herbed Turkey Burger image

These easy, flavorful turkey burgers can be cooked on the grill or stovetop. Fresh herbs, a bit of dark turkey meat, and a little olive oil keep them juicy.

Provided by Elise Bauer

Categories     Sandwich     Grill     Quick and Easy     Burger     Grill     Ground Turkey     Turkey

Time 30m

Yield 8

Number Of Ingredients 13

2 tablespoons extra virgin olive oil
1/2 medium red onion, minced
4 garlic cloves, minced
2 pounds ground turkey meat (preferably dark meat, not breast meat)
1/2 teaspoon salt
1 teaspoon black pepper
1/2 cup loosely packed chopped parsley
1 tablespoon minced fresh rosemary
1 tablespoon minced fresh sage
2 teaspoons chopped fresh thyme
To serve:
Burger buns
Toppings like sliced onions, lettuce, sliced tomatoes, bacon , mayonnaise , mustard, relish, and/or ketchup

Steps:

  • Sauté the onions and garlic: Sauté the chopped onion in olive oil for 3 minutes over medium heat. Add the garlic and sauté for another 2 minutes, or until the garlic begins to brown. Remove from heat. Transfer the onions, garlic, and oil to a large bowl to cool down.
  • Make the burger mix: Once the onions are cool to the touch, add the ground turkey, salt, pepper, and herbs into the bowl. Using your hands, gently mix everything until well combined. You want the herbs mixed in without overworking the meat (which would make the burgers tough).
  • Form the meat into patties: Use your fingers to form a slight indentation in the middle of the patties. When burgers cook, the meat contracts from the edges. If the middle part is slightly thinner than the edges it will help the patties finish with a more even shape and less of a bulge in the middle.
  • Cook the burgers: Cook on a hot grill or in a hot cast iron frying pan for 5 to 6 minutes per side, until cooked through (165°F if using a meat thermometer). If using a grill , first pre-heat the grill on high for 10 minutes and coat the grates with a little vegetable oil. If using a frying pan , put a little oil in the pan first to help keep the burgers from sticking. A trick my mother uses when making burgers in a cast iron frying pan is to sprinkle the bottom of the pan with a little salt. The salt acts sort of like ball bearings, keeping the patties from sticking when you go to flip them.
  • Serve the burgers: Toast the buns and serve the burgers with the accompaniments of your choice-sliced onions, lettuce, sliced tomatoes, bacon, mayonnaise (especially good with mayo), mustard, relish, and/or ketchup.

GRILLED TURKEY BURGERS

Grilled Turkey Burgers image

There are a couple steps to ensure a crisp on the outside, juicy on the inside and all around delicious grilled turkey burger. Grated onion and barbecue sauce give the patties savoriness and provide additional moisture, so they don't dry out from the high heat of the grill. Coating the patties in a mixture of barbecue sauce and mayonnaise guarantees a seared and glazed exterior. If you'd like to turn these into cheeseburgers, simply drape sliced cheese - preferably Cheddar or pepper Jack - over the patties in the last two minutes of grilling and cover the grill.

Yield 4 servings

Number Of Ingredients 9

Neutral oil (such as canola), for greasing
1 medium yellow onion, peeled
1 pound ground turkey
1/4 cup store-bought or homemade barbecue sauce
2 tablespoons mayonnaise
Kosher salt (such as Diamond Crystal)
Black pepper
4 hamburger buns
Toppings (such as shredded iceberg, sliced onion, tomato and pickles) and condiments (mayonnaise, barbecue sauce or mustard), as desired

Steps:

  • Heat the grill to medium-high. Lightly grease a plate and set aside. Coarsely grate 1/4 cup onion; reserve the remaining onion. In a medium bowl, mix the turkey, grated onion and 2 tablespoons barbecue sauce. Form 4 patties about 4 ½ inches wide (about 5 ounces each). Press a small dimple in the center of each patty, then place the burgers on the plate and refrigerate until firm (at least 5 minutes or, covered, up to 2 days).
  • Meanwhile, in a small bowl, stir together the remaining 2 tablespoons barbecue sauce with the mayonnaise; season with 1 teaspoon each of salt and pepper.
  • When ready to grill, dip the reserved onion in oil. Clean the grates with a grill brush, then grease the grates with the oiled onion. (This perfumes the grill and your patties.) Lightly coat the tops of the burgers with some of the mayo mixture (about 1/2 teaspoon per patty).
  • Grill the burgers, mayo side down, until well browned and patties release from the grates, 4 to 6 minutes. (If flare-ups occur, move to an area of the grill where there are no flames underneath. For a gas grill, close the lid between flips, listening and keeping an eye out for flare-ups.) Spread mayo mixture on the tops of the patties, then flip and grill on the second side until cooked through, another 4 to 6 minutes.
  • Transfer to a plate and let rest for at least 5 minutes. Grill the cut sides of the buns until toasted, 1 to 2 minutes. Build burgers on the buns with the patties and desired toppings and condiments.
