1 pint vanilla ice cream
2 pints root beer

Steps:

  • Place 1 scoop of ice cream in each of 4 tall footed fountain or parfait glasses. Slowly pour root beer over the ice cream and serve immediately with a long handled spoon and straw.

6 ounces semisweet chocolate chips
4 salted pretzel rods
1/2 teaspoon pure vanilla extract
1/4 cup nondairy whipped topping
4 scoops cherry chocolate chip ice cream
1 (12-ounce) bottle root beer
1 (12-ounce) bottle cream soda

Steps:

  • In a double boiler, melt the chocolate chips. Dip the tips of the pretzel rods in the chocolate and place upright in a glass in the freezer for 1 hour. Set the remaining melted chocolate aside.
  • Combine the vanilla extract and whipped topping. For each float, place 2 scoops of ice cream into tall float glass. Add 6 ounces root beer and 6 ounces cream soda to each glass. Top with the vanilla-flavored whipped topping. Remove pretzel rods from freezer and place in Root Beer Float. Garnish with extra drizzle of melted chocolate and serve immediately.

This low-alcohol, post-dinner drink tastes a bit like a root beer float after the ice cream has melted. It is named after the Butter Festival that takes place every June in Mr. Bartels's hometown, Reedsburg, Wis. If you have a butter cookie or vanilla wafer on hand, it makes a nice accompaniment.

You can either mix the ingredients together in a glass or blend them in a blender and then pour into a glass. This is a very relaxing drink. Schnapps are generally low in alcohol but are very tasty.
