ROMANIAN APPLE CAKE
This is a wonderfully simple, yet delicious cake! It is so moist and fresh, it will surely be a favorite with your family, just like it is with mine! The main length of the preparation time is cutting and peeling the apples. A mixture of apples works great, although I usually use Golden Delicious.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Cut the apples into 1 inch wedges. Set aside.
- In a large bowl, whisk together the eggs and sugar until blended. Mix in the baking soda, oil, cinnamon and vanilla. Stir in the flour, just until incorporated. Fold in the apples and walnuts.
- Pour batter into prepared pan. Bake in the preheated oven for 55 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool slightly. May be served warm or at room temperature.

I love anything with apple and cinnamon and had to give this one a try. It's comfort food - great with vanilla ice cream or on its own. My kids love this as a snacking cake and it freezes well.

Steps:
- Cream the margarine and sugar.
- Add the eggs, milk, and vanilla and beat well.
- Add the rest of the dry ingredients and mix.
- Fold in the chopped apples.
- Pour batter into a floured 9x13 pan.

- Bake cake at 350 for 35 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x12-inch baking dish generously.
- Whisk flour, sea salt, baking powder, and baking soda together in a bowl. Set aside.
- Combine walnuts, brown sugar, white sugar, salt, cinnamon, and melted butter in a bowl. Mix until walnuts and sugar are thoroughly coated with butter.
- Cream butter and sugar together in another bowl with a spatula until well blended. Add 1 egg and whisk until mixture is smooth, 2 to 3 minutes. Whisk in second egg until thoroughly incorporated. Add vanilla extract and yogurt; whisk together. Add flour mixture to wet ingredients; whisk just until flour disappears. Do not overmix.
- Remove cores from apples. Cut across into 1/8- to 1/4-inch slices. Stack up a few slices, make 1 cut down the center, and dice across into cubes. Add to cake batter, folding in with a spatula until just combined.
- Spread 1/2 of the batter evenly into the bottom of the prepared baking dish. Scatter 1/2 of the crumble mixture evenly over the top. Top with the rest of the batter in dollops. Spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Press crumbs into the batter very gently.
- Bake in the center of the preheated oven until a toothpick or bamboo skewer inserted into the center comes out clean, about 40 minutes. Let cool to room temperature, about 30 minutes, before slicing and serving.

- In a mixing bowl, combine cake mix, butter and 1 egg until crumbly; reserve 1/2 cup.
- Press remaining crumb mixture into 8-inch square pan.
- Blend remaining egg with sour cream; spoon over crust.
- Stir apple filling with brown sugar and cinnamon, spoon over sour cream mixture.
- Sprinkle with reserved 1/2 cup crumb mixture.
- Bake at 350 for 40 minutes or until filling is bubbly and topping is lightly browned.
- Cool before serving.
APPLE CRUMB CAKE
My DH hates apple cakes and pies of all kinds but will eat this until I stop him and I love apple cake and pies of all kinds and will eat this until I stop myself; in other words everyone loves this cake. This is not a fluffy cake but a good heavy crumb cake with an almost cookie-like crust. The nice thing about this is that you really can use any kind of fresh or frozen fruit or any combination (except strawberries). My personal favorite is apple and apricot. It is especially good with a layer of fruit pie filling on top of the apples like cherry pie filling.

Steps:
- Combine all dough ingredients and mix with mixer until moist and crumbly (you can increase the oil 1 tablespoon at a time until you have the right consistency, sometimes I add a little bit of water too). Spread half of the crumb mixture into the bottoms of two 9" pans or one 10x13 pan.
- Layer the fruit filling over the crumb base.
- Cover the fruit with the remaining crumb dough.
- Bake in a 350 oven for approximately one to two hours or until nicely browned from edge to center. Enjoy!
