NO-BAKE ROCKY ROAD BARS



No-Bake Rocky Road Bars image

Cooking spray
One 14-ounce can sweetened condensed milk
8 ounces cream cheese
3 tablespoons salted butter
1 cup toasted, chopped pecans
1 cup toasted, chopped walnuts
8 full graham crackers (1 sleeve), broken into chunks
One 10-ounce bag mini marshmallows
3 cups semisweet chocolate chips
2 cups confectioners' sugar
1 cup (2 sticks) unsalted butter, softened
One 16-ounce jar marshmallow creme, such as Marshmallow Fluff

Steps:

  • For the bars: Line a 9-by-13-inch baking pan with parchment so that the edges fold over the sides of the pan. Spray with cooking spray.
  • Add the sweetened condensed milk, cream cheese and butter to a medium pot and place over low heat. Cook, whisking occasionally so the bottom does not brown, until melted and well combined, a few minutes.
  • Put the pecans, walnuts, graham crackers and marshmallows in a bowl; set aside.
  • When the cream cheese mixture has melted, whisk until well combined, and then remove from the heat. Fold in the chocolate chips and mix until all the chocolate is melted and the mixture is well combined.
  • Pour the chocolate mixture into the bowl with the graham cracker mixture. Pour the mixture into the prepared pan and place in the fridge for 1 to 1 1/2 hours to set.
  • For the quick marshmallow frosting: In the bowl of stand mixer fitted with the paddle attachment, beat the sugar and butter until creamy, a couple of minutes. Beat in the marshmallow creme.
  • Remove the set mixture from the pan. Cut into squares and frost with or dip in the marshmallow frosting. Keep refrigerated.

8 oz/230 g ((1 and 1/3 cups) chopped bittersweet or semi-sweet chocolate)
½ cup (1 stick/115 g) unsalted butter
1/2 teaspoon vanilla extract
1 and ½ cups miniature marshmallows ((if you only have large marshmallows, cut them into small pieces))
¾ cup (75 g) hazelnuts (or use your favorite - salted peanuts, walnuts, almonds, pecans)
¾ cup (75 g) digestive biscuits or cookies (any kind)

Steps:

  • Line an 8x8-inch baking pan with foil or parchment paper. Set aside.
  • In a medium heatproof bowl, combine chocolate and butter. Heat in the microwave for 30 seconds. Heat more, at 20-second intervals, stirring in between each interval, until melted. Stir in vanilla extract. Fold in marshmallows, nuts, and cookies.
  • Spread mixture into prepared pan. Refrigerate for at least 2 hours, or until set. Lift from pan using the foil or parchment paper, and cut into squares. Keep in the fridge. I like to take it out of the fridge 15 minutes before serving.

1 ounce unsweetened chocolate
1 cup sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 to 1 cup coarsely chopped toasted walnuts, pecans, or peanuts
1 teaspoon baking powder
6 ounces cream cheese, at room temperature
1/2 cup sugar
2 tablespoons all-purpose flour
1/4 cup (4 tablespoons) unsalted butter, at room temperature
1 egg, at room temperature
1/2 teaspoon vanilla extract
1/4 cup toated walnuts, pecans, or peanuts, coarsely chopped
1 cup semisweet chocolate chips
1/4 cup (4 tablespoons) unsalted butter
1 ounce unsweetened chocolate
2 ounces cream cheese
1/4 cup whole milk
1 cup confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees. Lightly grease and flour a 9x13-inch pan.
  • To make the first layer: Place the butter and chocolate in a small pan and cook over the lowest possible heat until almost all the chocolate has melted. Off heat, add the sugar, eggs, vanilla, flour, nuts, and baking powder and mix well. Press into the prepared pan and set aside.
  • To make the second layer: Place the cream cheese, sugar, flour, butter, egg, and vanilla in the bowl of a mixer fitter with a paddle and mix until smooth and fluffy. Scrape down the sides of the bowl, add the nuts, mix to combine, and spread over the first layer. Sprinkle with the chocolate chips and transfer to the oven. Bake until slightly golden on the edges, about 20 to 25 minutes.
  • Sprinkle the second layer with the marshmallows and return the pan to the oven until the marshmallows are just melted but not colored, about 3 minutes.
  • To make the frosting: Place the butter and chocolate in a small pan and cook over the lowest possible heat until almost all the chocolate has melted. Add the cream cheese and milk and mix until smooth. Add the confectioners' sugar and vanilla and mix until smooth. Immediately pour the frosting over the marshmallows and briefly swirl the two mixtures together. Cool in the pan and cut into 36 to 48 bars. Cover and refrigerate.

Forget the tortillas--this flaky, golden ring of crescent dough is packed with a cheesy chicken enchilada filling. Easily portable, this crowd-pleaser is perfect for parties.

2 1/2 cups shredded rotisserie chicken (skin and bones discarded)
1/2 cup jarred red enchilada sauce
1/4 cup sliced and drained pickled jalapenos, chopped
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 clove garlic, finely chopped
2 scallions, thinly sliced, white and green parts separated
Kosher salt
Nonstick cooking spray, for greasing the pan
Two 8-ounce tubes refrigerated crescent roll dough
1/2 cup shredded Mexican blend cheese
3 ounces pepper Jack cheese, cut in half (about 5 slices)
2 tablespoons unsalted butter, melted
Salsa, for serving
Sour cream, thinned with water, for serving

Steps:

  • Preheat the oven to 375 degrees F. Stir together the chicken, enchilada sauce, pickled jalapenos, chili powder, cumin, garlic, scallion whites and 1/2 teaspoon salt in a medium bowl. Set aside.
  • Coat the back of a baking sheet with cooking spray. Unroll both cans of crescent dough and separate unto 16 triangles. Put a 5-inch ramekin in the center of the prepared baking sheet. Arrange the triangles in a ring around the ramekin so the short sides of the dough are touching the ramekin, overlapping slightly, and the pointed ends are facing outward (it should look like a giant sun).
  • Spoon the chicken mixture over the short ends of the triangles closest to the ramekin. Sprinkle Mexican blend cheese on top of the chicken. Then top with the pepper Jack slices. Remove the ramekin. Take hold of the pointed end of one of the triangles and fold it up and over the filling, tucking the tip under the bottom edge of dough to secure (the dough will not cover the filling completely). Repeat with the remaining triangles (there will be some gaps where you can see the chicken mixture).
  • Bake until the dough is golden brown and the cheese is melted, about 25 minutes. Brush the dough with butter and sprinkle on the scallion greens. Let cool for 15 minutes. Use a spatula to slide the ring off the baking sheet onto a platter. Serve with salsa drizzled with thinned sour cream.

1/2 cup sugar
1/4 cup peanut butter
1 (8 ounce) package cream cheese, softened
1/2 cup corn syrup
1 teaspoon vanilla
1 egg
1 1/2 cups miniature marshmallows
3/4 cup salted peanuts or 3/4 cup other nuts, chopped
1 (6 ounce) package semi-sweet chocolate chips (1 cup)

Steps:

  • Heat oven to 375*.
  • Unroll dough into 2 long rectangles.
  • Place in ungreased 13x9" pan; press over bottom to form crust.
  • Firmly press perforations to seal.
  • Bake at 375 degrees for 5 minutes.
  • In medium bowl, combine sugar, peanut butter and cream cheese; blend until smooth.
  • Stir in corn syrup, vanilla and egg; mix well.
  • Pour mixture over partially baked crust; spread evenly.
  • Sprinkle with marshmallows, peanuts and chocolate chips.
  • Return to oven and bake an additional 25 to 30 minutes or until filling is firm to touch.
  • Cool completely.
  • Refrigerate 1 to 2 hours.
  • Cut into bars.
  • Store in refrigerator.
  • Enjoy!
