For a melt-in-your-mouth delicious main course at your next event, try these super-tender boneless ribs from our Test Kitchen. They're treated to a sweet apple juice, brown sugar and herb combination that's sure to have folks asking for seconds.

3/4 cup unsweetened apple juice
1/2 cup beer or nonalcoholic beer
1/2 cup canola oil
1/4 cup packed brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic
1 teaspoon salt
1 teaspoon dried thyme
1 teaspoon pepper
1/2 teaspoon cayenne pepper
3 pounds boneless country-style pork ribs

Steps:

  • In a small bowl, combine the first 10 ingredients. Pour 1-1/2 cups marinade into a large resealable plastic bag. Add pork; seal bag and turn to coat. Refrigerate 5 hours or overnight. Cover and refrigerate remaining marinade for basting., Prepare grill for indirect heat. Drain pork, discarding marinade in bag. Grill ribs, covered, over indirect medium heat for 10 minutes on each side. Baste with some of the reserved marinade. Grill 20-25 minutes longer or until ribs are tender, turning and basting occasionally. Freeze option: Freeze cooled ribs in heavy-duty foil. To use, partially thaw in refrigerator overnight. Place foil packet on a baking sheet and open packet. Reheat in a preheated 350° oven for 20-30 minutes or until heated through.

Apple Butter BBQ Ribs image

Ribs done low and slow either on the grill, oven or slow cooker! Ribs have a delicious rub and an extra-special bbq sauce.

1 slab (about 3-4 lbs pork baby back ribs)
1/2 cup brown sugar
1 tbs garlic powder
2 tsp onion powder
1/2 tsp thyme
1/2 tsp salt
1/4 tsp pepper
1/8 tsp cayenne pepper (optional)
1/2 cup GOOD BBQ sauce (like Sweet Baby Ray's)
1/4 cup apple butter

Steps:

  • Mix rub ingredients together in a small bowl. Set aside.
  • Prepare ribs by removing membrane covering the bone (silverskin) as this prevents the ribs from curling as they cook.
  • Rub all sides of the ribs with prepared rub. Place ribs in a large plastic bag and refrigerate overnight.
  • To prepare on the grill: You will cook the ribs on the UNLIT side of the grill, so place a drip pan under that grill rack. Light one side, close lid and preheat until internal grill temp is 300 degrees F. Place ribs on UNLIT side, close lid and cook for approximately 3 hours-or internal temp of ribs is 170 degrees F.
  • Brush with BBQ sauce and transfer to LIT side to crisp and brown the sauce.
  • Remove to a serving platter, cover with foil and let the ribs sit for 10-15 minutes. Cut into 2-rib portions.
  • To prepare in the oven: Preheat oven to 300 degrees F. Place ribs on a rack in a roasting pan. Roast for approximately 3 hours.
  • Brush with BBQ sauce and pop under the broiler for about 2 minutes each side. Continue as for grill method.
  • To prepare in slow cooker: Cut ribs in 2-rib portions to fit inside the crock. Cover and cook on HIGH for 3-5 hours (or until ribs are 170 degrees. Remove ribs and drain off any accumulated liquid in the crock. Wipe the crock dry with paper towels.
  • Place ribs back in crock and pour desired amount of BBQ sauce over ribs-I suggest no more than 1/2 cup as you want the flavor of the rub to come through and not be overshadowed by the strength of the BBQ sauce. Cover and cook on high about 30 minutes or until glazed.

2 racks pork spare ribs

Dry Rub:
1 tablespoon brown sugar
1 teaspoon cinnamon
2 tablespoons dried crushed thyme
1 teaspoon dried crushed marjoram
2 teaspoons dried crushed sage
2 tablespoons black pepper
2 tablespoons kosher salt

Steps:

  • Pat dry ribs with soft towel. Combine dry ingredients in a small container. Generously cover ribs with dry rub. Place in plastic bag and set in refrigerator for 6-24 hours. Let ribs return to room temperature before cooking (25 minutes). Fill smoke box with pre-soaked apple wood chips. Cover smoke box with layer of aluminum foil. Poke holes into the foil to release smoke. Fill water tray with cool water. Ignite smoker and set at medium heat. Cooking time is approximately 2-3 1/2 hours. Smoke until meat temperature reaches 130° F, then remove water pan and dry smoke until reaches 155° F. Ribs are done when 1/8" to 1/4" of bone end shows and the ribs separate easily.

  • Preheat the oven to 250°. In a bowl, mix 1/4 cup of the sugar with the garlic salt, chile powder, salt, black pepper, celery salt, cayenne, cinnamon and white pepper. Transfer 1 tablespoon of the spice mix to a medium bowl and whisk in the cider, apple jelly, honey and the remaining 1/4 cup of sugar.
  • Pull the membrane off the underside of each rib rack using a towel to grasp the corner. On a rimmed baking sheet, rub the ribs with the remaining spice mix; bake, meaty side up, for 2 1/2 hours. Pour the cider mixture over the ribs and turn to coat. Tightly cover with foil and bake for 1 hour.
  • Light a grill. Uncover the ribs and brush with the barbecue sauce; grill over moderate heat, turning and brushing, until glazed, 15 minutes. Let rest for 10 minutes, then cut between the bones and serve.

  • Begin by removing the thin membrane on the back of the ribs. Use a butter knife to lift a small corner of the membrane away from the bones, grip firmly with a paper towel, and pull slowly away from the rack.
  • Prepare your smoker for indirect smoking at 225 degrees F. I use apple wood for this recipe. Place the seasoned ribs on the smoker and close the lid. Leave them to smoke for 3 hours.
  • Tear off a large piece of aluminum foil and place it on a large working surface. Transfer the ribs to the foil bone side up so the bones don't tear through the foil. Sprinkle with the brown sugar, top with the butter cut into small pads, fold up the edges of the foil to create a slight bowl, and then pour the apple juice over the ribs. Once the liquid has settled, top with the sliced jalapenos. Tightly crimp the foil together to create an airtight seal. Repeat with the second rack.
