BASIC PIZZA SAUCE

Number Of Ingredients 9

1 can (28-ounces) whole peeled tomatoes, in juice
1 small white or sweet onion, finely diced and minced
1 clove garlic, peeled and minced
3 to 4 fresh basil leaves
1 teaspoon dried oregano
Pinch salt
Pinch fresh ground black pepper
Pinch sugar, optional
2 tablespoons olive oil, to saute

Steps:

  • Empty the contents of the tomato can in a mixing bowl and coarsely crush the tomatoes with a fork or your hands, leaving them just a little chunky. In a heavy bottom 2-quart saucepot, add the olive oil, over a medium high flame and heat a little. Add the onions and saute until slightly translucent. Add the garlic and saute about a minute until golden. Quickly add the crushed tomatoes to the mix. Stir well and bring to a simmer. Season with salt and pepper, to taste, and add the fresh basil and oregano. You can add a touch of sugar if desired or if tomatoes are tart. Simmer on a low flame, stirring often for at least 15 minutes. If not using right away, cool down and store in airtight container in the refrigerator, up to 1 week.

8 quarts thick tomato juice ((*pureed fresh tomatoes))
1 cup oil
2 cups sugar
1/3 cup salt
3 Tbsp dried parsley
4 Tbsp oregano flakes
5 Tbsp Italian seasoning
2 Tbsp red pepper flakes
3 Tbsp black pepper ((ground))
3 cloves garlic
2 cups white distilled vinegar
96 oz tomato paste (8 (12-ounce cans))

Steps:

  • To make pizza sauce: combine all the ingredients into a large 24-quart stockpot
  • Simmer for 1 hour, stirring occasionally to prevent the bottom from scorching.
  • Process in a boiling water bath for 15 minutes.

  • Open can and combine ingredients and stir until completely mixed.
  • If using Toppings on your pizza, you can go lighter on the sauce, but I can typically get two (2) 9" round pizzas or one (1) large rectangular sheet tray when making a Red Pizza.

We take pizza very seriously at our house, so I always try to have fresh homemade sauce on hand. One cup is the perfect amount for a 12-14 inch pie and it's easy to store a good supply using very little freezer space if you freeze it by the cup in 1-quart resealable bags and stack them flat on your freezer shelf.

1 tablespoon extra virgin olive oil
2 tablespoons garlic, minced
3 ounces anchovies
1 small jalapeno pepper, minced
1 green bell pepper, diced
1 onion, diced
2 stalks celery & leaves, diced
1 teaspoon salt
1 cup merlot
2 (28 ounce) cans crushed tomatoes
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 tablespoons fresh oregano
2 tablespoons fresh basil
2 tablespoons fresh thyme
2 tablespoons fresh marjoram
3 bay leaves

Steps:

  • Heat a large saucepan or Dutch oven over medium heat and add the olive oil. When it is hot, add the anchovies, garlic, and minced red pepper, Stir until the anchovies are about completely melted, keeping the heat low enough to prevent the garlic from browing. Add more EVOO if necessary.
  • Next, add the green bell pepper, onion, celery, and salt. Cook over medium-low heat until well wilted taking care not to let them brown, about 10 minutes. Again, add a little more EVOO if it appears too dry.
  • While the fragrants are cooking down, pile your fresh herbs on your cutting board, and with a chef's knife, chop them until very fine.
  • Add the remaining ingredients to the pan, stir until well mixed, and simmer over low heat until desired consistency, about one hour. Stir frequently to make sure the bottom doesn't scorch.
  • When it has cooked down to your preferred consistency, turn off the heat, remove the bay leaves and use a blender stick to smooth it out to a smoother texture, pureeing most of the larger pieces of vegetables.
  • Label and date 8 1-quart resealable bags. Using a 1-cup measuring cup, pour one cup of sauce into each bag, lay flat as you remove as much air as possible while sealing each bag. Stack flat in a pile on your freezer floor to store.

This is the best pizza sauce ever. You will never go back to store-bought again. It's perfect for making homemade pizzas, or as a dipping sauce for breadsticks or garlic bread.

3 tablespoons olive oil
½ teaspoon dried red pepper flakes
⅓ onion, chopped
5 cloves garlic, minced
1 teaspoon oregano
1 teaspoon dried basil
½ teaspoon dried parsley
1 ½ pounds Roma tomatoes

Steps:

  • Heat olive oil in a saucepan over medium heat and sprinkle with red pepper flakes. Add onions and cook until soft and translucent, about 5 minutes. Add garlic and cook until fragrant, 1 to 2 minutes. Season with oregano, basil, and parsley. Add Roma tomatoes, cover, and cook over medium-high heat for 3 to 5 minutes. Reduce heat to medium and continue to cook for 10 to 12 minutes.
  • Reduce heat to low and cook until sauce has a thick consistency and the flavors are well blended, about 15 more minutes.

For years, I had trouble finding a pizza sauce recipe my family liked, so I started making my own. The evening I served it to company and they asked for my recipe, I knew I'd finally got it right! 2 cans (15 ounces each) tomato sauce
1 can (12 ounces) tomato paste
1 tablespoon Italian seasoning
1 tablespoon dried oregano
1 to 2 teaspoons fennel seed, crushed
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • In a large saucepan over medium heat, combine tomato sauce and paste. Add remaining ingredients; mix well. Bring to a boil, stirring constantly. Reduce heat; cover and simmer for 1 hour, stirring occasionally. Cool. , Pour into jars or freezer containers, leaving 1/2-in. headspace. Freeze up to 12 months. Thaw frozen sauce in refrigerator before serving.

1 tablespoon butter
1/2 cup onion, chopped
1/4 cup celery, chopped
1 garlic clove, minced
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 tablespoons grated parmesan cheese
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon black pepper
1 small bay leaf
1 teaspoon fennel seed

Steps:

  • In a large skillet, melt butter with the oil. Add the onion, celery and garlic and saute until soft and transparent.
  • Add tomato sauce and tomato paste and stir until smooth.
  • Add remaining ingredients and bring to slow simmer.
  • Simmer for 30-60 minutes (or not at all depending on your taste and time frame).
  • Remove the bay leaf and spread the sauce on your prepared pizza dough.
