2 tablespoons olive oil
1/2 teaspoon finely minced garlic
1/4 pound peeled and deveined finely chopped shrimp
1 to 2 tablespoons white wine
1/2 cup or so soft fresh bread crumbs
1/2 ounce grated or finely sliced mozzarella cheese
2 teaspoons rinsed capers, chopped
2 to 4 basil leaves, scissored into threads
Salt and pepper
12 ounces swordfish cut into 6 thin slices
Lemon wedges for garnish
4 pitted black olives, sliced

Steps:

  • In a small skillet heat the olive oil. Add the garlic and shrimp and saute for a minute or just until the shrimp turns opaque. Add the white wine and boil down until evaporated. Sprinkle on fresh bread crumbs enough to hold the mixture together. Transfer to a bowl and stir in cheese, capers and basil; season with salt and pepper.
  • Preheat a grill or the oven to 375 degrees. Place the swordfish slices down on a work surface and season with salt and pepper. Sprinkle the shrimp stuffing over the slices, to within 1/2 inch of edge and pat into the fish. Roll up and tie into rolls or secure with tooth picks. (If this is too hard to handle, then put stuffing over one slice, and top it with other half like a sandwich; secure with toothpicks.) Thread 3 rolls on a long bamboo skewer (or put "sandwiches" on a baking sheet) bake (on a cookie sheet) or grill for 10 to 15 minutes or until flesh is firm to the touch. Serve immediately garnished with lemon and olives.

1 (5-ounce) lobster tail
12 shrimp, fresh or frozen, thawed
1 small bunch crab claws
1 cup Ritz cracker crumbs
Hungarian pepper
Salt
Pepper
1 pound large mushrooms
Olive oil
10 cloves garlic, chopped
1/4 cup green pepper, chopped
4 green onions, chopped
1 egg
1 cup water
1/4 pound melted butter
1 cup Monterey Jack cheese

Steps:

  • Preheat oven to 425 degrees F. BBQ or boil all seafood: lobster 5 to 10 minutes, shrimp 3 to 5 minutes, crab 3 minutes. Remove shells from the seafood and chop. Chop all seafood and set aside. Mix together Ritz cracker crumbs, Hungarian pepper, salt and pepper and set aside. Carefully remove the stems from the mushrooms, chop finely and set aside. Add olive oil to a saute pan and add garlic. After 1 minute, add the chopped green pepper and onion. Continue to saute for 2 to 3 minutes. Add chopped mushroom stems and saute until cooked. Saute over medium heat until the mixture is reduced. Add the seafood mixture and mix well. Remove from the heat and stir in the Ritz crumb mixture. In a separate bowl blend the egg and water. Add the egg/water mixture to the pan and mix well. Stuff each mushroom cap with a small portion of the seafood mixture. Brush with melted butter and top with cheese. Bake for 15 to 20 minutes, or until cheese is melted.

3 to 4 small yellow pickled chiles, halved
5 tablespoons Shrimp Stock, recipe follows
1/3 cup dry white wine
3/4 teaspoon salt
4 rainbow trout, each 12 inches long, boned
1/4 cup butter, softened
5 cups day-old sourdough bread crumbs
10 sprigs Italian parsley
3 lemons, cut into wedges
Salsa for fish, recipe follows
2 cups cold water
1 1/2 pounds jumbo, unshelled shrimp
1 garlic clove
1/4 teaspoon salt
5 cascabel chiles, seeded, and deveined
2 whole arbol chiles
1 large garlic clove, roasted and peeled
1 tablespoon minced white onion
1 1/2 teaspoons salt
1/2 teaspoon ground allspice
2 large tomatoes, roasted and quartered
1 teaspoon rice wine vinegar
1 tablespoon olive oil
12 cilantro sprigs, leaves minced

Steps:

  • Heat olive oil in a 14-inch skillet over medium heat. Quickly saute the minced garlic and onions. Add the tomatoes and saute for 5 minutes, or until the tomatoes soften. Add cinnamon, cloves, shrimp (reserved from the stock), olives, chiles, stock, wine, and salt, and then simmer until all the liquid in the stuffing is cooked off.
  • Preheat a grill to medium-high.
  • Spoon about 4 or more tablespoons of stuffing inside the cavity of each boned fish. Thread a large upholstery needle with a 15-inch length of cooking string. Knot the string, and sew the fish closed. Rub the fish with generous amounts of butter, and then roll it in bread crumbs. Wrap each fish twice over in parchment paper making sure to butter the side of the paper that will touch the fish. Wrap the fish up in the paper, firmly tying off each end with a bit of string. Repeat this procedure with each fish. Place the fish on the grill for about 15 minutes, turning fish about halfway through cooking. A rich aroma of shrimp and toasted bread will indicate when the fish is finished cooking.
  • Remove the parchment paper, snip away string, and promptly serve the fish on a platter with parsley sprigs and lemon wedges. Serve with the Salsa for Fish.
  • Pour 2 cups water into a 5-quart soup pot and bring to a boil. Add the unshelled shrimp, garlic, and salt. Reduce the heat to medium and simmer for 3 to 4 minutes. Remove the shrimp, cool, peel, and chop into small chunks. Reserve both the stock and shrimp for the stuffing.
  • Heat a dry heavy skillet over a medium flame and toast the chiles for 30 seconds or until the skin turns a dark red. Set aside. Place the garlic, onion, and salt in a food processor or blender and grind to a coarse consistency. Add the allspice and chiles and continue grinding until well blended. Add the tomatoes and grind them to a pulpy consistency. Pour the sauce into a serving bowl. Stir in rice wine vinegar, olive oil, and minced cilantro. Add 1 tablespoon warm water to thin, if needed.

Kosher salt
1/4 cup extra-virgin olive oil, plus more for drizzling
1 pound medium shrimp, peeled, deveined and tails removed
Freshly ground black pepper
8 ounces bay scallops or small sea scallops
12 ounces thin spaghetti
4 cloves garlic, thinly sliced
1/2 cup dry white wine
One 15-ounce can diced tomatoes
1/4 to 1/2 teaspoon crushed red pepper flakes
1/4 cup chopped fresh parsley
1/2 cup torn fresh basil leaves
Zest of 1 lemon, finely grated

Steps:

  • Bring a large pot of salted water to a boil.
  • Meanwhile, heat the olive oil in a large nonstick skillet over medium-high heat until it is shimmering. Season the shrimp with salt and pepper, add to the skillet and cook until lightly browned on both sides, about 3 minutes total; transfer to a plate. Season the scallops with salt and pepper, add to the skillet and cook undisturbed until nicely browned on the bottom, about 2 minutes. Give the scallops a quick stir and cook 1 minute, then transfer to the plate with the shrimp.
  • Add the spaghetti to the boiling water and cook according to the package directions for al dente. Strain, reserving 1/2 cup cooking water.
  • While the spaghetti cooks, reduce the heat to medium, add the garlic to the skillet and cook until softened and lightly browned, about 3 minutes. Add the wine and cook, stirring to scrape up any brown bits, until reduced by half, about 2 minutes. Add the tomatoes, red pepper flakes and 1/4 teaspoon salt and cook, stirring occasionally, until the sauce is slightly thickened, about 5 minutes. Add the pasta, shrimp, scallops and reserved cooking water and toss to combine. Continue cooking until the sauce coats the pasta and the seafood is heated through, about 2 minutes.
  • Turn off the heat, stir in the parsley and basil and divide among four serving bowls. Sprinkle with the lemon zest, drizzle with more olive oil if desired and serve.

1 1/2 pounds 15/20 count shrimp, peeled and deveined, tails on
2 tablespoons avocado or canola oil
1/2 teaspoon salt
1/4 teaspoon pepper
8 ounces lump crab meat
1/3 cup grated parmesan, separated
1/3 cup plain breadcrumbs
1/3 cup mayonnaise
1/3 cup green onions, sliced
1 large egg, slightly beaten
2 tablespoons diced pimientos, drained
2 tablespoons chopped parsley
1 teaspoon Old Bay Seasoning
Zest and juice of a lemon

Steps:

  • Preheat the oven to 400°F and have ready a rimmed baking sheet lined with either parchment paper or aluminum foil.
  • Pat the shrimp dry with a paper towel. Then, working with one shrimp at a time, lay it back-side down (a.k.a. leg-side up). Use a paring knife to make a small incision down the shrimp, from the start of the tail, cutting toward the head of the shrimp. Continue doing this until the shrimp is butterflied and can lay flat. Do your best not to cut all the way through the body of the shrimp.
  • Transfer the shrimp to a large bowl, drizzle with oil, sprinkle evenly with the salt and pepper, and very gently toss to coat. Transfer to the baking sheet and set aside.
  • In a medium-sized mixing bowl, combine the crab, parmesan cheese, plain breadcrumbs, mayonnaise, green onions, beaten egg, pimiento peppers, chopped parsley, Old Bay seasoning, lemon zest, and juice. Gently, fold the mixture together until well combined.
  • Add tablespoon-sized spoonfuls of the crab mixture on top of each shrimp, and bring up the tail, tucking it gently into the stuffing.
  • Bake for about 16-20 minutes, or until the shrimp are completely opaque and pink in color. Allow to cool slightly, serve and enjoy!

1 carrot, peeled and diced
2 celery stalks, diced
1 leek, diced
2 tablespoons olive oil
1 sachet, thyme, bay leaf, black peppercorns
2 cups red lentils, soaked
5 cups chicken stock
2 tablespoons glace de viande, concentrated veal stock
3 ounces yellow crab
1 teaspoon thyme, chopped
1 1/2 cups Tangelo orange juice
1 tablespoon Tangelo orange zest
2 cups cider vinegar
2 cups unrefined sugar
2 tablespoons molasses
1 sachet, thyme, bay leaf, black peppercorns
2 cardamom pods, whole
6 cascabel chiles, toasted and seeded
1 tablespoon grapeseed oil
One 6-ounce yellowtail snapper
2 tablespoons butter
2 shallots, peeled and shaved

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small pan saute the onions, carrots, celery, and leeks in olive oil until tender. Add the sachet and red lentils to the Sauteed vegetables and stir together. Add the chicken stock, glace de viande, crabmeat, and thyme into the pan, and stir until well mixed. Transfer all ingredients into an ovenproof dish and place in the oven for approximately 1 hour or until lentils are tender.
  • To make the glaze, combine all of the ingredients in a small pot. Slowly reduce the liquid and aromatics until it becomes a syrup and set aside.
  • In a small saute pan over medium heat, coat the bottom with the grapeseed oil. Place the snapper skin side down and sear for approximately 2 minutes. Turn fish and place butter and shallots on the skin side. Finish fish under a salamander or broiler basting it with butter.
  • To serve, place some of the red lentil cassoulet in the center of each plate. Place the snapper in the center and drizzle the glaze around the fish and lentils.

Drain and rinse pasta; stuff each shell with 1 rounded tablespoon of seafood mixture. Place in a greased 13x9-in. baking dish. , In a small saucepan, melt remaining butter over medium heat. Whisk in flour and coarsely ground pepper; gradually whisk in remaining milk. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in Parmesan cheese., Pour over stuffed shells. Sprinkle with remaining seafood seasoning. Bake, uncovered, 30-35 minutes or until bubbly.

144 Ritz cracker crumbs (4 sleeves)
2 cups salted butter (4 sticks)
1 onion
5 pressed garlic cloves
6 tablespoons olive oil
1/2 lb shrimp
1/2 lb bay scallop
1 lb baby clams
1/2 lb imitation crabmeat
2 chopped lobster tails (optional)

Steps:

  • Drizzle olive oil diagonally across 8 1/2 x 11" pan.
  • Divide 1 butter stick into approximately 9 pads of butter and scatter over the bottom of the pan.
  • Divide haddock into 1" thick pieces and layer above pads of butter leaving minimal spacing in the pan.
  • Layer with Ritz Stuffing Mix* #1.
  • (Will be needing 2 mixes).
  • Stuffing Mix*:.
  • 2 sleeves Ritz Crackers (crumbs) set aside in a mixing bowl.
  • In a small pan, saute 2 Tablespoons Olive Oil, 1 stick of butter, 3 Tablespoons chopped onion and 2 pressed garlic cloves. When onions appear "clear", pour liquid mixture into mixing bowl containing cracker crumbs and mix well coating all crumbs.
  • In a family size skillet pan, saute 2 Tablespoons Olive Oil, 1 stick of butter, 3 Tablespoons chopped onion and 3 pressed garlic cloves along with 1/2 pound shrimp, 1/2 pound bay scallops, 1/2 pound cubed imitation crabmeat, 1 pound whole baby clams (and optional 2 chopped lobster tails), if you have any leftover haddock, cut into smaller pieces and add to skillet as well. Let simmer on medium low for about 15 minutes and layer seafood mixture next into the pan.
  • Add your second and final layer of Ritz Stuffing Mix*.
  • Cover with foil and bake at 350°F for 60 minutes.
  • Enjoy!
