ROAST CHICKEN RECIPE BY TASTY

Roast Chicken Recipe by Tasty image

Here's what you need: whole chicken, kosher salt, freshly ground black pepper

Provided by Matt Ciampa

Categories     Dinner

Yield 4 servings

Number Of Ingredients 3

4 lb whole chicken
kosher salt, to taste
freshly ground black pepper, to taste

Steps:

  • Remove the giblets from the chicken cavity. Pat the chicken dry all over with paper towels, including the cavity.
  • Generously season the entire chicken with salt and pepper. With the tip of a toothpick, poke the skin of the chicken all over, creating at least 20 tiny holes.
  • Transfer the chicken to a rimmed baking dish and let sit in the refrigerator, uncovered, for 8-12 hours.
  • Preheat the oven to 450˚F (230˚C).
  • Remove the chicken from the refrigerator and let it warm to room temperature for 1 hour.
  • Truss the chicken legs. Using butcher's twine, tie the legs together, then slip the twine under each leg, pull up to the top of the chicken, and flip the bird over. Pull the twine under the wings, loop around the neck, and then tie to secure and cut off any excess twine. Flip the bird over again and tuck the wings under the breasts.
  • Set the chicken, breast-side up, on a roasting rack set over a roasting pan.
  • Roast for 1 hour, or until a meat thermometer inserted in the thickest part of the chicken reaches 165˚F (75˚C).
  • Let the chicken rest at room temperature for 20 minutes.
  • To carve, remove the twine. Using a sharp knife, cut between the leg and the breast. When you reach the joint, bend it back and cut right through. Twist off the wings. To remove the breasts, cut straight down along the keel bone. Then, angling your knife outward, remove the breast. Break the legs down into thighs and drumsticks, if desired. Pull off the oysters from the underside of the chicken.
  • If you'd like, make chicken stock from the carcass. Add the carcass to a large pot with onions, celery, carrots, garlic, and other aromatics of your choice. Cover with water and bring to a boil over high heat. Reduce the heat to low and simmer for about 8 hours, skimming off the fat as needed. Store in the fridge for a few days or freeze for a few months.
  • Enjoy!

ROASTED SPATCHCOCK CHICKEN AND GIBLET GRAVY RECIPE BY TASTY

Roasted Spatchcock Chicken And Giblet Gravy Recipe by Tasty image

Meiko Temple shows us how to make the perfect roasted chicken. She starts by spatchcocking the bird so it cooks more evenly and gets browned all over. Then she rubs a homemade adobo seasoning all over to tenderize the meat and add tons of flavor. She pairs her roasted chicken with savory giblet gravy so nothing goes to waste. Bonus tip: Save any bones to turn into chicken stock the following day!

Provided by Matt Ciampa

Categories     Dinner

Time 3h5m

Yield 4 servings

Number Of Ingredients 19

nonstick cooking spray, for greasing
4 lb whole air-chilled chicken with giblets
4 tablespoons clarified butter, room temperature
1 teaspoon ground turmeric
2 teaspoons dried oregano
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons ground black pepper
4 teaspoons kosher salt, (1 teaspoon per pound of chicken)
water, as needed
3 tablespoons unsalted butter
1 medium yellow onion, chopped
4 cloves garlic, chopped
3 tablespoons unbleached all-purpose flour
2 cups chicken stock
2 tablespoons worcestershire sauce
2 bay leaves
kosher salt, to taste
freshly ground black pepper, to taste

Steps:

  • Set a wire rack over a rimmed baking sheet and grease with nonstick spray.
  • Remove the giblet bag from inside the chicken and set aside. Place the chicken on a cutting board, breast-side down. Use kitchen shears or a sharp knife to cut along each side of the backbone to remove (set aside to make stock, if desired). Flip the chicken over and splay the thighs. Stack your hands between the breasts and press down firmly to flatten until you hear the breastbone crack.
  • Make the adobo seasoning: In a small bowl, mix together the turmeric, oregano, onion powder, garlic powder, pepper, and salt.
  • Pat the chicken dry with paper towels. Turn the chicken breast-side down and liberally season the back cavity with half of the adobo seasoning, rubbing into the crevices.
  • Flip the bird over. Use a metal skewer to poke the chicken skin all over. Carefully use your fingers to separate the skin from the meat over the breasts and thighs. Rub the clarified butter under the chicken skin, using your fingertips over the skin to spread the butter evenly. Sprinkle the remaining adobo seasoning over the chicken skin.
  • Set the chicken on the wire rack. Chill in the refrigerator, uncovered, for 1-24 hours.
  • Before roasting, remove the chicken from the refrigerator and let come to room temperature for 45 minutes.
  • Preheat the oven 475°F (245°C).
  • Transfer the chicken to the oven and roast for about 50 minutes, or until an instant-read thermometer registers 165°F (75°C) when inserted into the thickest part of the thigh and the skin is golden brown. Remove the chicken from the oven and let rest for about 10 minutes.
  • Meanwhile, make the giblet gravy: Remove the giblets from the bag and separate the meat from any skin, fat, or bones. Add the giblets to a medium saucepan with enough water to cover by 1 inch. Cook over medium heat until the giblets are tender, about 20 minutes. Remove from the pan, draining any excess water, and finely chop the meat. Clean the pan.
  • Melt the butter in the same saucepan over medium heat. Add the onion and garlic and cook until softened, about 1 minute. Sprinkle in the flour and cook, stirring continuously, for 2-3 minutes, or until golden brown.
  • Stir in the chopped giblets. Slowly pour in the chicken stock, whisking constantly, until the flour is dissolved, then whisk in the Worcestershire sauce, scraping up any browned bits from the bottom of the pan.
  • Bring the gravy to a boil and add the bay leaves, then reduce the heat to low and cook until the gravy is thickened, 5-7 minutes. Season with salt and pepper to taste.
  • To carve the chicken, pull the legs away from the body then cut through the joint to release. Cut along the breast bone to remove the breasts on either side. Cut off the wings. Reserve the carcass along with the backbone for making chicken stock, if desired.
  • Pour the gravy over the chicken and serve warm.
  • Enjoy!

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 3

One 3 1/2- to 4-pound whole chicken
Kosher salt and freshly ground black pepper
6 fresh thyme sprigs

Steps:

  • Preheat the oven to 450 degrees F.
  • Lay the chicken on a cutting board breast-side down, with the legs closest to you. Use kitchen shears to cut out the backbone. Open the chicken like a book to reveal the ribs and sternum. Season the chicken all over with 2 teaspoons salt and a generous amount of pepper.
  • Lay the thyme sprigs in the center of a rimmed baking sheet and place the chicken on top, skin-side up. Roast the chicken until the skin is golden brown and an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F, about 40 minutes.
  • Let the chicken rest 5 minutes before serving.

OLD BAY TURKEY BOIL RECIPE BY TASTY

Old Bay Turkey Boil Recipe by Tasty image

Spice up your Thanksgiving turkey with some Old Bay seasoning! Whether you serve it whole or serve it sliced, it's sure to be a centerpiece that will have your friends and family fighting for seconds. They'll be grateful for this gravy, too.

Provided by Betsy Carter

Categories     Dinner

Time 15h

Yield 12 servings

Number Of Ingredients 26

¼ cup kosher salt
¼ cup Old Bay® seasoning, plus 2 tablespoons
3 tablespoons light brown sugar
15 lb turkey, innards removed and discarded
24 oz pilsner, or light beer, divided
2 cups unsalted butter, softened
2 tablespoons Old Bay® seasoning
¼ cup fresh flat-leaf parsley, finely chopped
3 small yellow onions
2 lb red potato, halved
3 heads garlic, halved crosswise
3 lemons, halved crosswise
1 cup Old Bay® seasoning
¼ cup kosher salt
120 oz pilsner, or light beer
4 cups water
8 corns, halved crosswise
1 lb andouille sausage, cut into 3-inch pieces
¼ cup unsalted butter
¼ cup all purpose flour
3 cups reserved turkey drippings, fat separated and discarded, warmed, or chicken stock
12 oz pilsner, or light beer
kosher salt, to taste
black pepper, freshly ground, to taste
large roasting pan with rack
kitchen twine

Steps:

  • Make the dry brine: In a small bowl, combine the salt, Old Bay seasoning, and brown sugar and mix well to incorporate.
  • Prep the turkey: Place a wire rack inside a baking sheet. Set the turkey on the wire rack and pat all over with paper towels until completely dry. Use your hands to sprinkle the dry brine all over the turkey, pressing it into the skin and crevices. Let the turkey sit, uncovered, in the refrigerator for at least 12 hours, or up to 48 hours.
  • Make the compound butter: In a medium bowl, combine the butter, Old Bay seasoning, and parsley. Using an electric hand mixer on low speed or a rubber spatula, mix until well-combined. Set aside until ready to use. The compound butter can be stored in an airtight container in the refrigerator for up to 5 days. Bring back to room temperature before using.
  • After brining, remove the turkey from the refrigerator and let sit at room temperature for 2-3 hours before cooking.
  • Arrange a rack in the lower middle section of the oven. Preheat the oven to 450°F (220°C). Set a v-shaped rack inside a roasting pan.
  • With your hands, gently loosen the turkey skin, starting from the top of the cavity and working your way toward the breasts and down toward the legs. Rub about a third of the compound butter over the bird, then rub another third underneath the skin. Reserve the remaining compound butter for basting the turkey.
  • Grab the turkey by the legs and carefully transfer to the prepared roasting pan with the breast side up. Tie the legs together with kitchen twine, then tuck the wings underneath the turkey. Pour 2 cans of beer into the bottom of the roasting pan.
  • Roast the turkey for 30 minutes, rotating halfway, until the skin is mostly golden brown.
  • While the turkey roasts, melt the remaining compound butter in a small saucepan over low heat.
  • After roasting for 30 minutes, baste the turkey with melted butter and reduce the oven temperature to 300°F (150°C). If the bottom of the pan looks dry, pour in 1-2 more cans of beer. Continue roasting, basting and rotating the turkey every 30 minutes, until a meat thermometer inserted in the thickest part of the leg reaches 165°F (75°C), 1½-2 hours. The skin should be shiny, crisp and golden brown. Remove the turkey from the oven and baste once more. Let rest for 30-60 minutes. Reserve the drippings, discarding the fat, for making the gravy.
  • While the turkey rests, make the Old Bay boil: In a very large stock pot, combine the onions, potatoes, garlic, lemons, Old Bay seasoning, salt, beer, and water and bring to a boil over medium-high heat. Once boiling, add the corn and sausage. Reduce the heat to medium and simmer for 20-30 minutes, until the sausage is cooked through and the potatoes and corn are tender. Using a spider or a large slotted spoon, remove the solids from the pot and spread in a single layer on a baking sheet. Discard the cooking liquid.
  • Make the Pilsner gravy: Melt the butter in a medium saucepan over medium heat. Add the flour and cook, whisking frequently, for 2-3 minutes, until the roux is a golden blonde in color and smells fragrant and toasted. Gradually whisk in the turkey drippings (adding chicken stock as needed for a total of 3 cups) and beer. Bring to a boil, then reduce the heat to medium-low and simmer for 10-15 minutes, until thickened slightly. Remove the gravy from heat and season with salt and pepper to taste.
  • To serve, arrange the corn, potatoes, sausage, onions, garlic, and lemons around the edges of a large platter. Set the whole turkey in the center for a classic presentation, or carve the bird and arrange the cut pieces in the center of the platter. Serve immediately with the hot gravy alongside.
  • Enjoy!

PRIME RIB WITH GARLIC HERB BUTTER RECIPE BY TASTY

Prime Rib With Garlic Herb Butter Recipe by Tasty image

Here's what you need: butter, garlic, fresh rosemary, fresh thyme, salt, pepper, boneless ribeye roast, flour, beef stock, mashed potato, green bean

Provided by Alvin Zhou

Categories     Dinner

Yield 7 servings

Number Of Ingredients 11

1 cup butter, softened
7 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
2 tablespoons fresh thyme, finely chopped
2 tablespoons salt
1 tablespoon pepper
5 lb boneless ribeye roast, trimmed
2 tablespoons flour
2 cups beef stock
mashed potato, to serve
green bean, to serve

Steps:

  • Preheat oven to 500°F (260°C).
  • Mix together the butter, garlic, herbs, salt, and pepper in a bowl until evenly combined.
  • Rub the herb butter all over the rib roast, then place on a roasting tray with a rack.
  • Bake for 5 minutes per pound (10 minutes per kilo) of meat, so a 5-pound (2.2 kg) roast would bake for 25 minutes.
  • Turn off the heat and let the rib roast sit in the oven for 2 hours, making sure you do not open the oven door or else the residual heat will escape.
  • Once the 2 hours are up, remove the roast from the pan and pour the pan drippings into a saucepan over medium heat.
  • Add the flour, whisking until there are no lumps, then add the beef stock, stirring and bringing the sauce to a boil.
  • Remove from heat and strain the sauce into a gravy dish.
  • Carve the prime rib into ¾-inch (20 mm) slices.
  • Serve with the mashed potatoes, green beans, and sauce!
  • Enjoy!
