ROASTED CHICKEN WITH FRIED RICE STUFFING AND SCALLION OIL
Steps:
- Pre-heat oven to 550 degrees. Rub chicken with oil, then salt and pepper. Place chicken, breast side up, in the oven and cook for about 25 minutes or until golden brown. May have to rotate the chicken for even coloring. As chicken is cooking, in a saute pan, add a little oil and quickly brown the garlic, ginger, scallions and jalapeno. Add mixture to cooled rice. Rice should end up a bit sticky. Check for seasoning. When chicken is fully browned, stuff with rice and turn the oven down to 300 degrees. Cover with foil to prevent burning. Chicken will take another 45 to 55 minutes. Chicken is done when one can move the wing back and forth with great ease. Allow chicken to rest for 10 minutes before serving.
- In a pot of boiling, well salted water, blanch scallion and spinach for 30 seconds and shock in ice bath. Squeeze out water and place in blender cup with salt and sugar. With blender on high speed, add canola oil in a steady stream. Blend for 5 minutes until cup gets slightly warm. This oil may be done a day in advance and will keep in the refrigerator for at least 1 week.

- I firstly always rinse my chicken and put it on the side for about 10 min while you make the rice stuffing take your rice and cook it in a high temp on stove top for aprox,, 5 min( the rest will cook in the oven ) take your ground chicken and fry it on the stove top add this too the rice when done as well as these othe rtwo products about 1/8th of the canned corn dice up one of the 5 carrots very fine do the same with celery. take this stuffing and mix it well before stuffing your chick too the gills ( ha ha bad joke)
- now that your chicken is stuffed effectivley take the two lenonds and slice them in half ..squeeeese all the juice you can get from them and pour 1.5 of it in side the chicken where the stuffing is . the rest smother it on top of the chicken skin add your grounded ginger , and poultry seasoning put the chicken in a ell sisd roasting pan , and add 1 cup water at first i like too add my potatoes and beets caroots and celery in the pot as well as a whole onion so that it cooks together or, u can make a huge mess in the kitchen and make each side seperatley..on the stove top about 30 min before the chicken is done..
- place it in the oven at 350 ferenheight for 30 min, reduce the heat too 200 degree ferenheight for the remainder of the 3 hours in the 3 hours , each half hour add a 1/3 cup of wine and drizzle it on with love . baste it as well
- when all is done . scoop out the rice , tenderly with thongs pick up the veggies on the side of the chicken and place them nice on a platter . the rice in a heat perserving type bowl . and loveingly serve the family or guest you ar inspiring .... eat well , bonna apetitto... a votre sante , salute , salute. and all the good things in life. cheers.
ROAST CHICKEN WITH RICE AND PINE NUT STUFFING
Whole chickens are so easy to make and really look impressive on the dinner table. This recipe creates a well-seasoned and juicy chicken with a wonderfully flavorful stuffing. I have made this recipe a number of times over the years and have always had outstanding results and raves. I found the recipe in 365 Ways to Cook Chicken. Sometimes I add cooking wine to the water that the rice cooks in.... otherwise I really don't need to change a thing. --Note-- This Chicken makes an Outstanding Chicken Salad for sandwiches the next day. Simply mix the left over chicken and stuffing with mayonnaise. It is hard to get the chicken salad onto the bread without eating it all before hand!

- Preheat oven to 375; Rinse Chicken and pat dry; Season inside and out with ½ Teaspoon Salt and ¼ Teaspoon Pepper: Coarsely Chop Giblets.

LEMON-GINGER CHICKEN WITH ROASTED ROOT VEGETABLES

- Preheat oven to 425°F. Whisk first 6 ingredients in small bowl. Rinse chickens inside and out; pat dry. Rub oil mixture in cavities and over outside of chickens. Tie legs together with string to hold shape. Tuck wing tips under. Place chickens on rack set in large roasting pan. Roast chickens until juices run clear when thigh is pierced or until thermometer inserted into thickest part of thigh registers 180°F, about 1 hour 15 minutes.
- Transfer chickens to platter. Pour pan juices into medium bowl; spoon off fat and discard. Drizzle juices over chickens. Surround chickens with Roasted Root Vegetables. Sprinkle vegetables with parsley.
LEMON ROAST CHICKEN WITH CHORIZO STUFFING

- Heat oven to 200C/180C fan/gas 6. Lay the sliced onions in the middle of a roasting tin. Mix the oil with 2 tsp paprika and leaves from one of the thyme sprigs. Rub all over the chicken, sit it on top of the onions and season well. Push 3 of the lemon halves inside the cavity, cover the chicken loosely with foil and roast for 45 mins.
- Meanwhile, make the stuffing. Cook the diced chorizo over a low-medium heat until crisp and plenty of oil has collected in the pan. Scoop out the chorizo to cool, and tip the chopped onions into the pan. Soften gently for 15-20 mins, then tip into a bowl to cool.
- Rub together the cooking chorizo meat and the breadcrumbs, as if you were rubbing butter into flour to make pastry. When the breadcrumbs are all orange, mix in the cooked chorizo and onions, apricots, parsley, leaves from another thyme sprig, remaining paprika, the lemon zest and egg. Squeeze over the juice from the remaining lemon half, season with lots of pepper, then use your hands to squish everything together really well.
- Grease a small roasting tin and push in the stuffing, roughing up the surface with a fork - this will create lots of crispy bits. Tear over the remaining thyme sprigs.
- After 45 mins, remove the foil from the chicken and pour the wine and stock into the tin. Reduce oven to 180C/160C fan/ gas 4 and put the chicken back in with the stuffing on a shelf below. Roast for another 45 mins until the juices between the legs and body run clear.
- Rest the chicken for 15 mins while you bubble the pan juices to reduce a little, then carve and serve with the stuffing, reduced juices, and sautéed potatoes and steamed broccoli, if you like.

- Preheat your oven to 425 and prepare a roasting pan with a rack if desired as it will make your life a lot easier when you remove the chicken from the pan. I also like to use parchment paper on my pan for an easier clean up.
- If you have not already done this, remove the giblets and prep your chicken as indicated above (rinse etc).
- In a medium bowl, whisk together the grated ginger, lemon juice, olive oil and desired seasonings. Then brush this mixture over the chicken. Some folks like to also apply some under the skin and also inside of the chicken.
