POTATO LEEK SOUP



Potato Leek Soup image

Comforting, easy, and great for leftovers, this hearty potato leek soup is the perfect dinner contender for most situations and moods life throws at you.

3 tbsp. olive oil
3 tbsp. unsalted butter
3 medium russet potatoes (about 2 1/4 lb.), peeled and chopped
3 leeks, white and light green parts only, thinly sliced
3 celery stalks, chopped, plus yellow leaves for garnish (optional)
3 garlic cloves, finely chopped
6 c. chicken broth
6 sprigs fresh thyme
1 1/2 tsp. kosher salt, plus more to taste
3/4 tsp. ground black pepper, plus more to taste
1 c. heavy cream, plus more for drizzling
Hot sauce and fried onions, optional

Steps:

  • In a medium Dutch oven, heat the oil and butter over medium heat. Add the potatoes, leeks and celery. Cook, stirring, until the leeks are tender, 6 to 8 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds.
  • Stir in the chicken broth, thyme sprigs, salt and pepper. Bring to a simmer over medium-high heat. Reduce the heat to medium-low and cook, uncovered, until the potatoes are tender, 15 to 20 minutes.
  • Remove the thyme sprigs. Transfer about 4 cups of the soup to a blender. Remove the top insert from the lid and cover with a kitchen towel. Puree until smooth, 30 seconds. Add to Dutch oven with the remaining chunky soup. Stir in the cream and cook over medium-low heat, stirring, until the soup is slightly thickened, 10 to 15 minutes.
  • Season the soup with more salt and pepper. Garnish with celery leaves, hot sauce, prepared fried onions and another drizzle of heavy cream, if you like.

2 lbs yukon gold potatoes, peeled and cut into 3/4-inch chunks
4 cups chopped leeks, white and light green parts, cleaned of all sand (4 leeks)
1/4 cup olive oil
kosher salt & freshly ground black pepper
3 cups baby arugula, lightly packed
1/2 cup dry white wine, plus extra for serving
6 -7 cups chicken stock, preferably homemade
3/4 cup heavy cream
8 ounces creme fraiche
1/4 cup freshly grated parmesan cheese, plus extra (to garnish)
crispy shallot (see under separate Crispy Shallots ( Ina Garten Back to Basics) Crisy Shallots for it ) (optional)

Steps:

  • Preheat oven to 400 degrees.
  • Combine the potatoes and leeks on a sheet pan in a single layer. Add the olive oil, 1 teaspoon salt and 1/2 teaspoon pepper and toss to coat the vegetables evenly. Roast for 40-45 minutes, turning them with a spatula a few times during cooking, until very tender. Add the arugula and toss to combine. Roast for 4-5 more minutes, until the arugula is wilted. Remove the pan from the oven and place over two burners. Stir in the wine and 1 cup of the chicken stock and cook over low heat, scraping up any crispy roasted bits sticking to the pan.
  • In batches, transfer the roasted vegetables to a food processor fitted with the steel blade, adding the pan liquid and about 5 cups of the chicken stock to make a puree. Pour the puree into a large pot or Dutch oven. Continue to puree the vegetables in batches until they're all done and combined in the large pot. Add enough of the remaining 1 to 2 cups of stock to make a thick soup. Add the cream, cream fraiche, 2 teaspoons salt and 1 teaspoon pepper and check the seasonings.
  • When ready to serve, reheat the soup gently and whisk in 2 tablespoons white wine and the Parmesan cheese. Serve hot with an extra grating of Parmesan cheese and Crispy Shallots, if using.

2 lbs potatoes, peeled and cut into chunks
3 medium carrots, peeled and cut into chunks
1 large leek, sliced
6 garlic cloves, skins left on
1/3 cup olive oil
1 teaspoon salt
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon cayenne (to taste)
1/4 teaspoon black pepper
1 pinch cinnamon
6 cups vegetable broth

Steps:

  • Heat oven to 400º F. Place all veggies on a large baking tray.
  • Drizzle olive oil over all. Sprinkle spices over all. Toss the veggies to thoroughly coat with oil and seasonings.
  • Bake for 30 minutes, or until veggies are fork tender - this can be done early in the day.
  • Place the roasted veggies in a large stock pot. I pop the garlic cloves out of their papery skins at this point. Cover with veggie broth. Using an immersion blender puree the vegetables. Add broth until your soup is the desired consistency. Heat through and serve.

Stir the shallots occasionally to make sure they brown evenly. Remove them from the oil with a slotted spoon, drain well, and spread out to cool on paper towels. Once they have dried and crisped, they can be stored at room temperature, covered, for several days.

6 bacon strips, diced
3 cups cubed peeled potatoes
1 small carrot, grated
1/2 cup chopped onion

3 tablespoons all-purpose flour

4 heads garlic, unpeeled
1/4 cup olive oil
6 tablespoons unsalted butter
4 leeks, white part only, about 4 cups sliced, rinsed very good (save green tops and the root ends for stock can be frozen)
1 onion, diced
1/4 cup all-purpose flour
4 cups vegetable stock
1/3 cup dry sherry
1 cup whipping cream
fresh lemon juice
salt
lots of fresh white pepper
2 garlic cloves, sliced very thinly
2 tablespoons olive oil
chives, minced

Steps:

  • Preheat oven to 350°F.
  • Cut off top 1/4 inch of each garlic head.
  • Place garlic heads in small shallow baking dish.
  • Drizzle oil over.
  • Season with salt and pepper.
  • Bake until golden, about 1 hour.
  • Cool slightly.
  • Press individual garlic cloves between thumb and finger to release garlic, Should be like butter.
  • Chop garlic.
  • Melt butter in heavy large saucepan over medium heat.
  • Add leeks and onion and saute until onion is translucent, about 8 minutes add garlic.
  • Reduce heat to low.
  • Add flour and cook 5 minutes, stirring occasionally.
  • Stir in hot stock and Sherry.
  • Simmer 20 minutes, stirring occasionally.
  • Cool slightly.
  • Puree soup in batches in blender or processor.
  • Return soup to saucepan.
  • Add cream and simmer until thickened, about 10 minutes.
  • Meanwhile.
  • Heat olive oil then quickly saute garlic slices till crisp and tan.
  • Add lemon juice to taste.
  • Season with salt and white pepper.
  • Ladle into bowls.
  • Garnish with fried garlic slices and minced chives.

I made the garlic soup and enjoyed it, but decided I'd rather have something else in it rather than having to put bread in the soup to make it feel like it had substance. So I took what I knew of the garlic soup and I took what I knew of leek soup and a smashed them together.

1 head garlic
3 garlic cloves, chopped
2 large leeks
1 lb red potatoes
1 quart chicken stock
3 cups water
3 tablespoons olive oil
1/2 teaspoon salt

  • Cut top off of head of garlic and place in foil. cover with olive oil and salt and pepper. Wrap garlic and roast at 400°F until very lightly golden. set aside to cool.
  • Chop cloves of garlic and slice white and light green parts of leeks. heat a table spoon or two of olive oil in a stock pot and add chopped garlic and sliced leeks. Sauté until soft. Cut potatoes into small wedges and add to the pot. sauté for just a few seconds and salt and pepper. Cover with water. Add half of the qt of chicken stock. from here, you add water and stock to taste.
  • Squeeze roasted garlic out of the head/clove pods and into the stock pot with the soup. Smash any large pieces. Bring soup to a boil.
  • Turn heat down to simmer until potatoes are soft. Salt, and pepper to taste. Add any other herbs or spices at this time (thyme is always lovely with chicken stock).
