ROASTED CHIPOTLE BUTTERNUT SQUASH, BLACK BEANS, AND GOAT CHEESE TOSTADAS



Roasted Chipotle Butternut Squash, Black Beans, and Goat Cheese Tostadas image

Butternut Squash
2 cups 1/4" cubed butternut squash
1/2 cup diced red onion
1 tablespoon olive oil
1-2 teaspoon crushed dried chipotle peppers (see note)
1/4 teaspoon salt
Beans
3/4 cup black beans, with liquid
1 tablespoon lime juice
2 teaspoons honey
1/2 teaspoon cumin
2 tablespoons minced cilantro
Everything Else
4 to 6, 6" corn tortillas
2-3 ounces crumbled goat cheese
Cilantro, for topping

Steps:

  • Preheat oven to 425˚.
  • Toss butternut squash with onion, olive oil, chipotle pepper, and salt. Spread in a single layer on a sheet tray covered with parchment paper. Roast for 20-25 minutes or until squash is tender and beginning to brown.
  • In a small sauce pan, combine black beans with liquid, lime juice, honey, and cumin. Cook over medium-low until the liquid has mostly evaporated, 4 to 5 minutes (may take less or more time depending on how much liquid there was). Remove from heat and stir in the cilantro.
  • Place the tortillas on a sheet tray and divide black bean mixture evenly. Top with butternut squash and finish with a sprinkle of goat cheese. Bake for 10 to 15 minutes until tortilla is crisp and goat cheese is browning. Serve with a sprinkle of cilantro.

A hearty vegetarian enchilada filled with roasted squash, goat cheese, and black beans. Chipotle chile powder adds a great smoky heat to this dish.

4 cups peeled and diced butternut squash
½ onion, diced
2 tablespoons olive oil
5 cloves garlic, minced
2 teaspoons chipotle powder
½ teaspoon kosher salt
cooking spray
1 (15 ounce) can black beans, rinsed and drained
3 ounces crumbled goat cheese
1 (14 ounce) can enchilada sauce
8 (6 inch) corn tortillas
2 ounces crumbled cotija cheese
¼ cup chopped fresh cilantro

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Combine butternut squash, onion, olive oil, and garlic on a baking sheet; toss well. Sprinkle chipotle powder and salt over the top.
  • Roast in the preheated oven, stirring once, until butternut squash is tender, about 25 minutes. Remove from heat and let cool. Reduce oven temperature to 350 degrees F (175 degrees C).
  • Spray a 10x6-inch casserole with cooking spray. Pour 1/4 cup enchilada sauce over the bottom.
  • Add black beans and goat cheese to the butternut squash mixture; mix gently to keep the goat cheese in good-sized pieces.
  • Pour some enchilada sauce onto a small plate. Quickly dip each tortilla into the sauce and fill with some of the squash-bean mixture. Roll up and place seam-side down in the prepared casserole dish. Tuck any remaining filling into the exposed ends of the enchiladas. Spoon remaining sauce over the enchiladas. Top with cotija cheese and cilantro.
  • Bake in the preheated oven until heated through, about 25 minutes.

1 medium butternut squash - peeled, seeded, and chopped into small cubes
1 tablespoon olive oil
4 cloves garlic, minced
salt and ground black pepper to taste
2 (15 ounce) cans black beans, drained
5 cloves garlic, minced
2 teaspoons ground cumin
1 pound fresh spinach
10 corn tortillas
2 tablespoons chipotle-lime crema, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Toss butternut squash with olive oil, garlic, and a pinch of salt and pepper. Spread evenly over a large rimmed baking sheet.
  • Bake in the preheated oven until squash is tender and just starting to brown at the edges, 25 to 35 minutes.
  • While squash is baking, empty beans into a small pot over low heat. Add garlic and cumin; stir well and continue to warm for a few minutes until heated through. Turn off heat, cover, and set aside.
  • Heat 1 to 2 tablespoons of water in a large skillet over medium heat. Add as much spinach as can fit. Sprinkle with salt, stir, and cook until spinach starts to wilt. Add additional spinach as it cooks down and makes more room. Cook, stirring occasionally, until all spinach is wilted, 3 to 5 minutes.
  • Top tortillas with the squash, beans, and spinach. Drizzle crema over tostadas.

Vegan Chipotle Butternut Squash & Black Bean Quesadillas image

So much flavor packed into these simple quesadillas! Creamy butternut squash roasted with chipotle peppers, black beans, a good hit of lime and fried up golden-crisp - so good. Don't forget the Avocado Crema sauce on the side!

3 cups cubed butternut squash (about 1/2 of a small butternut squash; roughly 3/4-inch cubes)
2 tablespoons chipotle peppers in adobo sauce, minced (from a 7-ounce can of chipotle peppers in adobo; save the rest for another use)
1 tablespoon olive oil
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
8 flour tortillas
1 batch roasted chipotle butternut squash
1 1/2 cups black beans
1 each lime (halved, for squeezing over the filling before cooking)
4 tablespoons olive, vegetable, or canola oil
avocado crema or your favorite salsa for serving

Steps:

  • Preheat oven to 400 degrees Fahrenheit. Place cubed butternut squash in a medium bowl and add minced chipotles in adobo, olive oil, salt, and pepper. Toss until chipotle is well-distributed. Pour squash onto a large rimmed baking sheet and spread into a single layer. Place in oven.Bake, stirring once or twice, 25-30 minutes until fork-tender and golden in places. Pull from oven and set aside.
  • Place a large saute pan over medium heat to warm up while you assemble your first quesadilla.
  • To assemble the quesadillas, lay out one flour tortilla. Add 1/4 of the squash. Using a fork, mash the squash. Add 1/4 of the beans. Squeeze some lime juice over the beans and squash and cover with the second tortilla, pressing down to help the quesadilla hold together. Repeat with remaining three quesadillas.
  • Cook, one at a time. Add 1 tablespoon of oil to the hot pan. Use a spatula/turner to distribute the oil around the entire surface of the pan. When the oil is hot, carefully transfer the quesadilla to the pan and cook until the tortilla is puffed and golden, then flip, cooking the other side until puffed and golden.
  • Use the spatula to transfer the quesadilla to a cutting board and, using a chef's knife, cut into wedges. Transfer to a plate and serve with avocado crema or salsa.
