This baked chicken cacciatore was inspired by a lonely can of stewed tomatoes that were in the pantry. This is simple to make and sooooo good! I love to serve this with mashed potatoes, but it also goes great with rice or pasta. We like it just as is, but feel free to "spice it up" any way you wish.

nonstick cooking spray
¼ cup all-purpose flour
½ teaspoon salt, divided
¼ teaspoon ground black pepper
¼ teaspoon garlic powder
6 (4 ounce) skinless, bone-in chicken thighs
2 tablespoons olive oil, or more as needed
2 small onions, chopped
2 cloves garlic, minced, or more to taste
1 (8 ounce) package sliced fresh mushrooms
½ cup red wine, or more as needed
1 (14.5 ounce) can stewed tomatoes with juice
1 (8 ounce) can tomato sauce
aluminum foil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13-inch baking dish with cooking spray.
  • Mix together flour, 1/4 teaspoon salt, pepper, and garlic powder in a shallow bowl. Dredge chicken in the flour mixture, shaking off any excess.
  • Heat oil in a large skillet over medium-high heat. Add chicken and cook until nicely browned, 4 to 5 minutes per side. Transfer chicken to the prepared baking dish.
  • Add onions and garlic to the skillet and saute until onion has softened and turned translucent, about 5 minutes. Add mushrooms and more oil, if necessary, and cook until mushrooms have softened, about 5 minutes. Pour 1/2 cup wine into the pan, scrape the browned bits of food off the bottom of the pan with a wooden spoon, and cook until liquid has evaporated, about 5 minutes. Stir in stewed tomatoes with juice, tomato sauce, and remaining 1/4 teaspoon salt. Simmer for 1 to 2 minutes, adding extra wine if sauce seems too thick. Pour mixture over chicken in the baking dish and cover with aluminum foil.
  • Bake in the preheated oven until chicken is no longer pink at the bone and the juices run clear, about 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

1 1/2 lbs plum tomatoes, coarsely chopped (scant 4 cups)
8 ounces cremini mushrooms (baby bella)
1 very large red onion, thinly sliced (about 3 cups)
5 tablespoons olive oil, divided
2 tablespoons sherry wine vinegar
1 chicken, cut into 8 pieces, excess fat trimmed
1 1/2 tablespoons chopped fresh rosemary, divided
1/2 cup dry red wine
1 (14 1/2 ounce) can diced tomatoes with juice
1 cup low sodium chicken broth
1/3 cup thinly sliced basil, divided
2 tablespoons drained capers, divided

Steps:

  • Preheat oven to 400°F
  • Combine plum tomatoes, mushrooms, and onion in large bowl.
  • Add 3 tablespoons oil and vinegar; toss to blend.
  • Sprinkle generously with salt and pepper. Spread vegetable mixture in single layer on large rimmed baking sheet.
  • Roast until onion slices are golden brown and all vegetables are tender, stirring frequently, about 50 minutes.
  • Remove from oven and set aside.
  • Reduce oven temperature to 350°F
  • Sprinkle chicken with salt, pepper, and 1 tablespoon rosemary.
  • Heat remaining 2 tablespoons oil in heavy large deep ovenproof skillet over medium-high heat.
  • Add chicken and sauté until golden brown, about 6 minutes per side. Transfer chicken to bowl. Add wine to skillet and boil until wine is reduced by half, scraping up browned bits, about 1 minute.
  • Stir in canned tomatoes with juice, then broth and bring to boil. Reduce heat to medium and simmer 10 minutes to blend flavors.
  • Return chicken to sauce in skillet. Place skillet in oven and roast uncovered until chicken is cooked through and juices run clear when pierced with knife, about 25 minutes.
  • Remove skillet from oven. Stir in roasted vegetables, remaining 1/2 tablespoon rosemary, half of basil, and half of capers.
  • Simmer over medium heat until vegetables are heated through. Season with salt and pepper.

This a mash-up of several recipes I had from various sources. The roasting and the balsamic give it such a deep taste, it was the best. I just had to share it! Traditional Chicken Cacciatore uses bone in chicken but I find that boneless skinless thighs stay nice and moist and make it easier to eat. No knife needed to cut the thighs, that's how tender they get. And don't worry about the garlic, it mellows into a sweet dream with the roasting. I've tried this recipe with both dry white and dry red, and I prefer the white, but it's a personal preference.

1 1/2 cups plum tomatoes, rough chopped
10 ounces mushrooms, any type, quartered
1 small green pepper, rough chopped
1 large onion, rough chopped
8 garlic cloves, peeled, left whole
5 tablespoons olive oil, divided
3 tablespoons balsamic vinegar
salt
pepper
2 lbs boneless skinless chicken thighs (4-6 thighs depending on the size)
2 tablespoons fresh rosemary, chopped, divided
1 cup dry white wine
1 (14 ounce) can whole tomatoes, squeeze and drain the tomatoes, reserving 1/2 cup of juice
1/2 cup chicken broth
1 tablespoon fresh marjoram, chopped
3 tablespoons capers, drained, divided

Steps:

  • Preheat oven to 500°F
  • Prepare all roasting vegetables (tomatoes, mushrooms, pepper, garlic, onions) as indicated above. To simplify garlic peeling, smack the garlic clove with the flat side of the knife, the peel will just come right off.
  • In a large bowl combine chopped plum tomatoes, quartered mushrooms, chopped green pepper, garlic cloves, and chopped onion. Add 2 T Balsamic vinegar and 2 T olive oil and toss to combine well.
  • Place vegetables into a large roasting pan, sprinkle with salt and pepper, and into the oven. Roast, stirring occasionally, until the onions and garlic are golden brown and nearly all the liquid from the mushrooms and tomatoes has evaporated, about 40-50 mins, could be longer depending on the size of the pan.
  • Reduce oven temperature to 325°F.
  • Sprinkle chicken with salt and pepper and 1 T rosemary.
  • In a large skillet add remaining 3 T oil and heat on medium heat until oil is hot. Add one thigh at a time, making sure not to crowd them. I do them in a couple batches.
  • Brown both sides of the thighs until a golden brown, putting chicken into bowl as they are done.
  • Add wine and chicken broth to skillet and simmer until reduced by 1/2 scraping up any browned chicken bits that stuck to the bottom. Add canned tomatoes with liquid and combine thoroughly.
  • Remove roasting pan from oven. Nestle chicken in roasted vegetables and pour wine mixture over the top. Sprinkle remaining 1 T rosemary, marjoram and 1/2 of capers. Stir gently, incorporating any brown bits that may have stuck to the sides of the roasting pan.
  • Return roasting pan to oven and bake for 15 - 20 mins, or until chicken is done and juices run clear. Top with remaining capers.
  • Serve over pasta or polenta.

Roasted Half Chickens:
3 whole chickens
3 tablespoons grapeseed oil
2 tablespoons kosher salt
1 tablespoon freshly ground black pepper
3 tablespoons unsalted butter
Cacciatore Sauce:
2 tablespoons grapeseed oil
1 yellow onion, julienned
1 tablespoon chopped garlic
1 cup roasted red peppers, sliced
3 cups Tomato Sauce, recipe follows
1 tablespoon tomato paste
2 tablespoons fresh basil, cut into a chiffonade
1 tablespoon fresh parsley, chopped
Kosher salt
Freshly ground black pepper
Semolina Polenta:
1 cup chicken broth
1 cup heavy cream
1/3 cup semolina flour
1/4 cup grated Parmesan
Kosher salt
Freshly ground black pepper
Broccoli Rabe:
24 pieces broccoli rabe
Juice of 1 lemon
Tomato Sauce:
5 cups whole San Marzano tomatoes, plus the liquid from the can
1/2 cup diced yellow onion
1/2 cup extra-virgin olive oil
8 cloves garlic
2 tablespoons fresh basil, chopped
2 tablespoons fresh oregano, chopped
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
2 tablespoons grapeseed oil
3 cups diced San Marzano tomatoes

Steps:

  • For the roasted half chickens: Preheat the oven to 400 degrees F. Dry each chicken with paper towels until very dry.
  • With a chef's knife, remove the backbone of each chicken by cutting down both sides of the backbone. Then split each chicken in half by cutting directly down the middle of the breast bone.
  • Rub the chicken halves with the grapeseed oil and then season with the salt and pepper. Arrange the chickens on a rimmed baking sheet.
  • Roast until the internal temperature in the middle of each breast is 155 degrees F., about 20 minutes. Turn the oven to a high broil and cook until the skin is evenly golden brown and crispy, 3 to 5 minutes.
  • Remove the chickens from the oven. Melt the butter in the sheet pan and baste the chicken occasionally while they rest for 10 minutes. (The chickens should have an internal temperature of 165 degrees F. after resting.)
  • For the cacciatore sauce: Heat the grapeseed oil a saucepan over high heat. Add the onions and garlic, reduce the heat to medium-high and saute until the onions are translucent, 3 to 4 minutes. Add the roasted red peppers and saute for another 2 minutes.
  • Add the Tomato Sauce and tomato paste, stir and bring to a simmer. Cook the sauce for 10 to 15 minutes and then add the basil and parsley and cook for another 5 minutes. Season with some salt and pepper. Hold hot for serving.
  • For the semolina polenta: Combine the chicken broth and heavy cream in a small pot and bring to a boil. Slowly whisk in the semolina. Bring the polenta back up to a boil and then reduce the heat to medium. Simmer the polenta while stirring regularly for 20 minutes.
  • Stir in the Parmesan and then season with some salt and pepper. Hold hot for serving.
  • For the broccoli rabe: Bring 1 gallon water and 2 tablespoons salt to a rolling boil in a large pot. Set up an ice bath for shocking the rabe after blanching.
  • Blanch the broccoli rabe in batches: Cook the rabe in the water for 45 seconds to 1 minute and then remove from the water and shock it in the ice bath. Dry the broccoli rabe with a kitchen towel.
  • Heat a saute pan over high heat, add the grapeseed oil and saute the broccoli rabe for 2 to 3 minutes. Season with salt and pepper and then squeeze the lemon juice over the top.
  • For plating: Divide the polenta among 6 plates; drag it from one side of the plate to the other.
  • Heat the cacciatore sauce. Place the chickens in the sauce and simmer for 1 minute before plating. Place a half chicken over the polenta and top with some cacciatore sauce. Lean 4 pieces of broccoli rabe against each chicken.
  • Combine the whole tomatoes, onion, olive oil, 4 cloves of the garlic, the basil, oregano, salt and pepper in a 2-gallon container or large pot and puree with an immersion blender until smooth.
  • Heat a large saute pan over high heat until it begins to smoke. Reduce the heat to medium, add the grapeseed oil and the remaining 4 cloves garlic and quickly saute. Add the diced tomatoes and saute for 1 to 2 minutes. Add the pureed tomato sauce and bring to a simmer. Cook for 15 minutes and then remove from the heat. Bring back to a simmer when you are ready to serve. Yield: 6 servings

GRILL-ROASTED CHICKEN CACCIATORE



Grill-Roasted Chicken Cacciatore image

The majority of this dish is simmered on top of the stove; however, the recipe recommends grilling the chicken until just brown, but not cooked through -- it is then added to the dish and the cooking is finished in a wonderful tomato - wine sauce. Dish is from the Sonoran Grill cookbook and it sounds delicious. This recipe recommends serving this dish with orzo pasta. Cooking time does not include grilling time.

1/4 cup extra-virgin olive oil
2 medium white onions, chopped
6 garlic cloves, minced
1 cup cabernet sauvignon wine

Steps:

  • Grill chicken over medium-high heat until outside is well browned, but do not fully cook.
  • In a large saute pan over medium-high heat, heat oil. Cook onions until soft, add garlic, and cook a minute or two more to release flavor into the oil. Add chicken and stir. Add wine and simmer until liquid has reduced to almost nothing (be careful not to burn). Add tomatoes , 2 cups beef broth, tomato sauce, lemon juice, butter, herbs, salt and pepper. Simmer for at least 45 minutes, then add mushrooms and olives. Simmer for 10 minutes more. As sauce reduces, replace liquid with beef broth a little at a time. Garnish with parsley and romano cheese. Serve with orzo pasta.
