Sheet-Pan Roasted Brussels Sprouts, Bacon and Shallots image

Easy and just the right amount of sophisticated, this spin on Brussels sprouts features shallots and bacon, plus a flavor boost from vinegar and brown sugar make this side dish unforgettable. There will be no upturned noses when you serve these Brussels sprouts!

2 1/2 lb Brussels sprouts, trimmed, halved (8 1/2 cups)
5 medium shallots, thinly sliced (1 1/4 cups)
6 slices thick-cut bacon, chopped
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons cider vinegar
2 teaspoons packed brown sugar

Steps:

  • Heat oven to 450°F. Spray 18x13-inch rimmed sheet pan with cooking spray. Place Brussels sprouts, shallots and bacon on sheet pan. Drizzle with oil, salt and pepper; toss to coat.
  • Roast uncovered 30 to 35 minutes, stirring after 20 minutes, until Brussels sprouts are fork-tender and bacon is cooked.
  • Meanwhile, in small bowl, combine vinegar and brown sugar. Stir with whisk until sugar is dissolved.
  • Remove sheet pan from oven. Drizzle with vinegar mixture; toss to coat.

6 slices bacon, cut into 1/2-inch pieces
1 medium red onion, diced
1 teaspoon extra-virgin olive oil
½ teaspoon garlic powder
½ teaspoon cayenne pepper
½ teaspoon sea salt
¼ cup pine nuts

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Mix Brussels sprouts, bacon, onion, olive oil, garlic powder, cayenne, and salt together in a large bowl. Spread evenly on the prepared baking sheet.
  • Roast in the preheated oven until bacon is crispy and reaches 145 degrees F (63 degrees C), about 40 minutes, stirring after 20 minutes.
  • Remove from the oven. Toss with pine nuts and serve.

2 lbs Brussels sprouts, halved
3 1/2 tablespoons olive oil
1 teaspoon sea salt
3/4 teaspoon ground black pepper
1 medium shallot, chopped
1 garlic clove, minced
1/2 cup onion, chopped
1/2 cup cooked bacon, chopped

Steps:

  • Preheat oven to 400 degrees.
  • Cut ends off of brussels sprouts and remove any damaged outer leaves. Cut sprouts in half and mix in a large bowl with 3 TB olive oil, salt, and pepper. Set aside.
  • Caramelize onions, shallots, and garlic on the stovetop with 1/2 TB olive oil. Add Bacon and cook for one more minute (I use the precooked Real Bacon Pieces you can buy at the supermarket).
  • Add Caramelized onion mixture to bowl of sprouts and stir well to mix.
  • Evenly distribute mixture on a sheet pan and roast for 35-40 minutes. Sprouts should be browned on the outside, but easily pierced with a fork.

1 lb Brussels sprout, trimmed and halved
4 slices smoked bacon, chopped
1 shallot, sliced
2 tablespoons white wine
2 tablespoons olive oil
1 tablespoon butter
1 pinch of kosher salt and cracked pepper, to taste

Steps:

  • 1.Preheat oven to 425 degrees.
  • 2.In oven safe skillet or casserole dish crisp bacon over medium high heat. About 8-10 minutes. Remove bacon and set aside on plate lined with paper towels. Dispose of fat in the skillet.
  • 3.Return skillet to stovetop. Deglaze pan with white wine, scraping brown bits from bottom of pan.
  • 4.Add shallots and sauté for about 5 minutes.
  • 5.Add Brussels sprouts and olive oil and mix together to combine and evenly coat.
  • 6.Place skillet in oven and roast for about 15-20 minutes until cooked through and golden brown.
  • 7.Remove from oven and add butter and bacon, toss to combine.
  • 8.Salt and pepper to taste.

2 pound(s) small to medium-sized brussels sprouts, trimmed and cut in half
2 large shallots, peeled and thinly sliced
1/4 cup(s) blood orange olive oil or 2 tablespoon fresh blood orange juice and 2 tablespoons extra virgin oil
1 tablespoon(s) ground cumin
3 slice(s) turkey bacon or bacon substitute
1 tablespoon(s) blood orange zest, finely grated

Steps:

  • Preheat oven to 400 degrees.
  • Cook the bacon until crispy then set aside to drain on a paper towel. Once cooled, break up the bacon in to small pieces.
  • In a large prep bowl, combine the Brussels sprouts, shallots, blood orange olive oil (or blood orange juice and olive oil) and cumin. Toss mixture together well to coat.
  • Arrange the vegetable on a parchment-lined baking sheet in a single layer with the Brussels sprouts facing cut side down.
  • Roast for about 20-25 minutes or until sprouts are tender and easily pierce with a knife but NOT mushy.
  • Season with salt and cracked black pepper, to taste. Garnish the vegetables with the bacon bits and the blood orange zest.
